Canadian Thanksgiving is right around the corner and if you’re anything like me, you get tired of turkey pretty quickly! If that sounds familiar, try making this rosemary and sage pork roast with gravy instead @wholefoodscanada 🦃

to make it you’ll need: 
1 pork shoulder or butt roast, about 5 lbs
2 tbsp dijon mustard
2 tbsp kosher salt
3 tbsp finely chopped rosemary and sage leaves
2 tbsp all purpose flour
1 cup broth or water
1 tsp worcestershire sauce
 
1. The night before you plan to serve dinner, mix together 2 tbsp kosher salt and 3 tbsp finely chopped rosemary and sage leaves in a small bowl. Set aside. Next, use a pastry brush to cover the entire roast in 2 tbsp dijon mustard. Sprinkle the herb salt all over the roast. Cover and place in the fridge overnight. 
2. The next morning, preheat the oven to 425°F. Remove the roast from the fridge and let it come to room temperature. Cook the roast at 425°F for 30 minutes, or until it starts to brown. Reduce oven temperature to 250°F and continue cooking for 8-10 hours, or until it reaches an internal temperature of 195°F to 205°F. For a more carveable roast, aim for an internal temperature of 165°F to 185°F. 
4. Remove from oven and let rest on a cutting board. While it rests, make the gravy. Pour the roast juices from the baking dish through a fine mesh sieve into a small sauce pot. You’ll notice a layer of fat floating on top of the dark brown drippings, skim the fat until there is only 2-3 tbsp remaining. Heat the drippings on low and gradually whisk in 2 tbsp flour — mixing gradually will help avoid clumps. Once the drippings have thickened into a paste-like consistency, continue whisking while pouring in 1 cup stock or water, adding more as needed until you reach your ideal consistency. Stir in 1 tsp worcestershire sauce, taste and adjust seasoning.

my three favourite things in the whole world are parmesan, roast chicken and garlic, so to have all three in one recipe makes me very happy. you know what else makes me happy? knowing that I can get all my shopping done under one roof @wholefoodscanada — it’s a one-stop-shop that’s perfect for dinner parties. 
 
here’s everything you need to make my garlic-parm roast chicken at home: 
1 organic whole chicken (about 4lbs), spatchcocked
1 head garlic, roasted (I like to use an airfryer for this! just cut the top off, drizzle it with olive oil and wrap it in foil. air-fry for 20 minutes, or until golden brown and completely soft) 
1 stick softened butter 
1 tbsp diced chives
1/4 cup finely diced parsley
1 lemon
10-15 sprigs of thyme
1/4 cup grated parmesan
olive oil 
kosher salt

and the instructions: 
1. preheat oven to 425°F. 

2. in a medium bowl mix 1 stick softened butter, 1 head roasted garlic, 1 tbsp sliced chives, 1/4 cup finely diced parsley and a generous pinch of salt. mix until well incorporated. transfer half to a small bowl and the other half to a small saucepan. set aside. 

3.  thinly slice one lemon into several rounds. fan the slices out on the bottom of a 10” cast iron pan. top with 10-15 sprigs of thyme and place your seasoned chicken on top, skin-side up. pat dry with paper towel. 

4. use your fingers to separate the skin from the meat on the breasts and thighs, then spoon the roast garlic butter under the skin and massage it evenly into a thin layer. drizzle 2-3 tbsp of olive oil onto the skin and massage all over. 

5. transfer to the hot oven and position the top of the breasts towards the back corner. bake for 45-50 minutes, or until the skin is golden brown and the juices run clear. an instant-read thermometer inserted into the thickest part of the breast should read 165°F. remove and let sit for 5-10 minutes. 

6. while the chicken rests, heat the remaining garlic butter on low until melted. brush it onto the skin and cover with 1/4 cup grated parmesan. serve warm with the juices from the pan!

Grilled Balsamic Lamb Chops 

Serves 4

Ingredients: 
8 bone-in lamb loin chops (about 800g)
⅓ cup balsamic vinegar
1 tsp dry oregano
1 tsp dry thyme
2 tsp salt
⅓ cup pomegranate seeds (for garnish)
3 tbsp sliced fresh mint (for garnish)

Instructions: 
🌸Add 8 bone-in lamb loin chops to a medium bowl, or large sealable plastic bag. Cover in ⅓ cup balsamic vinegar, 1 tsp dry oregano, 1 tsp dry thyme and 2 tsp salt. Toss to mix, cover and let marinate at room temperature for 30 minutes, or in the fridge overnight. 
🌸Coat the grill in oil using a rag and tongs. Preheat to 500°F.
🌸When the grill is hot, add your marinated lamb loin chops, leaving about an inch of space between each one. Using a rubber brush, coat the tops of each chop in leftover marinade. Close the lid and let cook at 450°F-500°F for 3-5 minutes.  🌸Flip and repeat. When the internal temperature reaches 135°F (medium-rare) to 145°F (medium-well) remove and let rest for 5 minutes. 
🌸Transfer to a serving dish and top with ⅓ cup pomegranate seeds and 3 tbsp sliced fresh mint. Enjoy!

Note: If marinating for longer than 30 minutes, place in the fridge. Remove the chops 30 minutes before you’re ready to grill so they can lose a bit of their chill.

Looking to switch up your morning routine? Try this Yogurt Breakfast Bark with big, bright flavours 🍓
Recipe below ⬇️

Ingredients:
1 cup Yoggu! Original Coconut Yogurt
3 tbsp Salt Spring Kitchen Cranberry, Sour Cherry, & Port Preserve Spread
4 strawberries sliced  
3 tbsp Chiwis Kiwi Chips
1 tbsp hemp seeds

Directions:
Spread yogurt onto a lined baking sheet.  
Add Salt Spring Kitchen spread on top, and use a spoon to spread it with the yogurt.  
Add the rest of the toppings on top.  
Freeze for at least 30 minutes or until bark is completely frozen.
