This cook i busted out a Meater Block. I mainly reference the center of the meat but use a couple extra probes to track both end pieces. The ends will cook faster, so just want to keep an eye on them. As per usual, i got my perfect cook on a pricey piece of meat. Mix it with red onions, bbq seasoning and throw on the griddle. I like to finish these with bbq sauce and cheese at the very end and serve them on toasted French rolls.
