Something to elevate your week night menu. Wearing my new @hedleyandbennett apron 👀👀 Honey Harissa Salmon • 4 salmon fillets (about 6 oz each) Glaze • 2 tbsp harissa paste • 1 tbsp honey • 1 tsp smoked paprika • 1 tsp garlic powder • ½ tsp cumin • 1 tsp cornstarch • 2 tbsp water Season the salmon with salt and sear in a hot pan with a little oil for 2 minutes per side. Transfer to a 400°F oven for 5-7 minutes. While the salmon rests, add all of the glaze ingredients to the same pan and simmer for 1-2 minutes until thick and glossy. Spoon over the salmon. Turmeric Rice • 1 cup basmati rice • 1¾ cups chicken stock • ¼ white onion, finely diced • 1 tsp turmeric • ½ tsp cumin • 1 tsp garlic powder • 1 tsp kosher salt Rinse the rice, then combine everything in a pot. Bring to a boil, cover, reduce to low, and cook for 15 minutes. Let it rest for 10 minutes before fluffing. Moroccan Vegetables • 1 zucchini, diced • 1 small head cauliflower, cut into florets • ¼ bell pepper, diced • 1 tbsp olive oil • 1 tsp turmeric • 1 tsp cinnamon • 1 tsp cumin • 1 tsp kosher salt Toss everything together and roast at 400°F for 13-14 minutes. Finish everything with a squeeze of fresh lemon and some chopped parsley or cilantro if you have it.
