Double Smoked 24 Pound Pulled Ham. I will smoke this one over night. Seasoned with the @traegergrills Whiskey Dust Rub. Stuck a @meatermade Pro Probe right in the center of the ham, making sure the tip of the probe was away from any bone for the most accurate reading. This was about a 12 hour cook total, then a 1 hour rest. Probe tender ended up being 201°. Smoke it between 225° to 275° for 6 to 8 hours. Then wrap it with some liquid, i used apple juice. As ham is very dense, the wrap and braise is important to it pulling at the end. I run about 325° during the wrap which allows it to get really tender and making sure the bones are separating from the meat. Most hams are way smaller than this one, so cook times would be much less. Double Smoked 24 Pound Pulled Ham. I will smoke this one over night. Seasoned with the @traegergrills Whiskey Dust Rub. Stuck a @meatermade Pro Probe right in the center of the ham, making sure the tip of the probe was away from any bone for the most accurate reading. Smoked Dino Beef Ribs, also known as brisket on a bone. Probably the best bite in bbq for most and one of the easiest cuts to smoke. One cooking temp, no wrapping while tracking internal temps with @meatermade After trimming all the fat and silver skin from the top side, I will season it heavy with a salt and pepper based rub. Pulling out my Meater Pro Duo for this cook since I have 2 racks. Installing the Probe in the thickest part of the rack. Fired up my @traegergrills Woodridge Elite to 275°. The only temp you need from start to finish to smoke a killer beef rib. Even at that temperature, you can see a beautiful smoke ring show up. No spritzing during the cook, just smoke. These took 7 hours total cook time and a 2 hour rest. . . . . . . #kendrickbbq #traegergrills #meatermade #beef #beefribs #brisket #smokedbrisket #bbqbrisket #bbq #lowandslow
