Full recipe:
🔸 Debone a full turkey and keep the skin intact.
🔸 Season meat with Traeger Poultry Rub.

I start my morning with a cup of this 🥣 

After I learned that most store bought broths are basically flavored water, I’ve decided to always have my own homemade broth on hand. The steps are super easy 👇 

🔸Add your chicken or turkey carcass (bones) to a large pot with some onions, carrots, celery, and black peppercorns. 

🔸Fill the pot with water until the carcass is fully submerged.

🔸Simmer on medium low heat for about 4-6 hours and then skim the top of the water clean. 

🔸Cover the pot and continue simmering for another 16-18 hours. You might have to drop the temp to low to avoid boiling with the lid on. 

🔸Strain out all the bones and veggies.

🔸Fill up some wide mouth mason jars leaving about an inch gap from the top. 

🔸Let the jars cool before freezing.

💡Pro Tip: Using a pressure cooker can speed up this process considerably! That’s how I normally make it, but I assumed most people don’t have one.

🍊 We then smoked this at 275°F and then painted on a simple Orange marmalade and apple cider vinegar glaze!

Get juicy turkey without brining 🦃 🍷 

Brining a turkey tastes amazing but I don’t like the prep work involved when you can cook a juicy, delicious turkey in a fraction of the time. 

👇 Here’s the recipe: 
🔹Start by removing the spine of the turkey with kitchen shears or a knife. Flip the bird over and apply pressure on the breast side to flatten it out. You’ll hear a crack.

🔹You can make any compound butter flavor you like. Here’s the one I made: 
Chop one shallot and add to a pan. Add in 1/2 cup of red wine, on medium heat cook until the wine is almost gone. Let it cool and then mix together with 1 stick of butter, 1 TBS of parsley, salt and pepper. 

🔹 Take your compound butter and rub underneath the skin of your turkey.

🔹Season your turkey with a paultry seasoning (I like one with paprika for color)

🔹Set your smoker or oven to 325°F, Place the turkey breast side up in and cook for 3-4 hours or until the internal temperature reaches 165°F in the breast and 175°F in the thighs.

🔹Let it rest for 10-15 minutes before serving. Perfect for a juicy, flavorful feast!

Not only did this meal look awesome but it tasted incredible as well. The sweetness of the bun and butter paired great with the richness of the meat! 

What themed meal should I make next?

👇 Full recipe:

🌋 LAVA BUNS INGREDIENTS:
🔸1.5 cups warm milk
🔸1 Tbsp melted butter
🔸2 Tbsp sugar
🔸1 Tsp salt
🔸2 Tsp instant dry yeast
🔸Red gel food coloring as needed
🔸3 cups all-purpose flour 

🪨 TOPPING:
▪️1 1/4 cup rice flour
▪️1 Tsp instant dry yeast
▪️1 Tbsp sugar
▪️1 Tbsp vegetable oil
▪️3/4 cup warm water
▪️Black gel food coloring as needed
▪️1/2 tsp coarse salt

🍖 BEEF SHORT RIBS:
🔹Trim off excess fat and season with 50/50 salt and pepper. Leave in the fridge over night
🔹The next day, smoke them at 250°F using @bearmountainbbq apple pellets
🔹When they hit 175°F, wrap them in butcher paper with 4 tbsp of lard (or tallow but I like lard more). Turn the smoker up to 275°F. 
🔹Pull them off when they hit 200° and let them rest in a warm oven. 

🦴 BONE MARROW BUTTER:
▫️ Smoke 3 cross cut beef bones for 30 minutes at 250°F
▫️ Place them in a 375°F Oven for another 15 minutes to roast.
▫️ Scoop out the marrow and mix with half a stick of butter, 2 tbsp of honey, and 2 tsp of garlic powder
