Viral Chopped La Scala Salad

1.5 heads iceberg lettuce, thinly sliced
1 cup sliced salami
1 can chickpeas, drained and rinsed
1 cup mozzarella cheese
1/4 cup pepperoncinis, chopped
1 small to medium red onion, super thinly sliced

Dressing

1/4 cup red wine vinegar
1/3 cup extra virgin olive oil
2 tsp Dijon mustard
1 garlic clove, finely grated
1 tsp dried oregano
1 to 2 Tbsp pepperoncini juice
Salt and black pepper to taste
1/4 cup finely grated Parmesan

Instructions

Add all salad ingredients to a large bowl. Whisk the dressing together until smooth, then pour it over the salad. Toss everything really well until fully coated. Let it sit for 5 to 10 minutes, toss again, then serve.

Caramelized Baked Sweet Potatoes

Ingredients

4 medium sweet potatoes, cleaned
1/3 cup olive oil
2 tbsp maple syrup
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp cinnamon
1/2 tsp vanilla extract

Instructions

Grab 3–4 medium sweet potatoes and slice them lengthwise, right down the middle.

In a bowl, combine the olive oil, maple syrup, cinnamon, salt, pepper, and vanilla extract. Whisk everything together until it forms a smooth, lightly thickened mixture.

Add the sweet potatoes to the bowl and coat them evenly, making sure the flat side is fully covered.

Line a baking sheet with parchment paper and place the sweet potatoes flat side down.

Bake at 400°F for 50–55 minutes, until the bottoms are deeply caramelized and the centers are tender.

Let them cool for at least 10 minutes before moving them. This step is important as it allows that caramelized layer to set and release clean from the pan.

Instructions

Place the sugar in a medium bowl. Using your hands, rub the lemon and lime zest into the sugar until it’s fragrant and fully incorporated.

Pour in 1 cup of boiling water and whisk until the sugar dissolves. Strain the mixture through a fine sieve into another bowl to remove the zest, creating a lemon-lime syrup. Let cool.

To serve, fill a glass with ice. Add about ¼ cup of the syrup (or more to taste), the juice of ½ lime, and top with sparkling water. Stir gently and enjoy your homemade Sprite.

Dr. Pepper Recipe

Ingredients:
1 cup coconut sugar
1/2 cup water
3 cinnamon sticks
1-inch piece each of lemon, lime, and orange peel
1/2 tsp each: ground nutmeg, cloves, cardamom, ginger, star anise
1 tbsp fresh ginger
1 tbsp peppercorns
1 cup cherries
1 tsp bitters
1 tsp vanilla
1 tsp almond extract

Instructions:
Start by adding the coconut sugar to a saucepan over medium-low heat. The moment it starts to caramelize at the bottom of the pot, immediately but slowly pour in the water while stirring. Keep stirring and let the mixture come to a gentle simmer.

Add the citrus peels, cinnamon sticks, ground spices, fresh ginger, peppercorns, cherries, and bitters. Let everything simmer on low heat for about 10–13 minutes, until the syrup thickens slightly and the flavors come together. Near the end of simmering, use a potato masher to gently mash the cherries and release all their juices into the syrup.

Remove from heat, strain out the solids, and stir in the vanilla and almond extract. Transfer the finished syrup to a jar and store it in the fridge for up to two weeks.

To serve: Mix about 3 tablespoons (or your desired amount) of syrup with seltzer water, or simply top it off to taste. Stir gently, then serve.

1 tsp dried oregano
1 tsp dried basil
½ tsp chili flakes (optional)
1 cup plant-based cream such as oat cream, or heavy cream
2 ½ cups vegetable broth
3–4 tbsp olive oil
Salt and black pepper to taste
Parmigiano Reggiano, grated

Pro tip: Mix the crushed tomatoes and tomato paste together before adding them to the skillet for a smoother sauce.

Instructions:

Place the pasta nests in the center of a large pan. Arrange the cherry tomatoes, red onion, garlic, and spinach around them.

Spoon the tomato mixture over the pasta and drizzle with olive oil. Season with oregano, basil, chili flakes if using, salt, and pepper.

Ingredients:

Zest of 3 lemons
Zest of 6 limes
1 cup sugar
Roughly 1 cup boiling water 
Juice of ½ lime (per glass)
Sparkling water, chilled
Ice

Instructions:

Place the sugar in a medium bowl. Using your hands, rub the lemon and lime zest into the sugar until it’s fragrant and fully incorporated.

Pour in 1 cup of boiling water and whisk until the sugar dissolves. Strain the mixture through a fine sieve into another bowl to remove the zest, creating a lemon-lime syrup. Let cool.

To serve, fill a glass with ice. Add about ¼ cup of the syrup (or more to taste), the juice of ½ lime, and top with sparkling water. Stir gently and enjoy your homemade Sprite.

I took that Red Lobster Cheddar Bay Biscuit mix and ran it two ways… baked up soft buttery biscuits and worked it right into the chicken breading so every bite got that flavor built in.

Perfect for spring hosting or Easter weekend when you’re trying to show out without doing too much.

Hot Honey Fried Chicken Cheddar Bay Biscuit Sliders

Ingredients

For the Biscuits & Breading
2 boxes Red Lobster Cheddar Bay Biscuit Mix (one for biscuits, one for chicken breading)

Chicken
2–3 lbs chicken breast, cut into slider-sized portions
Oil, for frying

Chicken Brine / Seasoning
1 1/2 cups buttermilk
1/2 cup pickle juice
2 tablespoons hot sauce
1 egg
2 teaspoons Creole seasoning
2 teaspoons garlic herb seasoning

Hot Honey Sauce
1 cup honey
1 1/2 cups Louisiana hot sauce
2 sticks unsalted butter, melted

Instructions

Prepare the chicken by combining buttermilk, pickle juice, hot sauce, egg, Creole seasoning, and garlic herb seasoning in a large bowl. Add the chicken and mix until fully coated. Let it marinate for at least 1 hour, or overnight for best results.

Prepare one box of Red Lobster Cheddar Bay Biscuit Mix according to the package directions and bake. Set aside to cool slightly.

Pour the second box of biscuit mix into a bowl and use it as your seasoned breading. Dredge the marinated chicken in the mix, pressing to fully coat each piece.

Heat oil to 350°F and fry the chicken in batches until golden brown and cooked through, about 5–7 minutes. Transfer to a wire rack.

In a saucepan or bowl, combine honey, Louisiana hot sauce, and melted butter. Mix until smooth and glossy.

Dip or coat the fried chicken in the hot honey sauce.

Slice the Cheddar Bay biscuits in half and build your sliders with the hot honey fried chicken.

Serve immediately.
