The cheese is cheap, the base is frozen, the sauce is just tomato puree, the pepperoni is under the cheese. It’s perfect.

One of the most memorable experiences of Dallas for me was eating at @pecanlodge. Brisket, dino-ribs, pork ribs, pulled pork, sausages, turkey. Incredible sides. It’s some of the best BBQ I had on the trip. There’s something special about Texas BBQ in Dallas 🇺🇸

TOP 10 PIZZAS AT THE WORLD CUP 🏆 My full 16 part series is on my YouTube now! @northeastpizzakc @reginapizzeria @sonnys__la @delrossischeesesteakco @pizzeriabadiali @angelos_pizzeria_south_philly @johnsofbleeckerstreet @miamislicepizza @lindustriebk @akpizzaguy I just got back from eating in all 16 World Cup host cities to find the best pizza so you don’t have to. Here’s my top 10. 10 is North East pizza in Kansas City. A brand new spot doing crispy pizza the right way. 9 is Regina in Boston using a 100 year brick oven to deliver incredible flavour on all their pies. 8 is Sonny’s in LA. One of the only truly decent slices I had on the west coast. 7 is Del Rossi in Philadelphia. A Michelin recognised cheesesteak spot doing amazing pizza. 6 is Badiali in Toronto where this bloke’s pizza tossing skills blew my mind and the slices were excellent. 5 is Angelo’s in Philadelphia. They treat dough like an art form. Just a ridiculously good pizza. 4 is Johns of Bleecker St. About as old school as it gets. One of New York’s OG spots doing whole pizzas, no slices. 3 is Miami Slice. A vibey slice shop where the pizza is a bit more bougie than your average but the flavours are insane. My number 2 is L’Industrie, which has actually just been voted number 1 slice shop in America by people who know a lot more about pizza than me. So you know it’s good. But my favourite place, and my number 1 spot goes to AK Pizza in Seattle. You have to pre-order online and it sells out in seconds. It’s just one man and his wife. The premium ingredients and the care put into every single pizza blew my mind. All 16 episodes are on my YouTube now.

SOUPERB - EPISODE 1 Chicken, chorizo, tomato, garlic, chilli and red pepper soup. I really need a catchier name for this masterpiece. INGREDIENTS 1 Chicken breast Half a stick Chorizo 6 tomatoes 2 red peppers 4 cloves garlic 1 onion Olive oil 1 tbsp paprika 1 tbsp chilli flakes 1 tsp garlic powder 1 tsp onion powder 1 tsp cayenne pepper 1 tin chopped tomatoes 1 tbsp oregano 100ml double cream 500ml chicken stock Pinch of Salt Pepper to taste Pinch of Sugar METHOD Chop your veg and put it on a tray with olive oil in the oven on 180° for about 30 mins. While that cooks down, poach your chicken in the chicken broth. Fry off your chorizo. No extra oil is needed here. When it’s cooked, remove it from the pan but keep the chorizo oil it creates. Pour the chopped tomatoes in along with all the seasonings, salt pepper and sugar. Simmer on low. Take the chicken out and shred it. Put it all together in a saucepan and blend. Add the chicken, chorizo and cream. Serve with more cream and olive oil and ENJOY. #soup #souprecipe #soupseason

@onlyscrans has taken a frozen paratha, lobbed a butter chicken inside it and called it a pie. That’s right, he’s a genius. Serves 4 Time: 45 mins + 2 hours marinating 8 frozen paratha For the marinade: 640g chicken thighs, boneless, diced 120ml yoghurt Juice of half a lemon 6 garlic cloves, minced 1 tbsp ginger, minced 2 tbsp garam masala 1 tbsp chilli powder 1 tbsp turmeric 1 tbsp coriander powder 1 tbsp cumin powder 1 tbsp salt For the sauce: 70g butter 1 onion, diced 1 tbsp ginger, minced 2 garlic cloves, minced 1 tbsp garam masala 1 tbsp chilli powder 1 tbsp coriander powder 1 tbsp fenugreek 500ml tomato passata 150ml water 50g cashews, crushed 1 tbsp marinade mixture, reserved 150ml double cream 1 tbsp sugar Salt Oil, for cooking Method 1. In a bowl, combine yoghurt (120ml), lemon juice (0.5 lemon), garlic (6 cloves, minced), ginger (1 tbsp, minced), garam masala (2 tbsp), chilli powder (1 tbsp), turmeric (1 tbsp), coriander powder (1 tbsp), cumin powder (1 tbsp), and salt (1 tbsp). Add chicken thighs (640g, diced), mix well, and refrigerate for at least 2 hours 2. Preheat the oven to 180°C 3. Cook the marinated chicken in batches in a pan with a little oil until browned, then set aside 4. In the same pan, melt butter (70g) and cook onion (1, diced) until soft. Add ginger (1 tbsp, minced) and garlic (2 cloves, minced), then stir in garam masala (1 tbsp), fenugreek (1tbsp), chilli powder (1 tbsp), and coriander powder (1 tbsp) 5. Add tomato passata (500ml), water (150ml), reserved marinade (1 tbsp), and cashews (50g, crushed). Simmer for a few minutes, then blend until smooth 6. Return the sauce to the pan, add double cream (150ml) and sugar (1 tbsp), and simmer until slightly thickened 7. Add the cooked chicken back into the sauce and cook until fully coated and heated through. Adjust with salt if needed 8. Press a slightly defrosted paratha into a small ovenproof dish or foil pie case, fill with the butter chicken mixture, then top with a cut-out paratha lid and crimp the edges, using water or oil to seal if needed. Bake for 15 minutes until golden and crisp butter chicken, pie, paratha, pastry, chicken pie, curry, fusion, frozen food

Your favourite restaurant is about to close. Unless something changes, hospitality is in a death spiral. Rising costs, no relief. It only ends one way. Unless we speak and demand change. I’ve signed a letter to my local MP to ask for a reduction in VAT to 10%. He has backed the proposal and now requested a meeting with Rachel Reeves to discuss how we move forward and save hospitality. If you’re a business owner and want to get involved, there’s a letter template you can use over on @hospitality.together’s website to write to your local MP. We need to be so loud that we cannot be ignored. Let’s save the industry we all adore.
