It’s got a crisp exterior (the secret is to finely grind up walnuts instead of chopping them), warmth from cinnamon in every bite, and if you’re feeling like it, a swirl of salted caramel sauce. 💁🏻‍♀️ I didn’t add any caramel this year because, quite frankly, the idea of dirtying one more pan today was NOT a happy one. Full recipe below!

✨For the Sausage✨
2 lbs Italian pork sausage
3 Tbsp Dijon mustard
2 Tbsp chopped fresh sage
2 Tbsp chopped fresh rosemary
2 tsp fresh lemon zest
1 tsp ground mace
1 tsp kosher salt
½ tsp black pepper

✨Remaining Filling Ingredients✨
2 Tbsp olive oil
1 large leek, thinly sliced
1 sweet onion, halved and thinly sliced
2 large carrots, diced
½ cup dry white wine
1 Tbsp flour
1 bag fresh baby spinach
Kosher salt
Freshly ground black pepper

✨For the Phyllo✨
~6 sheets of phyllo dough, defrosted, broken into squares
3 Tbsp unsalted butter, melted
2-3 tsp sesame seeds

1️⃣ MIX THE FILLING. Preheat oven to 400°F (205°C). In a large bowl, mix together sausage, Dijon mustard, herbs, and spices until very well blended.
2️⃣ COOK THE VEGGIES. Heat 2 Tbsp olive oil in a large pan over medium heat, then add sliced leeks, onion, and carrots. Season lightly with salt and pepper, then cook, stirring often, until softened, about 4-6 minutes. Use a spatula to clear the center of the pan, pushing the edges to the sides.
3️⃣ ADD SAUSAGE. Raise the heat to medium-high, add all of the sausage to the pan, then cook it, alongside the veggies, until browned on all sides and mostly cooked through.
4️⃣ DEGLAZE WITH WINE. Pour in ½ cup white wine and use a spatula to scrape any browned bits off the bottom. Allow the wine room to reduce by half, then sprinkle in the flour. Stir well.
5️⃣ ADD SPINACH. Add an entire bag of baby spinach, cook until wilted, stirring occasionally, then turn off the heat. Taste and adjust seasoning as needed.
6️⃣ TOP WITH PHYLLO. Cut or break a slice of defrosted phyllo into small pieces (roughly 3-inch squares), then crumble and place on top of the filling with the edges facing up. Repeat until the entire pan is filled with phyllo. 
7️⃣ BAKE. Brush melted butter lightly all over the phyllo, then sprinkle with sesame seeds. Bake for about 30-40 minutes, until the phyllo is golden brown and impossibly crispy. Dig in while hot!

Day 2 of cooking in our temp kitchen while we renovate and I knew I wanted to bake something familiar and comforting to the kids. Banana bread might be the thing I make most — because rotting bananas, duh! 🤪 — and our favorite version combines nutty browned butter with sweet white miso paste. It is perfection and the kids can smell it from a mile away!

Full recipe below, so be sure to save for when you too have 🍌 in utter despair. 💯

Ingredients:
▢ 10 Tbsp (142g) unsalted butter
▢ ¼ cup (60g) sweet white miso
▢ 2 cups (240g) all-purpose flour
▢ 1 tsp baking soda
▢ ½ tsp ground cinnamon
▢ ½ tsp kosher salt
▢ 2 or 3 large ripe bananas (because sometimes I have 2 and sometimes I have 3 😂)
▢ ⅔ cup (135g) light brown sugar
▢ ¼ cup (50g) granulated sugar
▢ ⅓ cup (90g) sour cream
▢ 2 large (100g) eggs, room temperature
▢ 1 tsp pure vanilla extract
▢ 1 cup (200g) semi-sweet chocolate chips or shaved chocolate

1. BROWN THE BUTTER. In a saucepan over medium heat, melt the butter and cook until golden brown and nutty, about 5–7 minutes. Pour into a heatproof bowl, then whisk in the miso paste until smooth. Let cool slightly.
2. MIX DRY INGREDIENTS. In a medium bowl, whisk together the flour, baking soda, cinnamon, and kosher salt.
3. COMBINE WET INGREDIENTS. In a large bowl, mash the bananas with a fork, as smooth as you can get them. Add the browned butter-miso mixture, brown sugar, granulated sugar, sour cream, eggs, vanilla extract, and vanilla bean seeds. Whisk until fully combined.
4. FINISH THE BATTER. Add the dry ingredients to the wet and fold gently with a spatula until just a few streaks of flour remain. Stir in the chocolate chips, being careful not to overmix.
5. BAKE. Pour the batter into a parchment-lined 9x5 loaf pan and smooth the top. Use a butter knife to draw a line down the center (this encourages an even rise). Bake at 350°F for 60 minutes, or until a toothpick inserted into the center comes out clean.
6. COOL AND SERVE. Let the banana bread cool in the pan for 10–15 minutes, then transfer to a wire rack. Slice and enjoy — optionally with a sprinkle of flaky sea salt on top.

Cooking eggs in stainless steel — are you feeling like you have a good handle on this, or nah? 😜

I recently asked you all what your comfort level was with stainless steel cookware and I was saddened to hear that many of you struggle with it (but also that you want to learn more)!

I figured we’d start straight with something that seems scary, but really isn’t. 🍳 Don’t let the fact that I broke an egg yolk upon entry into the pan deter you —  that was due to lack of coffee, and YES it still releases from the pan easily.

What questions do you all have?! Shout ‘em out below or save this for later when you want a refresher!

My best tips for cooking with stainless steel:
1️⃣ Preheat the pan very well. I set this to medium-high and heated for 2 minutes.
2️⃣ Test with water. When you think it’s ready, splash a little water. It should evaporate.
3️⃣ Add fat — in this case butter, but oil works great too. Just let it melt (or heat up) for about 30 seconds before adding the eggs.
4️⃣ Give the eggs time. Once you add the eggs, season them however you like, then give them a minute or two to cook. You’ll see the edges begin to lift up a bit.
5️⃣ Shake the pan. The ol’ wiggle test will let you know if it’s time to flip your eggs (or simply remove from the pan if you’re cooking them over-easy). They should move freely. If they don’t, let them cook longer.
6️⃣ Use a thin spatula! You’re not supposed to use metal with nonstick, but that’s another perk of cooking with stainless steel. 😜 My fish spatula is my #1 most used kitchen tool.

Excited for you to try this because it really isn’t meant to be scary or intimidating. And what’s the worst that happens, you waste $15 worth of eggs? 😂 I kid!

It should evaporate. 3️⃣ Add fat — in this case butter, but oil works great too. Just let it melt (or heat up) for about 30 seconds before adding the eggs. 4️⃣ Give the eggs time. Once you add the eggs, season them however you like, then give them a minute or two to cook. You’ll see the edges begin to lift up a bit. 5️⃣ Shake the pan. The ol’ wiggle test will let you know if it’s time to flip your eggs (or simply remove from the pan if you’re cooking them over-easy). They should move freely. If they don’t, let them cook longer. 6️⃣ Use a thin spatula! You’re not supposed to use metal with nonstick, but that’s another perk of cooking with stainless steel. 😜 My fish spatula is my #1 most used kitchen tool. By far the easiest way to improve *any* Thanksgiving recipe that calls for stock: use homemade. 💯 And this is the perfect thing to prep NOW.

1. Roast any cut of turkey you like: wings, drumsticks, a bone-in turkey breast. Whatever! Just be sure to drizzle with olive oil and season generously with salt and pepper. Cook at 450F until golden brown, about 40-45 minutes.

2. Fill a stock pot with cut up veggies and aromatics. I used: 2 halved onions, a halved head of garlic, carrots, celery, parsley, thyme, scallions, and dried bay leaves.

3. Place the roast turkey on top, then deglaze the sheet pan with water — be sure to scrape off any browned bits. Pour this into the pot.

4. Add enough water to submerge the turkey and veggies, bring to a boil, then simmer for hours. The longer you go, the better it tastes. 😉 I cook mine for about 4 hours (because I needed to go to bed 😂).

5. Remove the turkey (enjoy the delicious meat in a variety of dishes!), strain the broth, then discard the veggies. What you’re left with is a glorious, flavorful turkey stock. 🙌🏻 Refrigerate until needed or freeze for later.

We have crossed some magical threshold and, while I almost don’t want to jinx it by even uttering the words out loud, I also kind of want to scream from the roof tops that my picky child now loves duck.

Please just let me have my moment, this is a big deal. 😂
