Niçoise salads are one of my go-to orders when I happen upon a good French bistro, but I’ve always wanted to combine a fish-n-chips flare into the idea since they have a lot of overlapping flavors. The sauce Gribiche has to be the king of “tartare” dressings IMO.

When fish skin isn’t your thing, this technique comes through on the texture you’re looking for. Sourdough encrusted salmon, white bean and corn succotash, finished with a fresh harissa dressing. 

@chefdanbarber might like this one…I’ve heard he’s not the biggest fish skin fan. 

It’s got all the things you need for a cozy fish recipe and can be easily adjusted to any season. Enjoy.

I’m all about braised short rib, but every once in a while it’s nice to use something a little inexpensive and still moist as all get out. Thighs don’t get enough love…

Chilean sea bass has to be the #1 most forgiving fish varieties out there. Poach it, grill it, broil it, glaze it, you name it. The ginger/soy mash was incredible btw. 🤤
