I don’t know when we all stopped deep frying things at home, but I’m determined to bring it back. There’s just something about crispy chicken tenders and golden potatoes fresh from the oil that instantly makes dinner feel cozy, comforting, and honestly a little nostalgic.

But the real reason this dinner feels so special is the sauces.
The Garlic Parm Caesar on crispy chicken is honestly addictive. Creamy, savory, garlicky… exactly what crispy tenders deserve. I coated my potatoes with the Classic Truffle for that rich, decadent flavor that makes simple potatoes taste restaurant-level. 

Then the Smoky Jalapeño adds the perfect smoky heat that makes everything a little more exciting

And I love that each one has its own personality depending on what you’re making:

🤍 Garlic Parm Caesar — creamy, garlicky, umami-packed
🖤 Classic Truffle — savory, decadent, umami
🌶️ Smoky Jalapeño — smoky, spicy, umami

Ingredients
For the chicken:
	•	8 boneless skinless chicken thighs
	•	1 cup TRUFF Smoky Jalapeño Aioli (reserve 1/3 cup for the buns)
	•	1/2 cup buttermilk
For the dredge:
	•	1 1/2 cups all-purpose flour
	•	1/4 cup cornstarch
	•	1 tbsp paprika
	•	1 tsp garlic powder
	•	1 tsp onion powder
	•	1 tsp baking powder
	•	1 1/2 tsp kosher salt
	•	1 tsp black pepper
To fry and build:
	•	4 cups neutral oil
	•	4 brioche buns
	•	2 tbsp softened butter
	•	4 leaves green or butter lettuce
	•	1/2 cup dill pickle chips
	•	1/2 red onion, thinly sliced
Method
Marinate. Whisk together the aioli (remember, hold back that 1/3 cup) and buttermilk. Add the thighs, turn them so every piece is coated, cover, Mix the dredge. Whisk all the dry ingredients together in a wide shallow dish. 
Dredge. Pull each thigh straight out of the marinade and let only the excess drip off. Press it firmly into the flour. Let the dredged chicken sit while the oil comes up.
Heat the oil. Pour it into a heavy pot about 1 1/2 inches deep and bring it to 350°F. 
Fry. Work in batches and don’t crowd the pot. Six to seven minutes, flip halfway, pull it at 165°F internal. Drain on a wire rack, 
Toast the buns. Butter the cut sides and toast them in a dry skillet until golden, a minute or two.
Build it. Spread reserved aioli generously on both bun halves. Lettuce on the bottom, then the chicken, then pickles and red onion. Top bun on, press it gently, and eat it right away.

1 pack lean ground beef
Flour or corn tortillas
American cheese (or cheese of choice)
1 sweet onion to sauté
@sauce Truffle Aioli
Lettuce to top
Salt & pepper to add to beef before cooking once pressed into tortillas

Sear the beef side first for about 3-5 min, flip and crisp on the tortilla side for about 3 min (ensure the beef is cooked through)

Add cheese to beef once tortilla side is crisping in pan

Garnish with your toppings & enjoy!

Hot Butter Shrimp Rolls 🦐🔥
Makes 4-6 portions

What you’ll need:
2 lbs wild caught shrimp, peeled & deveined
2 tbsp unsalted butter
4 cloves garlic, minced
1 tbsp seafood seasoning
1-2 tbsp TRUFF Original Hot Sauce
2 celery stalks, finely diced
2 tbsp each of chopped parsley, chives, and dill
1/3 cup mayonnaise
Zest of 1 lemon
Kosher salt + black pepper to taste
6 split top brioche buns
Butter lettuce
Dill pickle potato chips
🔥TRUFF Hot Butter Glaze 🤤(Comment “yum” and I’ll dm you that recipe)

Season shrimp with seafood seasoning. Heat butter in a large skillet over medium-high heat, then sauté the shrimp with garlic until just cooked through. Remove shrimp from the pan and let cool slightly before roughly chopping.

In a bowl, mix chopped shrimp with celery, parsley, chives, dill, mayo, TRUFF Original Hot Sauce, lemon zest, salt, and pepper.

Toast the brioche buns, layer with butter lettuce, pile on the shrimp salad, top with crushed dill pickle chips, and finish with that hot butter glaze over the top. Enjoy!

wings
• 2 lbs chicken wings
• 2 tbsp @biguncbbqrubs pollo diablo
• oil for binder 
• avocado oil for frying

jalapeño lime tequila glaze
• ½ cup truff @sauce jalapeño lime hot sauce
• 2 tbsp hot honey 
• juice + zest of 2 lime
• 2 cloves garlic, minced
• 2 tbsp @e.cuarentatequila tequila (blanco)
• 1 tbsp butter (for gloss)
• pinch truff sea salt

⸻

instructions
• pat wings very dry, season
• heat oil to 350°f, fry wings 10–12 min until golden and crisp, drain on rack

• in a small pan, simmer tequila for 30–60 sec to burn off harsh alcohol
• add truff jalapeño lime, hot honey, lime juice + zest, garlic → simmer 3–4 min until glossy
• whisk in butter + pinch truff salt off heat
• toss wings in warm sauce until coated
• finish with extra lime zest and chopped cilantro (optional)

🥒 Grillo’s Pickles Hot Pickle Butter
🌶️ Truff Hot Sauce Schmear

The hot pickle butter is so good and if you’re a pickle lover you need to try this but the Truff joe sauce schmear (available through June 17) completely stole the show for me. The combination of the warm bagels with that spicy truffle flavor was unreal.

If you’re not able to get these this week, don’t worry. They rotate their speciality schmears every week and are constantly coming up with creative new flavors. You really can’t go wrong with any of them and their original scallion cream cheese, which is always on the menu, is always a great option.
