One-Pan Leek, Pea and Garlic Butter Risoni with Burrata! Made easy in the KitchenAid 26cm Skillet with Lid from Coles.

This might be a hot take, but I often find one-pan recipes can end up a bit one-note when it comes to texture. So when I developed this one, I wanted every bite to have something going on. The leeks melt down into the risoni and give it this almost buttery, custardy softness, while the peas add little pops of sweetness and colour (plus they’re one of the easiest pantry freezer staples to throw into a dish). Then the burrata gets torn over the top for that creaminess, and of course we need some crunch to finish, so crispy fried shallots are a no-brainer.

Serves 4 | Prep 5 mins

Ingredients:
- Ice cubes
- 1 lemon, thinly sliced
- 1/4 ruby red grapefruit, thinly sliced
- 1 cup (250ml) Coles Lemon Flavoured Ice Tea, chilled
- 1/4 cup (60ml) ruby red grapefruit juice, chilled
- 1/4 cup (60ml) lemon juice
- 1/2 cup (125ml) Pure Origin Dry Gin* Tonic water, chilled, to serve Fresh thyme sprigs, to serve

Method:
1. Fill the 1.2L carafe with ice cubes, lemon and grapefruit slices. Pour in the chilled tea, grapefruit juice, lemon juice and gin. Top with tonic water.
2. Pour into the Gin & Tonic Glasses. Top with extra tonic and serve with thyme sprigs.

* To make this a mocktail, simply omit the gin!

Prawns in coconut curry sauce 👌🏽

I used the KitchenAid Mini Food Chopper to build the base for this coconut curry- quick, controlled chopping with proper texture every time.

The Mini Food Chopper is available in store only, and only available with 50 credits and $50 or you can purchase it for $100.

Ingredients

12 tiger prawns (cleaned and deveined), salt, black pepper, 1.5 tsp chilli powder, 2 shallots, 1 habanero chilli, ½ stalk lemongrass, 5 garlic cloves, 1/2 tomato (chopped), ½ can coconut milk, 2 tbsp coconut oil, 1/2 tsp turmeric, 1 tsp cumin powder, 1 tsp allspice powder, 1/2 tsp garam masala, 1 lime, 2 tbsp soy sauce, coriander leaves (for garnish).

Method

1. Season the prawns with salt, black pepper, and chilli powder. Grill in oven/airfryer at 180°C for about 3-4 minutes until just cooked. Set aside.
2. Finely chop the shallots, habanero, lemongrass, and garlic.
3. Heat some coconut oil in a pan and cook the chopped aromatics for 6–8 minutes until softened and slightly caramelised.
4. Add turmeric, chilli powder, cumin powder, and allspice. Cook for about 2 minutes.
5. Add the coconut milk and let it simmer. Stir in the chopped tomato and cook for 10–15 minutes until the sauce thickens.
6. Finish with garam masala, soy sauce and a squeeze of lime.
7. Plate the grilled prawns, spoon the coconut curry sauce over the top, and garnish with coriander leaves.

Enjoy it with rice.

Sausage & Egg Brekkie Muffins
Makes 4 | Prep 15 mins | Cook 15 mins 

Ingredients:
560g pkt Coles Simply BBQ Sausages, casings removed 
1 tsp dried mixed herbs
100g Coles Simply Tasty Cheese Block, thinly sliced (8 slices)
1 tbs Coles Simply Olive Oil
4 Coles free-range eggs
4 Coles Simply English Muffins, split 
⅓ cup (100g) Coles Creamy Chipotle Sauce 
40g Coles Australian Rocket 

Method:
1. Place sausages and mixed herbs in a large bowl and mix until well combined. Using damp hands, shape into 4 even patties.

2. Heat a large non-stick frying pan over medium heat. Cook patties for 4 mins each side or until golden and cooked through. Top each patty with 1 slice of tasty cheese and transfer to a plate. Wipe pan with paper towel.

3. Heat the oil in the frying pan over medium heat. Crack 2 eggs into the pan. Cook for 2 mins or until the edges are crisp and the egg is cooked to your liking. Transfer to a plate. Repeat with remaining eggs. 

4. Toast muffins and place on serving plates. Spread with chipotle sauce. Top with patties, egg, rocket and muffin tops to serve.

Simple ingredients, big flavour, and proof that affordable meals can still feel a little special.

*Makes 4 

4 Coles Simply RSPCA Chicken Burgers Plain Crumb
4 Coles Simply Hamburger Rolls, split
⅔ cup (200g) Kewpie Mayonnaise
½ cup (125g) kimchi, drained, chopped
1 Lebanese cucumber, cut into ribbons
4 Slices burger cheese 
Slaw
1 tbs rice wine vinegar
1 tbs soy sauce
2 tsp honey
2 cups shredded green cabbage
½ carrot, cut into matchsticks
2 spring onions, thinly sliced
½ green apple, cut into matchsticks
1 tbs white sesame seeds, toasted
 
1. Cook the chicken Preheat oven to 200°C (180°C fan-forced). Line a baking tray with baking paper. Place the chicken burgers on the lined tray. Bake for 12 mins or until golden and cooked through.
2. Toast the rolls Meanwhile, place roll tops and bases, cut-side up, on a baking tray. Bake for 3-4 mins or until toasted.
3. Prep the mayo Combine the mayonnaise and kimchi in a small bowl.
4. Make the slaw Combine the vinegar, soy and honey in a large bowl. Add the cabbage, carrot, spring onion, apple and sesame seeds and toss to combine.
5. Bring it all together & serve Spread the mayonnaise mixture over the cut side of each roll base, then top with cucumber ribbons, chicken burgers, cheese and slaw. Top with the bun tops and serve.

Cheats white choc, matcha & wasabi truffles
Makes about 24 |  Prep 30 mins (+ 40 mins chilling time) | Cooking 5 mins 

Ingredients:
600g Coles Bakery White Mud Cake, paper case removed, coarsely chopped
3¼ tsp matcha powder
1 tsp wasabi paste 
11/2 x 250g pkts white chocolate melts

Method:
1. Place cake in a large bowl. Use clean hands to crumble until coarse crumbs form and the cake and icing are combined. Press into a soft, doughy consistency. 

2. Add 3 tsp matcha powder and the wasabi and use the heels of your palms to knead into the mixture until well combined.

3. Line a large baking tray with baking paper. Roll level tablespoonfuls of the mixture into balls. Arrange on the lined tray and place in the fridge for 30 mins to chill.

4. Place the chocolate in a medium heatproof bowl over a saucepan of simmering water (don’t let the bowl touch the water). Use a metal spoon to stir for 5 mins or until chocolate is smooth and melted. Use a fork to dip each ball in the chocolate to coat, shaking off excess. Return to the lined tray. Place in the fridge for 10 mins to set. 

5. Dust truffles with remaining matcha powder.

Ingredients

2 pkts Coles Lamb kebabs
3 tbsp Pataks Tikka masala curry paste
2 cups basmati rice
120g bag baby spinach leaves 
1 cup Coles Greek yoghurt 

Method

Roll the lamb kebabs into golf ball size pieces.

Heat the skillet over a medium/high heat. Add the meatballs and brown, turning throughout cooking. Remove them to a plate then add the curry paste to the pan along with the rice and stir well to combine then add 3 cups of water & season with a little salt & pepper then bring to the boil stirring. 

Turn the heat down low, add the meatballs back to the rice then cover and cook for 10 minutes before turning off the heat and allowing to sit for another 5 minutes before stirring through the spinach to just wilt &  serving with the yoghurt spooned over.

Method

Cook the arancini according to the packet instructions. Blend the garlic aioli with the basil leaves until smooth, adding a little water only if it feels too thick. Serve alongside the basil aioli.

Mix the lamb mince with cumin, salt & pepper until combined, then shape it into four patties. Place the onion in a bowl with lemon juice & a pinch of salt so it can lightly pickle. 

Grill or pan fry the patties until browned & cooked through, then toast the brioche buns. To assemble, spread garlic aioli onto the buns, add rocket, onions, patty, then finish with the top bun.

Combine the apple slices with cinnamon, sugar & lemon juice. Bring the short crust pastry out of the freezer 10-15 minutes before to thaw out slightly. Lay pastry flat & arrange apples in the centre. Fold the sides over to create a rustic edge. 

Bake at 185c for 1/2 hour, rotating the tray halfway through. Finish with a dusting of icing sugar, cut into 4 slices & serve with Vanilla bean ice cream.

Ingredients:

Kransky Sausage Rolls:
* 1 pack Coles Pork Kransky Bites with Mozzarella
* Puff pastry sheets
* 1 egg
* Splash of milk
* Black sesame seeds
* Coles Tomato Chutney

Beef Sliders:
* 1 pack Coles Beef Slider Patties
* Brioche Slider buns
* Burger cheese slices
* Coles burger sauce
* Pickles, sliced

Bacon Jam:
* 6 slices middle bacon, diced
* 2 red onions, thinly sliced
* 1 tbsp butter
* 3 tbsp brown sugar
* 2 tbsp balsamic vinegar
* 2 tsp Worcestershire sauce
* 1 tsp sweet paprika

Method:

Start by making the bacon jam. Place diced bacon into a cold pan, turn the heat to medium-low. Cook for 8–10 minutes until the fat has rendered and the bacon is lightly crispy. 

Remove the bacon and discard most of the fat, leaving a little in the pan.

Add butter & sliced red onions to the pan. Cook on low heat until the onions are soft and starting to caramelise. Add a splash of water to deglaze the pan and loosen any stuck bits.

Return the bacon to the pan. Add brown sugar, vinegar, Worcestershire sauce, and paprika. Stir well and simmer on low for 15–20 minutes, or until thick and jammy.

Preheat your oven to 180°C.

Crack the egg into a small bowl whisk with milk to make an egg wash.

Lay three kransky bites horizontally along one edge of each puff pastry sheet. Roll the pastry over tightly to encase the kranskys and seal the edge with some egg wash.

Slice the rolled pastry into smaller sausage rolls and place them seam-side down on a baking tray lined with baking paper. Brush tops with egg wash and sprinkle with black sesame.

Bake for about 20 minutes, or until golden and puffed. Serve with tomato chutney or mustard.

While the sausage rolls are baking, heat a clean pan with a little oil, cook the beef slider patties according per packet instructions.

When nearly cooked, top each patty with a slice of cheese and melt it under a grill.

Toast the slider buns. Spread burger sauce on the buns, then add the patty, a spoonful of bacon jam and a pickle slice. Place the top bun on and serve.
