Smash Burger Tacos 🍔🌮
Recipe:
-Press 80/20 ground beef balls into street taco sized flour tortillas.
-Smash the tortilla, meat side down, onto a 400 degree skillet without oil.
-Cook until the meat is just about done, then flip over, and add a slice of American cheese on top.
-Cook until the other size of the tortilla is golden and crispy and the cheese is melted.
-Top with lettuce, pickles, special sauce, and enjoy.
Special Sauce Ingredients:
1 cup mayo
3 tbsp ketchup
1 tbsp dijon mustard
2 tbsp diced onion
1 tbsp relish
1 tbsp white vinegar
1 tbsp garlic powder
1 tsp paprika
1 tsp salt
1 tsp black pepper

Tortilla Beef Kebabs
Recipe:
-In a bowl mix together:
2.5 lbs ground beef
1 chopped red bell pepper
1/4 chopped red onion
4 minced garlic cloves
1/3 cup chopped green onion
2 tbsp paprika
1 tbsp cumin
1 tbsp garlic powder
1 tbsp oregano
1 tbsp pepper
1 tbsp salt
-Cut the ends of large tortillas off to make a square shape.
-Add a thin layer of the beef mixture to 6 tortilla squares.
-Stack them on top of each other and cut into 4 sections.
-Flip them onto their side and then stick 4 skewers into the stack.
-Cut in between skewers to make kabobs.
-Sear on each side until 165F internal while painting with chili oil.
-Top with burger sauce and chopped peppers and onions for toppings.

Bacon Wrapped Taco Pickles 🥓🥒
Recipe:
-Add a pack of taco seasoning to a jar of pickles, shake it up, and place in the fridge over night.
-Wrap each pickle with a slice of bacon and set on a wire rack.
- Fire up the pellet grill to 375F with Kingsford Craftsmoke Pellets
-Place the pickles on the grill for 40 minutes, or until the bacon is crispy.
-Remove and cool for a few minutes, top with ranch or bbq sauce, and enjoy!

The viral pickle dip on the grill
Recipe:
-Fill a foil tray with these ingredients:
1 full jar of pickles chopped
2 chopped jalapeño peppers
8 oz shredded cheddar cheese
8 oz shredded Monterey Jack cheese
1 bunch chopped green onions
1 cup sour cream
1 cup greek yogurt
1 cup whipped cream cheese
1 packet ranch seasoning
1 cup chopped bacon
1 tbsp hot sauce
1 tsp cajun seasoning
1 tsp garlic powder
1 tbsp pickle juice
-Place it on the grill indirect at 350F for 30 minutes.
-When everything gets soft, mix it all together, then let it cook for 15 more minutes.
-Remove, top with more cajun seasoning, and enjoy with kettle chips.

Mexican Street Corn Dip with steak. The perfect dip for college basketball
Recipe ⤵️
2 - 8oz cream cheese
8oz pepper jack
2 cans corn, drained
1 bunch cilantro, diced
1/4 cup sour cream (sub mayo)
Tajin seasoning
1/2 can beer (you drink the rest 😉)
* Fire the grill up to 250° using @kingsford Original Briquettes
* Add all ingredients to a pan, place it on the smoker
* Cook it for about an hour or until all the cheese melts, stirring every 15 minutes
* Add some cojita cheese and Tajin to top it off and enjoy!
* Once the cheese has melted, sear skirt steak over high heat till desired doneness and then after a 10 minute rest, cube it into bite size pieces
* Place the steak on top of the street corn dip and this is ready to serve
* Enjoy!

- Grill your brats
- Mix 8oz sharp cheddar, 8oz white cheddar, one block cream cheese, 2tsp worcestershire, 2tbs mustard, 12oz of beer and BBQ rub

Recipe:
-Start by combining these ingredients:
A stick of butter
1 lb colby jack
1 lb Monterey Jack
1 block cream cheese
2 cans evaporated milk
1/4 cup hot sauce

* Fire the grill up to high heat using @kingsford briquettes
* Season 2 chicken breasts with your favorite bbq rub, grilling over high heat until done
* Remove the chicken and shredded it
* Into a cast iron pan (or foil pan) add: shredded chicken, 8oz cream cheese, 8oz cheddar cheese, 8oz mozzarella, 1 cup diced red onions, 1 cup drained corn, 1 cup sour cream, 1 ranch packet, 1 cup BBQ sauce (optionally add 1/2 cup milk)
* Mix everything thoroughly, placing it back on the grill at 350°

Recipe:
-Make the pre-glaze by blending 1 cup honey, 1 stick butter, and 3 tbsp dijon mustard.
-Cover the spiral ham inside and out with the pre-glaze.
-Place on the grill at 325F indirect for 2 hours (or until it looks the way you want).
-Make the post-glaze by simmering 2 cups pineapple juice, 1/2 cup brown sugar, 3 tbsp brown mustard, 3 tbsp honey, and 1 tbsp BBQ rub until it thickens.
-Allow the glaze to cool, then paint it on the ham near the end, and keep it on the grill for at least 15 minutes to let the glaze tack up.

Hot and Fast Saucy Pork Ribs
Recipe:
-Start by removing the membrane from the bone side.
-Cover with mustard as a binder and season with a good BBQ Rub.
-Place them on indirect at 350F for 90 minutes.
-Then wrap in foil with butter, brown sugar, and bbq sauce and place on the grill meat side down.

Chopped Chicken Gyro Wraps with @kingsford. These were so good!
Chicken Marinade (marinade for a minimum of 1 hr)
6-8 boneless chicken thighs
2 tbsp olive oil
4 tbsp Greek yogurt
2 tbsp lemon juice
2 tsp of each: salt, pepper, oregano, parsley, paprika, red pepper flakes, garlic & onion powder
Fire up the grill using @kingsford Original Charcoal to high heat (about 400-450°)
Grill the chicken till 165°, flipping periodically so it cooks evenly and gets a char on both sides
Let the chicken rest for 10 minutes before building your wrap
To a bed of lettuce, add chicken, French fries, tomatoes, red onions and feta
Start to chop until your desired consistency and then mix in homemade Tzatziki sauce
Add it to a large tortilla, wrapping tightly and enjoy!

My friends and I wanted to start the beginning of the year with a camping trip. No store bought food, fish straight from the water to the grill.
Sheepshead on the half shell with a fresh herb finish.
Using Matchlight charcoal from @kingsford
Recipe below.
Serves 3
Fish
•6 Sheepshead on the half shell
Base seasoning
You want to see it on the fish.
Brand version
•1 to 1.5 tablespoon Tony Chachere’s Creole seasoning
•1 to 1.5 tablespoon Badia lemon pepper seasoning
•1 to 1.5 tablespoon Everglades
Prep
•Brush flesh with 1 to 2 tablespoons melted butter or olive oil
• Season generously with base seasoning
• Place fish flesh side up on the grill. Shell stays on
•Add a dash of seasoning as the fish cooks, to add to the depth of flavor
Grill
•Medium high heat
•12 to 18 minutes depending on thickness
•Fish is done when opaque and flakes easily
•Add a small pat of butter to each filet while cooking
•Squeeze ½ lime over the fish near the end
Not so secret herb rub. (Best to make at home 24 hrs before)
Add during last 5 minutes
Ingredients
• 1 cup fresh cilantro
• ½ cup flat leaf parsley
• 2 cloves garlic, minced
• ¼ cup olive oil
• Salt to taste
• Very small piece of habanero or Scotch bonnet
• 1 teaspoon Creole style seasoning
Put in a blender or use an immersion blender to mix.
Finish
Spoon herb rub over fish in last 5 minutes
Remove from grill and rest briefly
Optional squeeze of lemon before serving
Serve on the half shell. Scoop and eat

Corned beef for St. Patrick’s Day 🍀
Recipe:
-Make the rub mixture by combining brown sugar and black pepper.
-Use mustard as a binder on the corned beef, then cover it with the rub mixture.
-Put it onthe grill at 250F until the internal temperature reaches 165F.
-Transfer to a braising tray and add cabbage, carrots, and potatoes. Add in an Irish stout and beef broth. (The liquid should come up to just under half of the meat).
-Cover the tray with foil and return to the grill until reaching 210F internal.
-Remove, rest for at least 60 minutes, then enjoy.
