One of my favorite finds from the weekend markets here in Manila… 

This is 🎄✨ Puto Bumbong—a purple-hued Christmas classic that smells like Simbang Gabi and tastes like home. 

Found near churches, night markets, and festive food stalls. It’s mostly seen during the Christmas season, especially in December and often paired with bibingka, salabat (ginger tea), or tsokolate.

Puto bumbong comes from the Tagalog words puto (steamed rice cake) and bumbong (bamboo tube). Traditionally made with pirurutong, a deep purple glutinous rice soaked overnight, then steamed inside bamboo tubes. It’s closely tied to Simbang Gabi, the nine-day dawn masses from December 16–24. Vendors line church entrances before sunrise, serving this treat to sleepy worshippers.

🍴 How to Make It at Home (No Bamboo Needed!)

You can replicate the flavor and texture using this simplified method:

• Mix glutinous rice flour with water and ube flavoring.
• Grate the dough into fine crumbs.
• Shape into logs using greased foil and steam for 10–15 minutes.
• Serve on banana leaves, brush with butter, and top with grated coconut and muscovado sugar.
