today we’re making “the punch” from @yihuicoffee, a milk washed, clarified coffee drink that combines a delicious coffee with black tea and yakult flavors. if you’re ever around the shop, give it a try! // recipe ACID BASE: • 2 shots of martinez gesha espresso • 240g honey black tea (hot 15g tea to 300mL brew, chill overnight) • 120g honey • 40g lemon juice • pinch of salt MILK BASE: • 125g milk • 25g heavy cream • ~150g (about 2 yakults) into the milk mixture pour the acid over the milk, gentle mix, then let it curdle in the fridge for at least an hour. filter through once, then when the solution starts to drip clear, pour it back into the filter, then let it drip slowly #coffee #clarifiedcoffee

in taiwan looking for some of the coolest coffee shops, and @rbc_coffeehead did not dissapoint. located near taoyuan intl’ airport, the shop looks like a space dome and serves some amazing coffee. i had a one & one (an espresso split in half, one for tasting and one paired with milk). their “master blend” espresso had distinct tastes of strawberry that paired nicely with the milk you’re able to smell and buy a variety of beans as well! if you go and wanna sit at a table, i do recommend a reservation 🤝🏻 #coffee #coffeeshop #taiwan

we’re back to recreating coffee shop drinks, this time we have @juniacafe’s “matcha grey”, a dessert-style matcha cortado, topped with an earl grey cream — recipe — earl grey syrup: • 1 cup water brought up to a slight simmer, then steep in 6 earl grey tea bags for ~5 minutes • take the tea bags out, then add in 1 cup of sugar • heat until all sugar is dissolved earl grey cream ratio: • 24g of heavy cream, 10g earl grey syrup, pinch of maldon salt • whisk to just before soft peaks, so it’s thicker but still easily pourable matcha base: • 3g of matcha powder • 30mL of water • earl grey or simple syrup to taste (~5g) • 60mL of oat milk #matcha #earlgrey

for the first few days in taiwan, i wanted to check out taipei’s coffee shops. here are three of the many i went to: @loop_in_neon: cool futuristic interior with some fun coffee drinks. i also ordered their special tofu pudding that highlighted taiwan’s alishan coffee. very kind owners and great vibes overall @noon.taipei: dimly lit interior, but an absolute delicious coffee course. they use the same coffee beans (for me it was a natural process ethiopia) and made one cold brew and two incredibly delicious and complex coffee drinks out of them. hospitality was a bit awkward at first but warmed up as the course went on @cafesole.tw: a warm, rustic coffee shop serving various alishan coffees. two floors for ample seating to rest or get work done, overall just a cozy shop #taipei #taiwan #coffeeshop
