I know y’all didn’t think I was just gonna tease y’all with that video on my story yesterday and leave you hanging 👀  Y’all had my DMs in a chokehold about this recipe, so this video better get good engagement! As promised, here it is. [SAVE & SHARE this recipe] I got inspired by a TikTok recipe from @Just Shanaé and you know I had to put my own little spin on it.   INGREDIENTS: 	•	Boneless, skinless chicken thighs  	•	Seasonings: Garlic + allspice blend, poultry seasoning, chipotle garlic powder, paprika, white pepper, garlic & herb blend (it doesn’t have to be these exact ones- season your chicken how you season your chicken!) 	•	1 cup chopped tricolored bell peppers (red, yellow, green) 	•	½ white onion (chopped) 	•	Another ½ cup of sliced peppers & onions (set aside for later) 	•	Olive oil 	•	Worcestershire sauce (just a dash) 	•	2 cups jasmine rice (or basmati) 	•	4 cups chicken stock 	•	2 tbsp tomato paste 	•	3 tbsp butter 	•	Drizzle of honey or hot honey (for finishing) DIRECTIONS: 	1.	Dice and slice your peppers & onions- some for the marinade, some for later. 	2.	Season your chicken thoroughly and mix in your diced peppers + onion, a drizzle of olive oil, and a dash of Worcestershire sauce. Let it marinate while your pan heats up. 	3.	In a hot cast iron skillet, add olive oil and sear the chicken on both sides until beautifully browned (about 5–6 mins per side). It doesn’t have to be fully cooked, it’ll finish in the oven. 	4.	Remove the chicken and keep all those flavorful bits in the pan. 	5.	Add in the leftover marinade veggies, turn the heat to low, and deglaze the pan with a splash of chicken stock. 	6.	Add in the rice, tomato paste, sliced onions/peppers (the ones you saved), and butter. Mix it all up. 	7.	Pour in the rest of the chicken stock (4 cups total). Stir again. 	8.	Nestle the chicken thighs back into the pan. Cover tightly with foil and a lid. 	9.	Bake at 400°F for 25 minutes. 	10.	Remove foil/lid and bake uncovered for another 5 minutes to let the top crisp up. 	11.	Drizzle with honey or hot honey when it’s fresh out of the oven. I said it once and I’ll say it again: Plant-based does not mean boring. This coconut black bean stew stays in rotation in my kitchen both on and off the fast because it’s THAT good. And just an FYI, you don’t need to be on the Daniel Fast to benefit from a body detox/ plant-based reset. 21 days of eliminating animal products, processed foods, sugar, and alcohol from your diet can do wonders for your body whether you’re fasting or not. Coconut Black Bean Stew INGREDIENTS (yields 4) 2 cans black beans, rinsed and drained 1 sweet potato, cubed 1 tbsp fresh ginger, minced 2 garlic cloves, minced 1/2 red onion, chopped 1 small green pepper 2 cups vegetable broth 1/2 cup cilantro, chopped 1 cup coconut milk 1 tbsp coconut oil 2 tsp cumin 1 tsp oregano 1 tsp onion powder 2 tsp complete seasoning 1/4 tsp smoked paprika Salt & pepper to taste DIRECTIONS In a large pot over medium heat, add in coconut oil, and sauté onion and green pepper for 2-3 minutes or until onions become translucent. Add in garlic and cook for another minute until garlic becomes fragrant. Add in vegetable broth, sweet potato, green pepper, ginger, cumin, oregano, onion powder, complete seasoning, and smoke paprika and cook for about 4-5 minutes, stirring frequently. Add beans and coconut milk and bring to a boil. Reduce heat to a low simmer and cook for about 15-17 minutes. Date butter has been a non-negotiable for me on the fast since I started almost 10 years ago. Since you can’t have any sugar or sweetener of any kind, I let the dates work their magic.  Just dates, blended with a little plant based milk (and don’t use too much milk or you won’t get the right consistency). Add a little vanilla and some cinnamon, and you’re good to go. This is what I use when I want a little sweetness without compromising.  I add it to oatmeal, smoothies, as a dip for my fruit, etc. Make this, I promise you’ll love it! #datebutter #danielfast

“Consistency isn’t about giving 100% every day — it’s about giving what you’ve got every day.” Looking at my growth over the last two years honestly blows my mind. I’ve been active my whole life- from dancing to track to cheerleading, but I never considered myself a “gym girlie.” I was intimidated by weights, scared of pull-ups, and upper body strength has always been a struggle for me.  Fast forward to now, and pull-ups are literally one of my favorite exercises. Not because they’re easy (they’re actually still hard as hell), but because they remind me of how strong I’ve become, physically and mentally. And let’s be real, my chiseled back ain’t hurting anybody either. I just gotta get rid of these two rolls and summer is mine! 😂 This is your reminder: don’t give up. Even if you can’t give 100% every single day, just give what you do have. Consistency isn’t about perfection, it’s about presence. Show up, stay with it, and trust that the results will come.
