This fresh cheese is easy and delicious- it’s a version of the “primosale” cheese I learned to make when I worked as a cheesemaker in Italy years ago.

I start with 2 gallons of @raw_farm_usa raw whole milk and warm it up 90°F.

I then add a half teaspoon of animal rennet (I buy liquid animal rennet on Amazon) - I dissolve the rennet in a few tablespoons of cold water and stir that into the warmed milk. Then I add a cup or so of Kalona buttermilk as a starter for the cheese. You can also use a commercial freeze dried cheese starter - you just want something to help the bacteria slightly acidify the milk so that the cheese is a little bit tangy. I do not recommend using yogurt as a starter - it makes the flavor too acidic.

I let the milk and rennet rest for about an hour just on the stove top where I heated up the pan and then once the curd cleaves very nicely against a knife that’s inserted - check the video for this - I cut the curd and heat it to about 100 to 115° F and stir it occasionally for about half an hour while the cheese curds reduce in size. I add two heaping tablespoons of kosher salt to the curds and whey to salt the cheese.

I then pour the curds and whey into a colander to strain out the curds from the way and conserve the whey. I use the whey in smoothies, in my baking instead of water, and also in soup – it’s delicious and highly nutritious as well.

Meanwhile, the curd drains out slowly in a colander, this takes about half an hour, and I then unfold it. I used some fig leaves on to plate and store the cheese and keep it moist in the fridge. This cheese lasts in your fridge for a week wrapped in leaves or plastic. If you need to last longer, I recommend you double the salt you add to the hot curds, that will extend the life of the cheese to 3 weeks or so.

This is crazy. And the sad truth is…

Most of us grew up eating what was considered “normal” at the time:

Cereal breakfasts, packaged lunches, ultra-processed dinners, and snacks engineered to be addictive.

Our parents weren’t trying to harm us, they were trusting the food system they were told was safe and convenient.

Now we know better. We understand that these foods were built on refined sugar, high fructose corn syrup, seed oils, artificial flavors, and ingredients no human body evolved to thrive on.

Today, we choose differently for ourselves and for our kids…

We prioritize real food, quality protein, healthy fats, whole fruits, and simple ingredients that actually support growth, hormones, and long-term health.

This isn’t about being perfect or extreme. It’s about replacing what was once marketed as food with what humans have always eaten and raising the next generation stronger than the last.

Eat like a human.

Shorter, colder days = less vitamin D, lower serotonin, and slower digestion.

Winter foods rich in fat-soluble vitamins, omega-3s, and minerals help balance mood, hormones, and immunity through these seasonal shifts ❄️ #OurHolisticHomes

Why doesn’t raw milk go bad?🥛🤯

Raw milk sours & ferments… pasteurized milk spoils and goes rotten🤢

Raw milk, still full of enzymes and beneficial bacteria, will naturally ferment into clabber milk (or kefir). And kefir (with all of the incredible probiotics) has been shown in dozens of studies to benefit human health in a variety of ways…

Gut support, skin issues, mental health, and many more 💯

When raw milk naturally ferments, it makes the milk more acidic lowering the pH to about 3.5. What’s great about this is that pathogenic bacteria can’t survive (e. Coli, salmonella, etc.), but all the probiotics thrive! Ultimately making the milk not only safer, but so much more health-promoting.

This makes fermented raw milk an incredible gut supporting food 🤝🏽

Comment TOOLBOX for a list of resources for sourcing raw milk.
______________

Despite decades of propaganda against it, milk remains nature’s most perfect food. It contains all the necessary components to build a growing body, including macronutrients, micronutrients, and immune factors.

Raw milk is the way milk is found in nature and how it should ideally be consumed. The pasteurization and homogenization processes can denature the delicate proteins and destroy vitamins, enzymes, and probiotics naturally occurring in raw milk.

Ironically, vitamin A and D are added back into commercial low fat milk to make up for the naturally-occurring nutrients removed with the fat.

Raw milk laws vary from state to state. Use the directory on realmilk.org to find raw milk farms in your local area.

If you are in California, you can buy @raw_farm_usa milk and an entire line of raw dairy products in retail stores. You can also buy Raw Farm cheese nationwide.

By making raw milk commercially available, Raw Farm is helping to end the taboo that raw milk is somehow more dangerous for you. Studies actually show the opposite. When produced properly, raw milk is safer, tastier, and far more nutrient dense than commercial pasteurized milk.

Fresh cheese packed in olive oil starts by making a batch of fresh curd. I use two gallons of @raw_farm_usa milk, start by warming your whole milk to about 90-95 degrees and mixing it with a few drops of animal rennet and either a packet of mesophilic culture or a splash of buttermilk and letting it set for an hour, then I cut the curd with a knife, gently stir it and ladle it into colanders.

If the colanders have large holes, I line them with cheesecloth.

I put a plate on top of the curd that fits snugly in the colander and put a half gallon mason jar of water on top to press it down and leave it that way overnight.

Then the next day I cut the curd into 1/2” chunks and toss the chunks with salt - do this as if you are salting a tomato salad - same dosage.

I pack the cubes of fresh cheese loosely into mason jars and add different types of seasoning - this time I made (1) lemon/pepper, (2) chili and (3) rosemary/garlic but you should just let your creativity be the guide.

I immerse the cheese chunks in olive oil - I use @amphoranueva - and don’t worry, you can and will re-use this oil! It’s super flavorful and wonderful on vegetables and salads. The jars of seasoned cheeses last 2 weeks in the refrigerator.

Real food always wins 🥩🍒🍑🥛

It’s a common narrative that low sugar, low fat, dairy free, plant based alternatives, etc. are healthier, but they are often ultra processed, devoid of nutrients and/or loaded with unnecessary additives

Nature has created the most perfect foods, so let’s enjoy them (and stop getting rid of the egg yolks) 🫶

*I still love veggies, I just don’t love a bunch of raw kale and plain salads with no dressing*

*and nuts are good but I was eating like 400 almonds a day thinking almond flour options were better for me*

Eat whatever makes you feel good :)

Most flu symptoms are actually your body’s cleanup system turning on.
	•	Fever = heat to kill pathogens
	•	Congestion = your lymph + sinuses draining
	•	Coughing = clearing the airway
	•	Sweating = releasing toxins
	•	Fatigue = redirecting energy to healing

When we suppress every symptom, we interrupt the very processes meant to protect us.
Support your body instead: nourish, rest, mineralize, hydrate, and help it move things out. 🧹
