Raise your hand if you’ve ever heard my voice!? 😂

Transparently, I hate voiceovers. I feel and sound robotic — praying I grow out of this first-hand embarrassment like, yesterday.

In positive news, after three long months, I finally descaled my espresso machine! I could actually cry tears of joy. No more spending $8-$12 a day on overpriced, and quite honestly, over-hyped lattes.

𝐰𝐡𝐚𝐭 𝐲𝐨𝐮’𝐥𝐥 𝐧𝐞𝐞𝐝:
• a few dashes of ground cinnamon
• 1 tbsp of raw honey
• 2 shots of fresh espresso
• ice
• equal parts oat milk

Note — I consider this a cortado because once the hot espresso cools it yields about 3-3.5 oz. I then use equal amounts of oat milk. Hence, cortado. (Don’t fight me on this, I beg 🤣)

Please let me know in the comments what other espresso drink recipes you’d like to see!

I keep seeing everyone and their mother post a deli container cocktail, so I decided to try it out without the alcohol and in a Weck jar. 🍑 𝐰𝐡𝐚𝐭 𝐲𝐨𝐮’𝐥𝐥 𝐧𝐞𝐞𝐝: • 1/2 a lime, quartered • 10 mint leaves • 1/2 oz of homemade brown sugar simple syrup (recipe below) • ice • 3 oz of peach puree (1 peach and 6 oz of filtered water) • 4 oz of coconut water • topped with sparkling water • optional garnishes: a few peach slices and a mint sprig Yields — 1 serving. 𝐦𝐞𝐭𝐡𝐨𝐝: • Throughly wash and slice 1 peach. • In a blender combine peach slices and 6 oz of filtered water. • Blend on high until desired consistency is achieved and set aside. • Throughly wash 1 lime, slice into quarters, and set aside. • In a glass combine 1/2 the lime, 10 mint leaves, and brown sugar syrup. • Muddle well. • Fill your glass with ice. • Add peach puree, coconut water, and top with sparkling water. • Garnish with peach slices and mint sprig. 𝐛𝐫𝐨𝐰𝐧 𝐬𝐮𝐠𝐚𝐫 𝐬𝐲𝐫𝐮𝐩: • In a small saucepan combine equal parts filtered water and brown sugar (1:1 cups.) • On high, stir consistently, until sugar has completely dissolved. • Simmer on low for 10-18 minutes. • Note: The longer it simmers for the thicker the consistency will be. • Remove from heat and allow to completely cool in the pan before transferring to a heat safe glass. • Store in the refrigerator. Yes, beets do in fact belong in Brazilian lemonade 👏🏽

I wish I could take credit for this delicious recipe but I definitely can’t. I saw @dayswithabril make this and had to try it for myself! I’ll admit, I was skeptical at first but oh was I so wrong about this recipe. Maybe I’m a little bias because I genuinely love fresh beet juice, but all I can say is: Don’t knock it ‘til you try it.

On a side note, her original recipe doesn’t call for coconut water but I thought it’d be a great addition. Not only does it help cut down on the Brazilian lemonade per serving, so you can make multiple servings, but it also lightens up the drink too. This isn’t required but I thought it was a great combo! Would definitely make again 👏🏽

𝐰𝐡𝐚𝐭 𝐲𝐨𝐮’𝐥𝐥 𝐧𝐞𝐞𝐝:
• 3 limes
• 3 cups of filtered water
• sweetened condensed milk (I used 1/3 cup but use however much you’d like)
• 1/4 cup of unsweetened coconut water
• 3 oz of fresh beet juice
• Ice

𝐦𝐞𝐭𝐡𝐨𝐝:
• Thoroughly wash three limes.
• Zest one and add to it your blender.
• Remove the skin from all limes and add to your blender.
• Add filtered water, sweetened condensed milk, and blend on high until smooth texture is reached.
• Strain through a fine mesh strainer.
• To your glass add ice, coconut water, desired amount of creamy lemonade, and top with beet juice.

Note — Most Brazilian lemonade recipes call for two separate blending methods. The first only includes limes, zest, and filtered water. Once strained you will then re-blend with ice and sweetened condensed milk. I just chose to be lazy and only blend once 😂 Do whichever method you feel is best for you.

Cheers,

Creamy (DF) Horchata 🫶🏽

I absolutely love horchata and making it as an adult always brings back such sweet childhood memories 🥹 I remember washing and soaking the rice with my abuelita. Then the following day she’d load it with cinnamon, sweetened condensed milk, and evaporated milk. Sure, that’s not how everyone makes it, but it was such a delicious treat as a kid.

Here’s a quick recipe that gives the same vibes without the overnight soak or added dairy.

𝐰𝐡𝐚𝐭 𝐲𝐨𝐮’𝐥𝐥 𝐧𝐞𝐞𝐝:⁣
• 3/4 cup of long grain white rice
• 1/4 cup unsweetened almonds
• 4 pitted dates
• 2 cinnamon sticks
• 4 cups of filtered water
• optional: pinch of coarse salt
⁣
𝐦𝐞𝐭𝐡𝐨𝐝:⁣
• Rinse your rise until the water runs clear.
• Soak both your rice and almonds for 3 hours.
Note — soaking is optional.
• Combine all ingredients into your milk machine hopper.
• Blend for 1 minute and strain.
• Pour over ice or store in the refrigerator for 3-5 days.

Beets + Ginger Root Wellness Shots.

It’s officially starting to feel more like Autumn here in Minnesota. With the shift in seasons, I always begin batching wellness/immunity shots. The three recipes I typically keep in rotation are: ginger root and cayenne, turmeric and orange, and this one.

Here’s a little overview on the importance of beets and why I add them to my wellness recipes:

· Helps in lowering blood pressure.
· Improves exercise stamina.
· Great source of minerals + potassium.
· Could aid in strengthening heart muscles, prevent certain types of cancers, & reducing risk of dementia.

Note — This recipe is for general wellness, but it’s always best to check with your doctor before introducing beets into your routine. 🫶🏽

𝐢𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:⁣
· 3 large beets
· 2 honeycrisp apples
· 1 lemon
· 2-3 knobs of ginger root

Yields — 8 (2oz) servings.

· Thoroughly wash all fruit.
· Remove the skin from the lemon + ginger root.
· Roughly chop all.
· Place chopped beets, apples, lemon, and ginger root in a juicer.

Lambrusco, but make it zero-proof 🍷

Welcome to my NA corner, where I’m turning popular holiday cocktails into zero proof drinks. This Autumn inspired NA lambrusco spritz is bold, dry, and has a hint of spice (cinnamon.) • Optional: drizzle of olive oil

I think some common misconceptions about mocktails are that they’re just juice and/or not complex in flavors. When in fact, neither is true! You can build simple, yet flavorful, mocktails that are gut friendly + delicious. Here’s how:

𝐰𝐡𝐚𝐭 𝐲𝐨𝐮’𝐥𝐥 𝐧𝐞𝐞𝐝:⁣
• 1 cucumber
• 1 ginger root, whole
• 6 oz of filtered water
• 2 oz of NA orange liqueur
• 2 oz of NA mezcal or NA tequila
• Ice
• 4 oz of sparkling water
• Optional: Cucumber slices for garnish

Yields — 2 servings.

𝐍𝐀 𝐛𝐫𝐚𝐧𝐝𝐬 𝐈’𝐝 𝐫𝐞𝐜𝐨𝐦𝐦𝐞𝐧𝐝:
• For orange liqueur I will always recommend “Orange Sec” from @lyresspiritco! It delivers a bright citrus-forward flavor, just like the real thing.
• If you’re looking to add a tequila blanco, I’d use “Agave Blanco Spirit” from @lyresspiritco! The flavor profile starts with roasted agave and finishes nice and peppery, always a go-to when I’m making NA margaritas.
• If you’re looking for something with more body and smoke flavor, I’d highly recommend checking out “Almave Humo” from @almave! It’s honestly the closest alcohol-removed mezcal I’ve ever come across. It has notes of piloncillo (brown sugar,) warm spices, and smoke-forward like the real thing.
⁣
𝐦𝐞𝐭𝐡𝐨𝐝:⁣
• Thoroughly wash and peel your cucumber and ginger root.
• Roughly chop both and add them to your blender.
• Add 6 oz of filtered water and blend on high.
• Strain and set aside.
• In your cocktail shaker combine cucumber + ginger juice, NA mezcal or tequila, and NA orange liqueur.
• Add ice and shake vigorously.
• Strain over ice and top with sparkling water.
Note — 1 oz of lime juice and 1 oz of agave is optional. I decided to omit it to give it a more green-juice vibe.

AND SHE’S BACK WITH A MOCKTAIL✨

Back from my two month hiatus with this delicious tropical mocktail. But don’t fret, it’s very easy to turn into a cocktail too.

What you’ll need:
• 1/2 kiwi, chopped
• 5-6 mint leaves
• 1/2 oz of simple syrup
• 3/4 oz of lime juice
• 2 oz of white rum
• Topped with sparkling water
• Garnished with mint sprig and sliced kiwis

For the simple syrup:
• In a small saucepan, add 1:1 ratio of cane sugar and filtered water (1:1 cups.)
• Stir slowly, until sugar dissolves, over medium heat.
• Once completely dissolved, simmer on low for 10-17 minutes.
• Note: The longer you simmer the thicker the syrup consistency will be.
• Remove from heat and allow to completely cool before transferring and storing in an airtight container.
• Store in the refrigerator for up to 1 week.
