Recipe:
-Press 80/20 ground beef balls into street taco sized flour tortillas.
-Smash the tortilla, meat side down, onto a 400 degree skillet without oil.
-Cook until the meat is just about done, then flip over, and add a slice of American cheese on top.
-Cook until the other size of the tortilla is golden and crispy and the cheese is melted.
-Top with lettuce, pickles, special sauce, and enjoy.

Special Sauce Ingredients:
1 cup mayo
3 tbsp ketchup
1 tbsp dijon mustard
2 tbsp diced onion
1 tbsp relish
1 tbsp white vinegar

My friends and I wanted to start the beginning of the year with a camping trip. No store bought food, fish straight from the water to the grill.

Sheepshead on the half shell with a fresh herb finish. 

Using Matchlight charcoal from @kingsford 

Recipe below.  

Serves 3

Fish

•6 Sheepshead on the half shell

Base seasoning

You want to see it on the fish.

Brand version

•1 to 1.5 tablespoon Tony Chachere’s Creole seasoning
•1 to 1.5 tablespoon Badia lemon pepper seasoning
•1 to 1.5 tablespoon Everglades 

Prep

•Brush flesh with 1 to 2 tablespoons melted butter or olive oil

• Season generously with base seasoning

• Place fish flesh side up on the grill. Shell stays on

•Add a dash of seasoning as the fish cooks, to add to the depth of flavor

Grill

•Medium high heat

•12 to 18 minutes depending on thickness

•Fish is done when opaque and flakes easily

•Add a small pat of butter to each filet while cooking

•Squeeze ½ lime over the fish near the end

Not so secret herb rub. (Best to make at home 24 hrs before)

Add during last 5 minutes

Ingredients

• 1 cup fresh cilantro
• ½ cup flat leaf parsley
• 2 cloves garlic, minced
• ¼ cup olive oil
• Salt to taste
• Very small piece of habanero or Scotch bonnet
• 1 teaspoon Creole style seasoning
Put in a blender or use an immersion blender to mix. 

Finish

Spoon herb rub over fish in last 5 minutes

Remove from grill and rest briefly

Optional squeeze of lemon before serving

Serve on the half shell. Scoop and eat

My friends and I wanted to start the beginning of the year with a camping trip. No store bought food, fish straight from the water to the grill. Sheepshead on the half shell with a fresh herb finish. Using Matchlight charcoal from @kingsford Recipe below.   Serves 3 Fish 
•6 Sheepshead on the half shell Base seasoning 
You want to see it on the fish. Brand version 
•1 to 1.5 tablespoon Tony Chachere’s Creole seasoning
•1 to 1.5 tablespoon Badia lemon pepper seasoning
•1 to 1.5 tablespoon Everglades Prep 
•Brush flesh with 1 to 2 tablespoons melted butter or olive oil 
• Season generously with base seasoning • Place fish flesh side up on the grill. Shell stays on •Add a dash of seasoning as the fish cooks, to add to the depth of flavor Grill 
•Medium high heat 
•12 to 18 minutes depending on thickness 
•Fish is done when opaque and flakes easily 
•Add a small pat of butter to each filet while cooking 
•Squeeze ½ lime over the fish near the end Not so secret herb rub. (Best to make at home 24 hrs before) Add during last 5 minutes
 Ingredients 
• 1 cup fresh cilantro
• ½ cup flat leaf parsley
• 2 cloves garlic, minced
• ¼ cup olive oil
• Salt to taste
• Very small piece of habanero or Scotch bonnet
• 1 teaspoon Creole style seasoning Put in a blender or use an immersion blender to mix.  Finish 
Spoon herb rub over fish in last 5 minutes Remove from grill and rest briefly
 Optional squeeze of lemon before serving
