Busy summer days with kids = zero time to think about lunch… which is why this high-protein pasta salad will be on repeat in our house! ☀️⛱️🛝

✔️SAVE this recipe for later!

We used @catellipasta new PROTEIN+ pasta – it’s packed with 17g of protein per serving thanks to lentils, chickpeas, and pea protein… but tastes just like regular pasta. Even my kids couldn’t tell the difference! 

HIGH PROTEIN PASTA SALAD:
INGREDIENTS: 
• 3/4 package Catelli PROTEIN+ elbows
• ½ cup shredded cheddar cheese
• 1 small can of tuna, drained
• ½ red bell pepper, finely chopped
• ½ cup corn, cooked and cooled
• ½ cup peas, cooked and cooled
• ½ can sliced black olives

Dressing:
• ¾ cup avocado oil mayonnaise 
• ½ tbsp organic ketchup
• 1 lime juiced
• ½ tbsp maple syrup 
• ½ tbsp yellow mustard
• ½ tsp onion powder
• Sea salt and pepper to taste

DIRECTIONS:
1. Boil pasta, drain and cool, then mix with cheese, tuna, peppers, corn, peas & olives.
2. Whisk dressing ingredients, toss everything together.
3. Chill & serve! 🍴

The mom hack I do every time I make rice for my kids 🍚🥬
Recipe below ⬇️ 
Save this post for later ✔️

I mix in frozen cauliflower rice with white rice while it cooks, and they never notice 👌🏼 Such an easy way to add a little extra veg, fiber, and volume without changing the texture much.

It still comes out soft, fluffy, and works great as a side for tacos bowls and stir-fry’s. A tiny upgrade that makes me feel like I did something extra with almost no extra effort 😅

Directions: 🧭 
1 cup white rice, rinsed
1 cup water or broth
Pinch of sea salt
1/2-1 cup frozen cauliflower rice

Add everything to a medium saucepan and bring to a boil. Lower to a simmer, cover with the lid, and cook for about 10-15 minutes, until tender and fluffy. Let sit 5 minutes, then fluff with a fork. If it’s looking dry just add more water.

I finally tackled my kids’ bottom drawer and swapped out the last of our plastic and stuff they’ve outgrown for materials I feel so much better about. It’s such a small change but it brings so much peace of mind. 

Here’s what we switched to:
• Stainless steel plates (with lids + suction) 🍽️ @elkandfriends 
• Stainless steel cups 🥤
• Ceramic bowls with silicone sleeves 🥣
• Stainless steel cutlery 🍴
• Stainless steel thermos + bento boxes @hydroflask @thegoodkiind 

Everything stacks better, looks cleaner, and the kids can grab what they need on their own. Simple, safe, and functional ✨

When it comes to cleaning my home I only use natural cleaners without artificial fragrances. They work just as great, are usually budget friendly (baking soda, vinegar, lemon and salt) and safer for your family. Especially if you have kids and pets that are all over the furniture and floors you want to know that the products you are spraying all over the place are safe enough to ingest.

I remember being so stressed out leading up to Sage turning one thinking I had to plan a date to stop our breastfeeding journey. Looking back I wish I could tell myself that I would end up breastfeeding for another 1.5 years and that there was no rush or need to end earlier just because of the outside worlds opinions. This time around I rarely think about it because I don’t have any pressure to stop before we’re ready. This is OUR journey and not anyone else’s. I’ve been holding off going through this basket of maternity clothes sitting in the corner of our bedroom and I think subconsciously I wasn’t ready to. 🧺

I told myself maybe instead of packing them away I could keep the ones that still fit and work with my body, donated some and stored the rest away for a rainy day 🙃

I last minute decided I wanted to document this moment and turned on the camera not realizing how emotional this task on my back burner to do list was going to be.

The maternity jeans with the elastic band really hit home. I remembered the bump that was once there, the kicks, the rolling side to side in bed. I even still have both pants that my water broke in with both babies 👶🏼 💦

I don’t think I’ll ever be able to donate all of them and I realized I don’t need to. There will always be space in my closet for these memories and this chapter is not closed yet. ❤️
