four pancake day recipes 🥞🥞🥞

1. lemon & poppy seed pancakes with lemon yoghurt 🥞 🍋 (makes 6 pancakes) 
250g self raising flour 
4 tbsps poppy seeds 
2 tbsps agave syrup 
1 lemon (juiced) (plus some slices for on top) 
coconut oil (for frying)
350ml plant milk
1 tsp baking powder 

for the lemon yoghurt:
4 tbsps of vegan yoghurt 
1 lemon (juiced) 
1 tbsp of agave syrup 

method: 
place your flour, baking powder and poppy seeds into a bowl and combine. then add the juice of one lemon, the agave and milk and whisk together. 
to make the yoghurt simply combine all of the ingredients together in a bowl. 🍋🍋
heat a pan with some coconut oil for frying and fry your pancakes on each side for a few minutes until golden. 
then you’re ready to serve up with the yoghurt and some lemon slices on top. enjoy 🍋🥞

2. pumpkin pancakes 🥞🍁 recipe makes 4-5 pancakes 
130g buckwheat flour 
120ml plant milk 
1/2 a can of pumpkin purée 
2 tsps almond butter 
4 tbsps maple syrup (plus extra for on on top) 
1 tsp cinnamon 
1 tsp baking powder 
1 tsp baking soda 
a handful of pecans
coconut oil ( for frying) 

for the cinnamon yoghurt: 
2 tbsps of coconut yoghurt 
1 tsp cinnamon 
1 tbsp maple syrup 

method: 🧡
to make the pancakes simply place all of the ingredients into a bowl and mix together until you have a smooth orange mixture. 
next heat up a large frying pan with some coconut oil and fry your pancakes for a few minutes on each side until golden. 
to make the yoghurt simply mix the ingredients together until combined. 
once all your pancakes are fried stack them on top of each other and top with the cinnamon yoghurt, a sprinkle of pecans and some extra maple syrup. enjoy 🥞🫶🏽

three easy, healthy dinner recipes 🫶🏽
1. creamy high protein butternut squash linguine 🧡 -  recipe serves 2 
for the sauce :
350g roasted butternut squash 
1 tsp chilli flakes (optional) 
4 tbsps nutritional yeast 
300g silken tofu 
1 veg stock cube (with 80ml boiling water )
salt and black pepper 

250g linguine or pasta of your choice 
1 white onion
2 cloves of garlic 
a few handfuls of fresh parsley 
olive oil 
salt and black pepper 

method: 
place your roughly chopped butternut squash into a roasting tray and cover with olive oil chilli flakes, salt and black pepper. roast this in the oven at 180° for 30 - 40 minutes. when the squash is nice and squidgy you’ll know it’s done. 
to make the sauce place all your ingredients into a blender and blitz, once smooth set aside. 
get your pasta boiling in salted water for 8-10 minutes. 
meanwhile heat a large pan with olive oil and fry your onion & garlic for 5 minutes until translucent, then turn the heat down and add all your sauce and stir through. 
once the pasta is cooked, drain and add to the sauce ( make sure to reserve 1/2 a mug full of pasta water to add the sauce when needed) stir through adding a handful of fresh parsley, salt and black pepper and then you’re ready to  enjoy and serve up with some extra parsley and olive oil, enjoy 🧡

2. kale & quinoa salad 🥬🥬
recipe - serves 2 
150g cooked quinoa 
4-5 pieces of cavolo nero 
1 can of chickpeas 
4-5 mini cucumber’s

dressing:
1tbsp miso ( I used red) 
2 tbsps tahini 
1 tbsps olive oil 
black pepper 
water to thin 
method: 🥬🥬
cook your quinoa and set aside to cool. to make the dressing place all the ingredients into a bowl and combine, add some water to improve the texture. 
chop your cucumbers & cavolo nero into equal chunks, drain and rinse your chickpeas, then place all your ingredients into a large bowl with the dressing on top. mix together and enjoy or store in an air tight container until needed. 🥬🫶🏽
