One of my favorite hacks is having a snack board ready for guests to nibble on the second they walk in. It buys you time to finish getting dinner together and makes everyone instantly happy. Here’s how I build mine ⤵️ 🧀 Cheese: Start with 1–2 cheeses — one hard and one soft. Think Parmigiano, Manchego, or Cheddar for structure, and then something creamy like Brie or goat cheese for contrast. 🥓 Meats: Add some cured meats like prosciutto, sopressata, or salami. Fold or roll them to create dimension and make the board look full. 🥜 Nuts: My favorite part — the PLANTERS® FESTIVE FANCIFULS™ Nuts They bring flavor and crunch, and bonus points for going seasonal. My FULL guide to making chicken cutlet 🤌❤️ There are few things in life better than a beautiful, thin, crispy yet still juicy chicken cutlet. It’s something I grew up on and can probably eat everyday. While my Nonna equipped me with the recipe to make some pretty great cutlets, culinary school taught me the reasons and techniques of WHY and HOW to do it. So here is all the info ~ GET THE FULL FREE RECIPE ON MY WEBSITE!!! - alessandraciuffo.com  Below are some key tips & tricks:  🔪 Butterfly your chicken breast. Place one hand on top of the breast flat and using a shape knife, begin making long straight motions* into the side of the breast. With each cut, open it up like a book and once you’ve made it to the end flatten it out and slice in half. *It’s important to avoid a saw motion to keep the slices as even and clean as possible.  🔪 Pound it out! For an even and thin cutlet, use a meat mallet or any heavy object with a flat surface and begin pounding out the cutlet. Start in the center and work your way to the edges.  🔪Set up the dredging station. FLOUR, EGG, BREADCRUMB… that is the name of the game. Get them in plates or trays right next to each other and season EACH one to maximize and layer the flavor. Feel free to have fun and add more spices and seasonings. I love adding parmigiano and parsley to the breadcrumb for added flavor or even orange and lemon zest in the summer!!  🔪 Shallow fry the cutlets. Pick your favorite frying oil (mine is olive oil for cutlets as it adds in a really nice subtle flavor) and add it to a pan so that it’ll reach 1/2 way up the cutlet ~ not submerging it. Allow it to heat up of medium LOW heat, because you want it to get golden while cooking the chicken. Cook until golden brown on both sides.  🔪Remove from the oil and season immediately. Let’s go through it step by step: 1. Release the twine and any other 2. Start with the legs. Run the knife along the inside leg, pop the joint, and cut to release. Repeat on the other side.  3. Separate the thigh from the drum by slicing along the joint where they meet.  4. Optionally ~ I like to debone and slice the thigh meat so that everyone can taste it. To do so, carefully remove the bone by cutting straight along it from the back, then pull it out and slice.  5. Onto the breasts. The easiest way to carve is to remove them from the carcass and then slice. To remove, run the knife slightly off-center along the bone, staying as close as possible to the bones, then make another cut along the bottom to release it. Slice into even pieces.  6. To remove the wings, lift it up and cut around it, then release by the joint. Separate the drummet from the wing by slicing by the joint again.  7. For plating, I like to keep things symmetrical on both sides of the plate so everyone can reach or separate it into two plates evenly.  8. Adding some garnish, such as fresh rosemary and cranberries, is a little trick to making it pop with some color but is optional as well!!!  If you have any other questions, feel free to ask away!!
