ONE BOWL CAKES
Ep. 31 Blueberry Dutch Baby Pancake with Orange Blossom Mascarpone Cream using @fruitistgoberry blueberries 
My love for pancake day runs deep and I am celebrating with these stunning blueberries from @fruitistgoberry . Not only are they extra chunky but, also delicately sweet.  They have just launched exclusively in Whole Foods, so go and grab them to adorn your pancakes for the big day. This Dutch Baby is all you need! 
Serves a greedy 2-3
Ingredients:
For the Dutch baby
3 medium eggs
1 tbsp soft brown sugar
80g spelt flour / 90g plain flour
140g whole milk
1.5 tsp vanilla extract 
Pinch salt
30g unsalted butter

Whipped Mascarpone:
250g mascarpone 
1 tsp orange blossom water
1 medium egg yolk
1 tbsp soft brown sugar

X1 punnet @fruitistgoberry blueberries plus extra for serving
Dusting icing sugar
Maple syrup for a drizzle 

Preheat the oven to 220°C fan.  Place an ovenproof 10inch frying pan into the oven to heat up. 
Next, beat eggs + sugar in a bowl until combined. 1-2mins. Then add flour + beat everything together until smooth. Now, beat in milk, vanilla + salt.  Carefully add the butter to the hot pan + swirl it around to melt. Return back to the oven for 1min.  Then, pour pancake batter into frying pan + return to the middle of oven for 15mins. 
While the Dutch baby cooks. You can make the cream. Add yolk + sugar to a medium bowl + beat together until smooth + slightly pale in colour.  Beat in mascarpone + orange blossom water until combined- about 1min. 
After baking, the pancake should have puffed up + gone golden.  Very carefully, remove pan from the oven + tumble over blueberries + serve with mascarpone, a dusting of icing sugar, maple syrup.

Lemon Blueberry Ricotta Pancakes 🫐🍋🥞

Ingredients: 
250 g all-purpose flour
1/2 tsp baking soda
1 tbsp baking powder
2 tbsp caster sugar
1/8 tsp salt
1 tsp vanilla extract
235 ml milk
2 eggs
125 g ricotta cheese
Zest of 1 lemon
2 tbsp lemon juice
200g Fruitist GoBerry blueberries + more for serving
Sweetened whipped mascarpone cream, 
Icing sugar & maple syrup for serving

Instructions: 
1. In a large bowl, whisk together the flour, baking soda, baking powder, sugar and salt. Set aside.
2. In a separate bowl, whisk together the ricotta, lemon zest, eggs, vanilla extract, lemon juice and milk. 
3. Add the wet ingredients to the flour mixture and gently whisk until well incorporated. Fold in the blueberries.
4. Pour a few tablespoons of batter onto a medium-hot pan and cook for about 3 minutes, until the edges begin to firm. Flip and cook for another 1–2 minutes. Repeat with remaining batter.
5. Stack pancakes with alternating layers of sweet mascarpone cream and fresh whole blueberries.
6. Dust with icing sugar and finish with a generous drizzle of maple syrup.
