I’ve LOVED spinach since childhood and this korean banchan is why!!! This recipe makes for the perfect side dish for 2 people and is easily customizable to your taste. It also lasts in the fridge for up to 4 days and is best served chilled! 

TIP: This dish is traditionally made with regular spinach, NOT baby spinach. However, I’ve tested both and to me, it’s fine to use either. Baby spinach is MUCH easier to find in the store and may be more accessible so I based this recipe around that! 

TIP: When deciding on your portion, a good rule of thumb is one bag or box of spinach will serve one person! 

Measurements (for 2 people): 
— 2 bags or boxes of spinach 
— 2-3 tsp sesame oil 
— 2-3 tsp soy sauce 
— 2-4 cloves of minced garlic 
— chopped green onions to taste
— sesame seeds to taste 
— gochugaru (korean red chili flakes) to taste

I adjusted this side dish recipe to maximize the authentic flavor of geotjeori while minimizing the need to buy a bunch of new ingredients! That said, if you have ingredients like saewoojeot (salted fermented shrimp) and plum extract in your fridge, you can (and should) add those into your kimchi paste mixture!

— 1 medium size napa cabbage
— 1/4 cup coarse salt (kosher salt works!) 
— 5 tbsp gochugaru (flaky kind is best) 
— 1 tbsp minced garlic 
— 2 tbsp fish sauce

Full recipe below

Prep
• Soak rice 1 hour
• Soak grape leaves in hot water

Rolling
• Drain rice (keep 1 cup water)
• Mix rice with ground beef, salt, pepper, oil
• Place 1 tbsp filling on each leaf
• Fold sides + roll tightly

Lamb Prep
• Boil lamb with cardamom until foam forms
• Rinse + place at bottom of pot

Assembly
• Add garlic cloves
• Stack rolls around the pot
• Cover with a plate
• Add salt, pepper, and water (1 inch above)
• Weight on top
• Boil 45 min → add lemon → cook 1 hr on medium-low
• Check water every 10 min

Grape leaves may need extra time to soften. Keep adding lemon and water and taste the broth as it cooks. Take one leaf out and try it to check if it’s fully cooked and tender.

Finish
1. Drain broth
2. FLIP + ENJOY!

juicy tender korean pork belly wraps!! This is my easy beginner friendly recipe for bossam that maximizes flavor and minimizes time and effort required! This dish is usually pretty pricey at Korean restaurants, so learn to make it at home for MUCH cheaper! For me, it’s become a staple meal to impress friends!!

INGREDIENTS (serves 2; double recipe if serving 4):
- 1.5 pound pork belly (choose one with a GOOD, EVEN amount of fat! I recommend getting from Costco or Hmart)
- 6-8 garlic cloves 
- 1/2 white or yellow onion 
- 1 tbsp ginger sliced 
- 2-3 scallion stocks (OPTIONAL) 
- 1/2 tbsp brown sugar 
- 2 tbsp doenjang 
- 1/4 tsp pepper
- 2-3 bay leaves (OPTIONAL)
- 1/2 tbsp instant coffee 
- 5 cups water 

FOR YOUR WRAPS: 
- sliced jalapeno, raw garlic chips, and ssamjang are musts! 
- salted napa cabbage is the authentic Korean way, OR lettuce will do just fine! 
- radish kimchi (musaengchae), OR regular kimchi
- saewoojeot (OPTIONAL) 
- white rice (OPTIONAL)

A few extra tips…to test if your bossam is ready, use the chopstick test! Just poke the thickest part of the meat. If it goes in and out super smoothly, you’re good to go! And make sure you’re using INSTANT coffee, not fresh ground! This is the “secret ingredient” to remove any porky smell or taste.

Musaengchae (korean radish salad) is SUPER healthy, great for gut health, high in fiber and packed with vitamins and antioxidants. 

TIPS ON CHOOSING YOUR RADISH (MU): Go to an asian market and look for korean radish. If they don’t have it, substitute for daikon radish. They are in-season and taste the best in fall and winter. Look for a LONG and OVAL radish with a smooth surface without bumps! A slight GREEN GRADIENT is great. Choose one that’s not too big, not too small. 

TIPS ON PREPARING: Slice the radish in half first. This will make it easier to peel and chop into your thin matchsticks. 

MEASUREMENTS: 
— 1 korean radish 
— 2-3 tsp gochugaru 
— 1 tbsp minced garlic (4-5 cloves) 
— 1 tbsp white vinegar 
— 1 tsp sugar (I like it less sweet, some people do more)
