Who wants a full plate of Swedish meatballs? 🇸🇪 Had these at a restaurant in Sweden and I think they’re pretty close! Ingredients Meatballs - 500g minced beef - 500g minced pork - 3/4 cups panko breadcrumbs - 1 large egg - 2 tbsp olive oil - 1/4 cup heavy cream - 2 TBSP milk - 1 TBSP dijon mustard - 1 tsp allspice - 1 tsp black pepper - Salt - Butter - Olive oil - Herbs: Thyme and rosemary Gravy - 1 cup heavy cream - 2 cups beef stock - 1 tsp Dijon mustard Mashed Potatoes (Pomme purée): - 5 Yukon potatoes - 1 cup unsalted butter - 1 cup whole milk - 1–2 tsp salt Cranberry Sauce - 2 cups lingonberries (I used cranberries because I couldn’t find lingonberries) - 1/3 cup sugar - Lemon juice to taste - Salt Quick Pickles - 1 cucumber - 2 cups white wine vinegar - 1 cup water - 3/4 cup sugar - 1 tbsp mustard seeds - Dill Instructions Meatballs - Add panko breadcrumbs to a bowl with heavy cream, milk, a whole egg, and Dijon mustard. Mix and let sit for 5 minutes. - Add ground beef, ground pork, allspice, salt, and black pepper, then mix until well combined. Form into golf-ball-sized meatballs and chill in the fridge for 1 hour. - Sear the meatballs in a pan with olive oil. Butter baste with herbs until fully cooked, then remove the meatballs from the pan. Gravy - In the same pan, reduce the beef stock with heavy cream. Once reduced, add Dijon mustard and whisk to make the gravy. - Warm the meatballs in the gravy before serving. Mashed Potatoes (Pomme Purée) - Boil the potatoes from cold water for about 35 minutes, or until tender. Peel the potatoes while warm, then pass them through a sieve. - Add the potatoes to a pan over low heat and gradually fold in the butter until creamy. - Pour in the milk and season with salt and gently fold. Cranberry Sauce - Cook the lingonberries in a pan over medium heat with sugar and lemon juice until they reach a jam-like consistency. Do not squish the lingonberries so they retain their shape. Quick Pickles - In a saucepan over low heat, cook the sugar with white wine vinegar, water, and mustard seeds until the sugar dissolves. - Add the sliced cucumbers and dill, then transfer to a container.

Teaching my friends how to impress his future in-laws. There are dozens of persian stews, or khoresht, out there but to me fesenjan is the most unique. It’s a pomegranate and walnut stew, sweet and rich but balanced by the sourness of the pomegranate. Here we’re going with duck for that elevated feel, which simmers in that goodness until pull apart tender. Ingredients
1 large onion, finely diced 3 medjool dates 5 oz walnuts 1 pinch saffron 1/4 cup water (for blooming saffron) 1/2 teaspoon turmeric 1/2 teaspoon black pepper 1/3 cup pomegranate molasses 2 duck leg quarters (or chicken leg quarters) 1 cinnamon stick 2 cups water Salt, to taste Pomegranate seeds, to garnish Optional sugar, to taste
