Here’s my “basic” recipe for two loaves:

720 grams water
170 grams sourdough starter
20 grams salt
1000 grams unbleached white flour

Mix everything together.

Cover and stretch + fold every 30 minutes (4 rounds).
I usually do this before bed and let the dough proof overnight.

In the morning, refrigerate for 6 hours.

Heat your Dutch oven (lid on) for one hour at 450°F.
Divide the dough and shape.
Bake for 30 minutes with the lid on.
Remove the lid and bake for another 15 minutes.

Let cool completely before slicing.  Torture, but absolutely worth it. Side note: my Mom left her bread knife at church 😂

I brought snacks for my strength trainer @benspowerandfitness and @ekjones14 training partner today.  This is the second time I’ve made this granola and this will definitely be a staple recipe.

I have @minimalistbaker to thank for this incredible recipe! I only slightly adapted her original “Super Chunky Coconut Granola” recipe to create what we have here: the most perfect granola clusters I’ve ever had! 😍

The Perfect Granola:

3 cups oats
1/2 cup sweetened shredded coconut
1/2 cup unsweetened shredded coconut
1 cup almonds, chopped
1 cup pecans, chopped
2 tablespoons brown sugar
1/2 teaspoon salt
6 tablespoons coconut oil
2/3 cup maple syrup
2 teaspoons vanilla extract
1 cup Craisins (I left the Craisins out of this version)

1. Preheat your oven to 325F.
2. In a pot over medium/low heat, melt the coconut oil, maple syrup, salt and brown sugar together. Remove from heat once the sugar is dissolved and everything is well combined. Add in the vanilla extract and stir together.
3. In a large bowl, combine the oats, shredded coconuts, pecans, and almonds.
4. Pour the maple syrup mixture into the bowl with the oat mixture and stir well until fully coated.
5. Dump the granola onto a parchment lined baking sheet and bake for 20 minutes. Turn the sheet around and bake for an additional 5 minutes. Let cool completely.
6. Break off clusters as large as your heart desires and sprinkle the Craisins all over.

Pieces of granola have their place in my heart, but nothing beats a big cluster of granola if you ask me! It’s perfectly sweet, crunchy, salty, and of course…addictive!

The rise was insane, the flavor was so much deeper, and the crumb? I AM OBSESSED.
Between the extra starter and doing two full minutes of stretch + folds every 30 minutes, this loaf might be my new favorite.

Here’s my updated “basic” recipe for two loaves:

One serving is made with:
🍞 2 CarbMaster low carb hot dog buns (cut each into 5-6 pieces)
🥚 1 egg
🥛 1/3 cup unsweetened almond milk
✨ 1 tsp cinnamon sugar (I use Cinnamon Toast Crunch Cinnadust – spice aisle!)
🍁 1/4 cup sugar-free syrup (Mrs. Butterworth’s is my go-to)

Whisk the egg, milk, and Cinnadust together. Dunk each piece of bread in the mix, coating both sides. Cook in a nonstick skillet with avocado oil spray over medium heat for 3–4 minutes per side, or until golden and toasty. Serve with syrup!

Stats for the French toast alone:
🔸 6 WW points
🔸 230 cals | 7 fat | 44 carbs | 26 fiber | 24g protein

Add 3 Jimmy Dean turkey sausage links and it’s:
🔸 10 WW points
🔸 330 cals | 14 fat | 45 carbs | 26 fiber | 36g protein

Not bad for a sweet breakfast that doesn’t leave you hungry an hour later. 💪

POV: your neighbors are driving 5 hours home from college weekend 🥱 I knew the last thing they’d want to do was cook, so I made them dinner ❤️ Pasta, marinara + meatballs all ready to go. Raise your hand if you always think you’re out of something, and notoriously grab a different item you already have several of…only to leave the store without the true missing item lol! 😂 

Me, too. 🙈 However! As long as you keep it updated with what you’ve used, you will now have an ongoing inventory so you only buy what you need. Ask it to categorize the list for you and provide a PDF if you’re someone who still likes a hard copy to keep on hand. Voila!

To every nurse: I commend you. Through all the hospital stays my husband had, I never met a nurse who didn’t give their absolute best. You carry families through moments they’ll never forget, and sometimes you become the steady hand holding everything together.

Here’s to kindness, to compassion, and to the quiet ways people show up when we need it most.

This photo popped up on my Timehop today from 11 years ago. We were in the hospital, waiting to bring my husband home for hospice. A nurse walked in and asked if he could shave him, and at first I said no because… what was the point? But he gently explained that on his breaks, he would shave patients who needed help or couldn’t do it themselves. It was such a simple act of kindness, but one that caught me completely off guard. In the middle of one of the hardest chapters of my life, here was a stranger choosing to care in a way that went far beyond his job description. I’m so grateful I have this photograph. Addicting Cucumber Salad 🥒 

The perfect cucumber side dish or snack for the summer! I need you to make this. It’s simple with layers of flavor and my newest hyperfixation 😅

RECIPE:
1 large (or 2 small) cucumbers, peeled & sliced
1/2 teaspoon salt
1 teaspoon MSG (optional but amazing)
2 teaspoons rice wine vinegar
2 teaspoons honey
1 teaspoon sesame oil
1 tablespoon minced garlic
1/2 teaspoon chili flakes

Throw everything together and shake or stir well to combine- that’s it! 🙌🏼 You can keep this in your fridge and make it ahead of time or enjoy it right away. Ciabatta-Style Bread!

When grocery prices keep creeping up, one of the easiest ways to stretch your dollar is to go back to basics. Making bread from scratch might take a little time, but it’s pennies compared to store-bought…and honestly, it tastes so much better.

As someone who has stretched a tiny budget as far as possible, I know how difficult it can be to put good food on the table without breaking the bank. One of the easiest ways to do so is with recipes like this bread! For a fraction of the cost and minimal effort, I made 8 rolls for less than half the price of a grocery store’s 4 rolls. 

🌟 Ciabatta-Style Bread (Easy & Budget-Friendly)

Ingredients:
	•	1 teaspoon active dry yeast
	•	1 tablespoon sugar
	•	2 ⅓ cups room temperature water 
	•	4 ¾ cups all-purpose flour
	•	½ teaspoon salt
	•	2 tablespoons olive oil

Ciabatta-Style Bread! When grocery prices keep creeping up, one of the easiest ways to stretch your dollar is to go back to basics. Making bread from scratch might take a little time, but it’s pennies compared to store-bought…and honestly, it tastes so much better. As someone who has stretched a tiny budget as far as possible, I know how difficult it can be to put good food on the table without breaking the bank. One of the easiest ways to do so is with recipes like this bread! For a fraction of the cost and minimal effort, I made 8 rolls for less than half the price of a grocery store’s 4 rolls. 🌟 Ciabatta-Style Bread (Easy & Budget-Friendly) Ingredients: • 1 teaspoon active dry yeast • 1 tablespoon sugar • 2 ⅓ cups room temperature water • 4 ¾ cups all-purpose flour • ½ teaspoon salt • 2 tablespoons olive oil Instructions: 1. Honeycomb Pasta Bake 😍

If you’re looking for something cozy and simple that feels fancy AF…this is for you! 

I might have beef with WW for calling a serving 11 points, but it’s only 328 calories! It’s easy, hearty, tasty, and looks like you put a lot more effort in than you did.

This loaf pan makes 4 servings. Each serving is:
328 calories
10g fat
51g carbs
3g fiber
11g protein
11 WW points

Serve this with a side salad and some chicken meatballs or sausage and you have a complete meal that looks (and tastes) like it took hours. ❤️ You need to make this!!!

Ingredients:
8 oz (measured dry), cooked Rigatoni pasta
1 cup light Alfredo sauce
1 cup pasta sauce
4 tablespoons grated parmesan cheese

Instructions:
1. Cook the pasta according to the package instructions, drain and let cool. 
2. Spray your loaf pan with avocado oil spray. 
3. Spread out 1/2 of the Alfredo sauce on the bottom of the dish. 
4. Stand all of your pasta up, filling the dish.
5. Pour over the pasta sauce, spreading it out so that it sinks into the pasta. Add the other half of the Alfredo sauce on top, spreading it evenly.
6. Sprinkle with the grated parmesan, cover with foil, and bake at 375F for 15 minutes. Remove the foil and bake an additional 15 minutes, and broil 2-4 minutes afterwards if you like an extra golden crunch.

Today would have been our 25th wedding anniversary.

For those of you who don’t know, my husband passed away just shy of our 14th anniversary at the age of 54. The last seven years of his life were hard.  On him, and on us. In and out of hospitals. An aortic heart valve replacement after being diagnosed with endocarditis. A third knee replacement after one became infected, which meant living with an antibiotic spacer for six months before it could be replaced again. 

A hernia surgery that wouldn’t heal, requiring a wound vac for four months. Colon cancer. And eventually, he passed away from complications of congestive heart failure.

While I wish with everything in me that he were still here, I also know that the quality of his life during those final years wasn’t what it should have been. And I have peace. Because I truly believe I was born to take care of him until his very last breath.

I guess the point of this post is simple: don’t take your partner, your spouse, or your significant other for granted. You never know how long you’ll have them. So give them an extra hug today. And tomorrow. And every day.

Because you can.

We’ve traveled together to Park City, Utah, Yellowstone, Banff, Canada and basically collected memories instead of just likes. And I’m just so genuinely grateful he’s in my life. Proof that sometimes the internet gets it really, really right.

Yesterday, my daughter and her husband had to say goodbye to their 13-year-old dog, Rummy. It was one of the hardest things to witness. Not only watching Rummy’s body begin to shut down, but also watching the heartbreak in Hannah and Jacob’s eyes. 😭

Rummy has been with them since they were just 20 years old, through every season of life. She was part of their beginning, their growth, their home. And for five of those years when Hannah and Jacob lived with me, I had the privilege of sharing life with her too. 🥰

This morning, my heart aches, but it also overflows with gratitude. Grateful for her joy, her sassiness, her unconditional love, and the light she brought into our lives for over a decade.

She will be forever missed, but never forgotten. Rest easy, sweet Rummy. 🐾❤️

Realistic what I eat in a day! 

As someone who is prioritizing balance in their diet, this is what works for me. I get to enjoy impromptu lunch dates with chicken tenders while still hitting my goals- which is what it’s all about! 

Today is day 164 of tracking calories 🥳 While it’s not the most fun thing to do, in the grand scheme of things, it’s not bad. It helps keep me on track and accountable, which ultimately feels good. 👍🏻

My first thought? Am I ever going to get over this plateau?! 😅

But then I zoomed out. For those who are new here, I’ve been maintaining a 35-pound weight loss for 21 months. I’ve been between 154–157 this whole time. And honestly? That’s something I’m REALLY proud of.

I’m living life. I eat food I love. I had an almond croissant at the farmers market yesterday and it was worth every single bite. 🥐 No guilt. No “bad” food. Just choices that I plan for.

The difference between my relationship with food in 2022 and now? NIGHT AND DAY. ✨

I’m deep in the middle of cleaning out my basement.  A total overhaul of the space that’s become a dumping ground for things I haven’t been ready to part with… or just couldn’t decide on. Yesterday, buried in a box, I found my late husband’s boating hat. 

It was from a work event that neither of us really wanted to go to, but we made the most of it. We grabbed boat hats, kept to ourselves, laughed, ate, and drank. I haven’t thought about that night in years. Wouldn’t you know it? My TimeHop reminded me that it was exactly 12 years ago to the day. Goosebumps.

I believe in signs. That little nod from him felt like his way of saying, “I’m still here.”
