warm roasted pesto potato salad 💚
recipe serves 4 
for the pesto: 
50g fresh basil 
a handful of rocket 
40g pumpkin seeds 
2 tbsps nutritional yeast 
1 large garlic clove 
1/2 a lemon (juiced) 
a generous seasoning of sea salt 
110 ml olive oil 

for the salad: 
750g small salad potato’s 
180g asparagus 
4 radishes (sliced) 
olive oil 
salt & black pepper 

method: 
slice your potato’s and place them in a baking tray with a generous amount of olive oil, salt & black pepper. roast these in the oven at 180°C for an hour. 
then slice your asparagus into small pieces, placed them in a separate baking tray cover with olive oil and season. add these to the oven for the last 15 minutes. 

meanwhile make your pesto by adding all of the ingredients to a high-speed blender and blitz until smooth. ( if the texture needs loosening, add more olive oil. )

once you’re roasted veg is cooked place it in a bowl with your sliced radishes and pesto on top. give this a good mix together and you’re ready to serve up and enjoy.

chop your cucumbers & cavolo nero into equal chunks, drain and rinse your chickpeas, then place all your ingredients into a large bowl with the dressing on top. mix together and enjoy or store in an air tight container until needed. 🥬🫶🏽

2. simple kale salad 🥬
recipe makes 1 
2 large handfuls of kale 
100g sundried tomatoes 
1/2 a block of firm tofu 
1/2 an avocado
3 mini cucumbers 
olive oil 
salt 

for the dressing: 
2 tbsps tahini 
1 tsp dijon mustard 
1 tbsp olive oil 
1 lemon (juiced) 
black pepper 
(Water to thin) 

method: 
place your kale in a large bowl, cover with olive oil and salt. massage the kale with your hands until its moist and the texture has softened. 
roughly chop all your veg & protein and add to the bowl. 
to make the dressing combine all the ingredients together in an jar and shake. I like to add a splash of water to improve the texture. finally pour the dressing on top and give the salad a good mix. 🥬🥬 enjoy

In a separate baking tray when your potato is nearly cooked. cover your tender stem broccoli with olive oil , salt and black pepper and place in the oven for 20 minutes. 

to make the dressing mix all the ingredients together in a jar and add a splash of water to improve consistency. 

once everything is cooked it’s time to stuff your potato! cut it open and mash the insides with a fork then pour in your broccoli, chickpeas and the dressing on top! enjoy 🍠🍠🍠
