KING RANCH SOUP
The Texas winter freeze is upon us and this one of my go-to cold weather meals. Stay safe, stay warm, and give this recipe a try!

Ingredients
-2T oil
-1C chopped yellow onion
-1C chopped multicolored bell peppers
-2T Meat Church Chili Seasoning
-1C fire roasted Rotel
-1 can cream of poblano
-1 can chicken queso blanco (sub cream of chicken)
-6C chicken stock/broth
-4C shredded, cooked chicken
-2oz cream cheese
-Blanco to taste
-Masa as needed to thicken
-Cotija cheese, sliced jalapeños, and tortilla chip strips for garnish 

Instructions
-Add oil to your skillet and heat
-Add onion, bell peppers, and Meat Church Chili Seasoning, stirring occasionally
-Add rotel, cream of poblano, chicken queso blanco, and chicken stock
-Mix and bring to a simmer
-Add in chicken, cream cheese, and masa. Mix all ingredients
-Simmer and long as you’d like
-Optional: garnish with Cotija cheese, jalapeño, and tortilla chip strips

With the cooler weather we are bringing this Texas chili recipe back out. It’s flavorful and filling, and of course it can’t be called Texas Chili without emphasis of no beans. Recipe is below and on meatchurch.com

4 lbs of ground meat (venison is also great and is Matt’s fav)
1 lb of HOT breakfast sausage
3 medium red onions, diced
1 head of garlic, minced
84 ounces of tomatoes and sauce total. Use the below or interchange to your liking as long as you use at least 84 ounces)
2, 28oz can crushed tomatoes with juice
1, 28oz fire roasted diced tomatoes with juice
1 7oz can Chipotles in Adobo Sauce, diced. Preserve the liquid.
2 beers. 1 for the chili and 1 to drink while you’re making it. (sub beef broth)
5 T Meat Church Texas Chili Seasoning
1/3c olive oil
Garnish
Shredded cheese
Diced white onions
-Add the olive oil to a very large skillet. I prefer cast iron. Sauté the onions, garlic and adobo peppers
Cook for about 10 minutes until the onions are translucent. Remove from skillet and place the mixture in your slow cooker or dutch oven.
-Cook the ground meat and breakfast sausage completely in the same skillet. Drain the fat and place all of the meat in the slow cooker or dutch oven.
-By this time you already have the meat, onions, garlic and adobo peppers in your slow cooker or dutch oven. Now add the tomatoes with the juice, 1 beer and 5 T of Meat Church Texas Chili Seasoning.
-This chili can cook in 3 hours. However, it is better if you can cook it for 6 - 8 hours. The ingredients are already cooked at this point, but we will simmer this chili all day to break down the meat and meld the flavors together.
If you are using a slow cooker:
Cook the chili on low for 6 - 8 stirring periodically.
-If you are you are using a smoker:
Cook the chili at 225 for for 4-5 hours uncovered stirring periodically. Cover and continue to cook for 2-3 more hours. 
-Remove from the heat. Allow it to cool. Garnish and enjoy!

Peanuts & Coke. Who’s done it?

A tradition where I come from. My Grandaddy Sam farmed in Alabama and he called it a Farmer’s Coke. The peanuts soak up the sweet Coke flavor, and the salt from the peanuts help balance the sweetness of the soda. The longer the peanuts soak, the more they will absorb the Coke flavor. I love this on a road trip. It’s also a great snack for running errands in the truck on the weekend.

Deer Heart Fajitas for Valentine’s Day! ❤️‍🔥

Whitetail heart with BLANCO & served with grilled onions & peppers, fresh guacamole, cotija cheese on freshly griddled flour tortillas.

I turned a cheap pork butt into the best BBQ ribs. 🔥🐷🔥

• Sliced the pork butt into 1x1” strips
• Slathered in yellow mustard & seasoned with @meatchurch Hickory
• Smoked st 300° in the brand new @traegergrills Westwood (new inexpensive grill with rad features)
• Placed ribs in a pan when they hit 165°(90 mins) with BBQ sauce, 1/2 C pineapple juice & a diced habanero covered until they were tender (45 mins)
• Removed the ribs, placed on a wire rack and glazed with 2:1 Meat Church Holy Cola to @brushfirefarms Pepper Jam for 10 mins

Easy.Cheap.Delicious.
