You NEED to try this for your next holiday potluck 👀🦐

I turned the classic Hong Kong Shrimp Toast I grew up eating into bite-sized crispy perfection using RITZ Crackers - and it’s honestly next level 🔥

Just spread the shrimp paste, roll in sesame seeds, and air fry till golden and crunchy 🤤 Perfect for holiday potlucks or when you wanna impress your fam with something different this holiday season 🎄🎁

⬇️ RITZ Crackers HK Shrimp Toast Recipe ⬇️

Ingredients:

Approx 18 RITZ Crackers 
15 - 25 pcs large frozen shrimp, thawed
½ tbsp cornstarch
 pinch of salt
1 tsp white pepper
1 tbsp sesame oil
¼ cup sesame seeds 
3 tbsp Japanese mayo
1 ½ tbsp sriracha
2 tbsp neutral oil (optional)

Instructions:

1. Chop shrimp finely until it becomes mushy and sticky. Add to a bowl along with salt, white pepper, sesame oil, & cornstarch.
2. Spread shrimp paste on one side of each RITZ cracker.
3. Sprinkle a generous amount of sesame seeds on top.
4. Optional: brush/spray a bit of oil on top before putting it in the air fryer.
5. Air fry for 4-6 minutes at 375F or until golden brown.
6. Mix mayo and sriracha together. Dip shrimp toast cracker in spicy mayo to make it tastier!

Turn regular grocery store salmon nigiri to a boujee spicy salmon crispy rice with just an air fryer! 🍣

Steps:
- remove salmon slices and cut super finely until it’s a paste
- put salmon in a bowl with sesame oil, kewpie mayo, sriracha, soy sauce. Mix well
- flatten rice so it’s more rectangular. Brush oil all around the rice
- air fry on 375 degrees for 5-7 mins or until crispy and golden brown
- top crispy rice with avocado slices & salmon mixture! Top with jalapeño slice if you want ( I didn’t have any on hand so I didn’t use it)

This holiday appetizer was gone in minutes 😳🎄

These Kimchi Grilled Cheese Dippers (with tomato soup) are going to be your go-to holiday appetizer 🔥 Did you know Bothwell Cheese is crafted in Manitoba, and made with 100% Canadian milk? 🧀

Their Red Hot Chili Pepper Monterey Jack cheese is delish and it’s even better when melted in these grilled cheese sandwiches!

[ Ingredients ] 👉🏻makes 2 sandwiches

1 cup chopped kimchi
1 tbsp butter
1 tsp sesame oil
2 tsp sugar
1 tsp soy sauce
4 bread slices 
Bothwell Red Hot Chili Pepper Monterey Jack Cheese, shredded or cut into slices
Butter for grilling 
Tomato soup, for dipping

[ Instructions ]

Sauté kimchi with butter, sesame oil, sugar, and soy sauce until fragrant and aromatic.
Top 2 slices of bread with kimchi and Bothwell Red Hot Chili Pepper Monterey Jack Cheese. Close the sandwiches with the other slice of bread.
Grill sandwiches in a generous amount of melted butter for 2-3 minutes each side, until golden, then air fry at 350°F for 3-5 minutes to finish melting the cheese.
Slice into dippers and serve with a mini hot tomato soup.

Trying the VIRAL yogurt + cookie hack!! ✨

Apparently when you put cookies into Greek yogurt, and keep it in the fridge overnight, the cookies will soften from the yogurt and the whole thing will taste like cheesecake! 🍰 

[tips]

💁🏻‍♀️ Use plain greek yogurt! Flavour it (if you wish) with freeze dried strawberries, matcha powder, cocoa powder, etc
💁🏻‍♀️ Use thin cookies like sablé, oreos (scrap the middle off), peak freans or shortcake cookies like what I used, or even biscoff cookies!

[steps]
1. You can use the greek yogurt cup and stick cookies directly into it OR scoop it out like me into a saran wrap lined glass container.
2. Insert cookies into the yogurt closely together until all of the yogurt is covered.
3. Leave in fridge for 18+ hours (this will allow the cookies to absorb the moisture from the yogurt).
4. The result should be soft moist 'cake like' layers paired with greek yogurt which will taste like a 'healthier' cheesecake! If needed, top with honey for more sweetness 🍯

Did you know you can turn regular grocery store salmon nigiri to a boujee spicy salmon crispy rice with just an air fryer? 🍣

Steps:
- remove salmon slices and cut super finely until it’s a paste
- put salmon in a bowl with sesame oil, kewpie mayo, sriracha, soy sauce. Mix well
- flatten rice so it’s more rectangular. Brush oil all around the rice
- air fry on 375 degrees for 5-7 mins or until crispy and golden brown
- top crispy rice with avocado slices & salmon mixture! Top with jalapeño slice if you want ( I didn’t have any on hand so I didn’t use it)

Lactose-Free Butternut Squash Mac & Cheese with Crispy Bacon (One Pot)

Ingredients (Serves 4–6)

8 oz (about 2 cups) dry short-cut pasta (such as shells, rotini, or cavatappi)
1 ½ cups butternut squash purée (from a can)
2 cups lactose-free milk
2 cups chicken broth
1 ½ cups Armstrong Lactose-Free Triple Cheddar Shredded Cheese
3 slices bacon, chopped
2 tbsp olive oil
1 tbsp cornstarch
½ tsp garlic powder
¼ tsp onion powder
¼ tsp smoked paprika (optional but adds great flavor)

Instructions

1. In a large pot or deep skillet, cook chopped bacon over medium heat until crispy. Remove and place on a paper towel–lined plate. Leave about 1 tablespoon of bacon fat in the pot (discard any excess).

2. In the same pot, add the dry pasta, lactose-free milk, and chicken broth. Bring to a gentle simmer over medium heat, stirring often so the pasta doesn’t stick. Cook until the pasta is al dente and most of the liquid is absorbed, about 8–10 minutes.

3. Lower the heat to medium-low. Stir in the butternut squash purée, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir well until smooth and heated through.

4. In a small bowl, whisk the cornstarch with 2 tablespoons of water to make a slurry. Stir a little bit into the pot and cook for 1–2 minutes until slightly thickened. Then, add the Armstrong Lactose-Free Triple Cheddar Cheese, stirring constantly until melted and creamy.

5. Fold in half of the crispy bacon. Taste and adjust seasoning if needed. Serve warm, topped with the remaining bacon and a sprinkle of extra cheese if desired.

6. Add Salt and black pepper, to taste. Enjoy!
