If you know @barefoodtim, you know he loves Mexican food — so naturally, we smoked carnitas for this collab. Pasture-raised Yonder Way pork shoulder, well seasoned and smoked low. Philip, a chef and ultramarathoner himself with ancestors in the Rarámuri region, built the dish around their longstanding tradition. The ingredients are heirloom Masienda masa with coconut milk, chia, quinoa, forbidden rice, piloncillo, and charred cinnamon, finished with seasonal fruit. It’s just as good before a long run as it is for breakfast. It used be on Comedor’s brunch menu, and now it’s only at Radius. You can pick one up in the store, or order on Instacart.

The ribeye cap is the outer muscle of the ribeye and one of the most flavorful cuts on the entire animal. Most places don’t sell it because they’re not breaking down whole carcasses, but that’s the beauty of whole animal butchery — you get access to cuts like this that you’ll never find at a grocery store.
