One of Mexico City's most beloved restaurants, Contramar (@contramarmx), from chef Gabriela Cámara (@gabrielacamara), recently opened its second-ever outpost — called Cantina Contramar (@cantinacontramarlv) — inside the Fontainebleau Las Vegas. Eater correspondent Matthew Kang (@mattatouille) checks out the highly anticipated opening on the restaurant's first night of service, tasting through iconic seafood dishes like the tuna tostada and the brightly-colored two-sauce pescado a la talla. How will the seafood fare in the middle of the desert?

Welcome to High Steaks, Eater's week-long deep dive into steakhouse culture.

In 2026, major chefs are opening flashy steakhouses all over the country and putting their own spins on the classic genre. Many diners, with plenty of news to be anxious about, are flocking to the old-school comforts and familiar settings of steakhouses, too.

Correspondent Matthew Kang (@mattatouille) puts on his blazer and dives into the trend at the brand-new Sartiano's (@sartianosatwynn), the Wynn Las Vegas’ ritzy new steakhouse by way of NYC.

Get your knife ready, because it's time to hit the steakhouse. 🥩

Over the past year, major cities across the country have been experiencing a steakhouse resurgence — but these aren’t your grandfather’s classic midcentury steakhouses. Chefs are presenting sizzling meats with unique spins, showing off their personalities in sides and throwing in fun elements like Skee-Ball or high-fi speakers. There is one thing they all have in common: Diners can’t seem to get enough of them.

On the morning of Wednesday, February 25, the James Beard Foundation Awards named Las Vegas’s classic steakhouse, Bob Taylor’s Ranch House (@bob_taylors_ranch_house), as one of the recipients for its 2026 America’s Classics awards.

The award recognizes “locally owned restaurants with timeless appeal that serve quality food and are beloved by their communities,” according to the foundation. Bob Taylor’s Ranch House, which opened in 1955, joins Las Vegas’s only other America’s Classics winner, Peppermill Restaurant and Fireside Lounge, which was recognized in 2024.

Some restaurants go for a quieter opening, but chef Gabriela Cámara took the opposite approach with her highly anticipated Las Vegas restaurant, Cantina Contramar (@cantinacontramarlv), which debuted at the Fontainebleau on March 28 and had more than 300 seated diners on its first night.

The original Contramar opened in 1998 as an ode to Mexico’s beachside palapas, serving its now-iconic tuna tostadas topped with frizzy fried leeks and adobo- and pesto-painted butterflied pescado a la talla. It has become, in some ways, a marker of Mexico City’s rise in global culinary prominence, a siren song meal that blends swift, big-city service with the intricacy of a fine-dining restaurant.

Las Vegas is one of the greatest culinary cities in the country right now — with more talent than ever flooding just a few square miles with award-winning chefs, big ideas, and food that is as memorable as the restaurants themselves. As such, the latest update of this 38 list focuses its attention to the Las Vegas Strip and the can’t-miss restaurants found there. Some destinations veer just off the Strip — a ride of no more than two(ish) miles from Las Vegas Boulevard — half the distance of the Strip’s length.
