Walking proof that there’s more than one way to do it. Growing up we didn’t have many examples of people that looked like us eating this way. We had to question a lot of stereotypes.

Not trying to convince anyone. Just sharing what works for us. There’s more than one way to build a healthy, strong body.

Easy base for everything from jollof rice to spaghetti. Maybe the aunties were on to something reusing all the icecream tubs 🤔😅

Stew is something I’ll forever start keeping in my freezer 🔥 Literally my lunch everyday last week. I added a bunch of tofu and a combo of mushrooms as ‘meat’ Easy base for everything from jollof rice to spaghetti. Maybe the aunties were on to something reusing all the icecream tubs 🤔😅
Ad Here’s a simple oat recipe I’ve had on repeat lately. Its also a clean up day for me so lets do that together with @smolproducts 

Oat porridge 
1 cup of rolled oats 
2 cups of almond milk 
1 banana 
1 tbsp agave 
Pinch of sea salt 
Toppings 
Blueberries 
Walnuts 
Chia seeds 
1 golden kiwi 
1 tbsp flaxseeds 
1/2 stewed pear

Perfect rice & peas every single time 

I made a massive batch but here’s the ingredients 

600g basmati rice 
400ml coconut milk 
360g dried kidney beans 
Thyme 
1 scotch bonnet 
Salt to taste
Water (around 2L/ enough to boil the kidney beans) 
180 Celsius for 30-40 minutes. Stir half way and you’re good to go! 🌱

Shout out to @negeenaramyoga for the oven shout! Never batch cooking rice in the oven again! 🙂‍↕️🙏🏿

Okra stew 🔥🌍🌱

Ingredients: 

~ 20 pods of Okra 
2 red onions 
Palm oil 
3 pointed peppers 
1 tofu (280g)
1 smoked tofu (200g)
Shiitake Mushrooms (120g) 
2 tbsp Curry powder 
Smoked paprika 
Sea salt 
Salt 
Soy sauce 
1 veg stock cube 
1 cup of water 
A couple handfuls of chopped spinach 
1 scotch bonnet 

Method: 

1. Start by dicing your onions and add to a pan with some oil. 
2. Add the peppers to a processor and blitz. You still want it fairly chopped. Not puréed. Then add the pot on a medium heat and let it cook down for 15 minutes. 
3. Blend half the okra until smooth and add into the pot, mix so all the ingredients are well incorporated. Add the scotch bonnet 
4. Rough cut the tofu and mushrooms and add the seasonings. Enough to cover the every surface area. Because we’ve seasoned the “meat” we don’t need to add any more to the stew. 
5. Add a veg stock cube and hot water into the pot followed the “meat” and let that simmer. 
6. Chop the remaining okra chopped spinach and let it cook down on a low heat for 15 minutes.

AD I headed to @Tesco to get all my ingredients for this nutritionally balanced seasonal bowl, which contains 4 of your 5 a day! A delicious way to get more veg in 🌱
 
Serves 4

Ingredients

For the salad:
•⁠ 200g tempeh, cubed
•⁠ Drizzle of olive oil
•⁠ 2 medium courgettes
•⁠ 1 large carrot
•⁠ 1 red bell pepper, thinly sliced
•⁠ 1 yellow bell pepper, thinly sliced
•⁠ 150g cavolo nero
•⁠ 50g pumpkin seeds
•⁠ 1 cucumber, diced
•⁠ 3 tbsp smoked paprika
•⁠ 2 x 250g microwave wholegrain rice pouches (e.g. Tesco Microwave Wholegrain Rice 250g)

For the tahini dressing:
•⁠ 2 tbsp tahini
•⁠ 2 tbsp lemon juice
•⁠ 1 tbsp maple syrup
•⁠ 2-3 tbsp warm water
•⁠ Pepper to taste

To serve:
•⁠ A sprinkle of black pepper

Method:
1. Prepare the tempeh: Drizzle cubed tempeh with olive oil and sprinkle over 1 tbsp of smoked paprika. Pan-fry for 6-8 minutes until golden and crispy, then add sliced peppers and cook for another few minutes. Set aside.

2. Prepare the vegetables: Slice courgettes and carrot, toss with 1 tbsp of smoked paprika, and air fry at 180 degrees for 7 minutes. Dice cucumber.

3. Make the dressing: Whisk tahini, lemon juice and maple syrup, then slowly add warm water to reach a smooth consistency. Season with pepper.

4. Prepare the greens: Destem and wash the cavolo nero, drizzle with olive oil and juice from half a lemon, then massage gently.

5. Cook the rice: Heat the microwave rice according to the packet instructions.

6. Toast the seeds: Lightly toast pumpkin seeds in a dry pan for 1-2 minutes until fragrant.

7. Assemble: In a large bowl, combine the rice, cooked veg, tempeh and cucumber. Drizzle with the tahini dressing and toss.

8. Serve: Top with toasted seeds and a sprinkle of black pepper. Enjoy!

This recipe is low in saturated fat. Reducing consumption of saturated fat contributes to the maintenance of normal blood cholesterol levels as part of a varied and balanced diet and healthy lifestyle #Tesco
