When one does not have a gingerbread man cookie cutter, one makes gingerbread snowmen ⛄️ one is me. Scroll to bottom for recipe ⬇️ These vegan gingerbread snowmen were sooo easy to make & are MESS free thanks to @bellakitchen. They’re perfectly chewy and spiced without tasting TOO gingery or molasses-y (idk if that’s a word). Lmk what you think! Vegan Gingerbread Snowmen⛄️(makes about 9–12 snowmen depending on how you portion out the dough) Ingredients • 1/3 cup packed light brown sugar (add 2 tbsp more for extra sweetness) • 1/4 cup vegan butter, room temperature • 2 tbsp + 2 tsp molasses • 1 tbsp dairy-free milk (oat or almond) • 1/2 tsp vanilla extract • 1⅓ cups all-purpose flour • 1/2 tbsp ground cinnamon • 1/2 tbsp ground ginger • 1 tsp baking soda • Pinch of salt (if using unsalted butter) • 2 tbsp granulated sugar (for rolling) • Optional: syrup or frosting + shredded coconut for decoration Full instructions in comments!
