warm roasted pesto potato salad 💚
recipe serves 4 
for the pesto: 
50g fresh basil 
a handful of rocket 
40g pumpkin seeds 
2 tbsps nutritional yeast 
1 large garlic clove 
1/2 a lemon (juiced) 
a generous seasoning of sea salt 
110 ml olive oil 

for the salad: 
750g small salad potato’s 
180g asparagus 
4 radishes (sliced) 
olive oil 
salt & black pepper 

method: 
slice your potato’s and place them in a baking tray with a generous amount of olive oil, salt & black pepper. roast these in the oven at 180°C for an hour. 
then slice your asparagus into small pieces, placed them in a separate baking tray cover with olive oil and season. add these to the oven for the last 15 minutes. 

meanwhile make your pesto by adding all of the ingredients to a high-speed blender and blitz until smooth. ( if the texture needs loosening, add more olive oil. )

once you’re roasted veg is cooked place it in a bowl with your sliced radishes and pesto on top. give this a good mix together and you’re ready to serve up and enjoy.

pistachio chia pudding with a creamy pistachio butter & yoghurt topping 💚
recipe makes 1 

for the chia pudding:
30g pistachios 
1tsp pistachio butter 
2 tbsp chia seeds 
130ml coconut milk
3 tbsps coconut yoghurt 
1 tbsp maple syrup 

for the cream topping: 
4tbsp coconut yoghurt 
1tsp pistachio butter 
1 tsp vanilla extract 
1tsp maple syrup 
-
extra pistachios for on top

method: 
place your pistachios, butter, and milk into a blender and blitz until smooth. pour this mixture into a bowl and mix in your chia seeds & coconut yogurt. set this aside for 15-20 minutes to thicken (even better overnight.) 

For the cream topping mix together all the ingredients in a bowl until smooth pale green mixture has formed. 

finally pour your chia pudding into a jar/ glass with the cream topping and some chopped pistachios on top! enjoy 💚

creamy tomato soup 🍅🍅 (serves 4 portions) 
3 large vine tomatos 
1 red pepper 
2 carrots 
Cherry tomatoes 200g
a thumb sized piece of ginger 
2 cloves of garlic
1 tin cannellini beans
300ml passata 
150ml coconut or oat milk
4 tbsp coconut yoghurt ( plus extra to serve ) 
olive oil
1 tablespoon oregano 
2 teaspoons chilli flakes
salt & pepper
a bunch of fresh basil 

method: 
place your roughly chopped veg onto a baking dish with a generous glug of olive oil, salt black pepper & dried oregano. place this in the oven for 25 minutes. once cooked blend with the passata, beans, ginger, garlic, plant milk and some fresh basil. (If you want a thinner texture add some hot water) stir through the coconut yoghurt and some chilli flakes. season to taste and enjoy. I like to serve mine with some fresh basil, coconut yoghurt and a cheese toastie but this is completely up to you! 🍅✨🫶🏽
