The objective to this recipe was the following:
TARGET TEXTURE — silky, lip-coating broth
* Bone-in shank, cross-cut into 5–6cm rounds The bone exposure maximises collagen and marrow release — both essential for gelatin body in the broth.
* Separate marrow bones Marrow stirred in at the end emulsifies the broth. This is what gives nihari its lacquered, glossy appearance rather than a greasy surface.
* 5–6 hours at 82–88°C — not a rolling boil Collagen converts to gelatin slowly. High heat toughens the meat and breaks the emulsion into a greasy, cloudy broth.

TARGET FLAVOUR — deep, unified, no sharp edges
* Whole spices, toasted and freshly ground Toasting creates new flavour compounds that don’t exist in raw spices. Pre-ground has already lost most of its volatile aromatics.
* Spices bloomed in ghee, not added to water Aromatic compounds in spices are fat-soluble. Ghee is the solvent — without it you extract a fraction of the flavour potential.
* Onions cooked to copper, not gold The Maillard reaction needs to fully complete. Gold onions mean it barely started — the gravy will taste thin regardless of how many spices you add.
* Overnight rest in the fridge Spice compounds continue migrating and equilibrating for hours. Sharp individual notes round out. Day-two nihari is a noticeably different dish.

TARGET CONSISTENCY — gravy that coats and clings
* Atta flour slurry, not cornflour Atta gives a softer, more integrated thickness
* Slurry simmered 20 minutes after adding Raw starch has a chalky, floury taste that only disappears once fully cooked out
* Season only at the end The liquid reduces significantly across 6 hours, concentrating salt

TARGET CONTRAST — garnishes are not decoration
* Fresh ginger, coriander, green chilli, and lemon ready to serve Nihari is intensely rich — it needs contrast to stay enjoyable

Menu Inspired by the Book of Luke - A journey of vision, rest and resurrection.
.
Drinks: Spiced Carrot Juice 🥕 Luke 2:25 to 30
We begin in the temple with Simeon, a devout man promised he would see the Messiah before he died. When he held baby Jesus, he declared, “My eyes have seen your salvation.”
I made a spiced carrot juice to honour this moment because carrots are known for sharpening our sight. For me it represents not just clarity of vision, but the moment we truly recognise Christ.
.
Course 1: Corn Ribs with Chipotle Sour Cream 🌽 Luke 6:1 to 5
As the disciples picked grain on the Sabbath, the Pharisees criticised them. Jesus reminded them of David and declared, “The Son of Man is Lord of the Sabbath.”
I made this dish because the kernels of corn remind me of the grain the disciples picked, and of Jesus’s authority to allow it. Nourishment not just for the body, but for the soul.
.
Course 2: Vietnamese Banh Mi 🥖 Luke 4:1 to 4
After 40 days of fasting in the wilderness, Jesus was tempted to turn stones into bread. He responded, “Man shall not live on bread alone.”
I filled my banh mi with char siu, pickled carrots, mooli and Vietnamese sausage. It’s bread with so much more, just like life is so much more than food.
.
Mains: Fried Noodle Net with Chinese Stir Fried Monkfish 🐟 Luke 5:1 to 8
By the Lake of Gennesaret, after a long night of catching nothing, Jesus told Simon to cast the nets again. This time the catch was overwhelming. Simon fell at His feet, and Jesus called him to be a fisher of men.
I created a fried noodle net to represent the disciples’ nets, and the monkfish is their divine catch. Abundance, obedience, and a calling to a new purpose.
.
Dessert: White Chocolate Soufflé with Pistachio Ice Cream and Chocolate Crumble 🍨 Luke 24
The resurrection. The tomb once sealed, now open. The stone rolled away. “He is not here. He is risen!”
I made a soufflé because it almost doubles in size as it rises, just like Christ rose.
.
Jesus loves you, and so do I ❤️

Finding my favourite food in the Bible EP3: Genesis 18 - Abrahams Calf, Curds, Cakes and milk
.
INGREDIENTS
* 0.5kg beef sirloin, rump or short rib
* 250g plain flour
* 700g yogurt
* 500ml milk for serving
* 4 tbsp olive oil
* 150ml water
* 1½ tsp salt
* 1 tsp coarse salt
METHOD
1. Night before: stir ½ tsp salt through the yoghurt, tie it in muslin and hang it over a bowl in the fridge in a sieve. You want it thick enough to stand a spoon in
2. Mix the flour, 1 tsp salt and most of the water into a firm dough. Knead until smooth, rest 20 min under a damp cloth
3. Cut the beef into 4cm pieces and season with salt
4. Get a baking stone or dry cast-iron pan as hot as it will go. Divide the dough into 8, roll each to 5mm, lay them straight on. 2–3 min a side until they blister
5. Heat pan till smoking and Sear in batches so nothing steams 6–8 min total, charred outside, pink in the middle.
6. Rest the beef 10 min
7. Curds in a bowl with a pool of olive oil on top on a dip plate, serve with beef, cakes and Milk. Tear a cake, scoop the curds, use it to pick up the meat!
WHY I MADE IT LIKE THIS
* The beef is cut small because everyone in the story was rushing, I thought the meat was cut small and cooked quickly on the hot stone to account for this.
* No seasoning on the meat beyond oil and salt, because the text doesn’t name any!
* Fine flour, not barley. Sarah uses the good stuff offering grade wheat, not the cheap grain everyone actually lived on
* No yeast in the cakes. These are ugot, hearth cakes, cooked straight on hot stone.
* The curds are chemah, the King James calls it butter but it’s soured strained milk, basically labneh!!

Menu Inspired by the Birth of Jesus – A feast inspired by the greatest birth in history ✝️
.
We’re exploring the greatest arrival in history through food, a remembrance of the birth of our King. Each dish celebrates a moment from Jesus’ birth, from prophecy to praise - LESSGOOO
.
Drink – Exodus 3:8 – Spiced Goat’s Milk with Honey 🐐🍯
“A land flowing with milk and honey.”
You see in Bethlehem the promise is reversed. God brings the land to the people, so I made a spiced goat’s milk with honey to reflect the sweetness and nearness of Emmanuel, God with us.
.
Course 1 – Luke 2:6–7 – Pasta Aglio e Olio 🍝🕊️
The Son of God was born in a manger, not in any fancy swanky condo, no place or no throne, just simple and quiet manger. So I made this humble pasta to reflect how simplicity doesn’t hide Jesus, it reveals Him.
.
Course 2 – Luke 2:8–14 – Curried Mutton Baos 🐑🥟
Shepherds, ordinary and often overlooked men are the first to hear the songs of heaven. They quickly leave their sheep behind to rush to find the saviour. I so made curried mutton Baos to honour the sheep they left behind and appreciate their urgency for our King.
.
Mains – Luke 2:22–38 – Pizza 🍕🌍
Simeon sees Jesus and is amazing and swiftly declares Jesus “A light for revelation to the the gentiles”. Jesus came to unite, not divide. So I made pizza to reflect that Jesus is shared through many slices just like pizza
.
Dessert – Matthew 2:1–12 – Spiced Poached Pear w/ Vanilla Ice Cream & Honey Tuille 🍐👑
Wisemen followed a star that led to the Son of man. They bough gold, frankincense, and myrrh. Gifts often representing royalty, dimity and sacrifice. So I made Spiced poached pear with vanilla ice cream and Honey tuille to represent the three gifts of the wise men. Jesus is always worth our best gifts.
.
I hope you enjoy these stories and that the significant of our one and only King and His birthday <3
And remember … Jesus loves you—and so do I.

Finding My favourite meal in the Bible EP2: Genesis 27 - Rebekah’s Savoury Goat
.
Ingredients
* 2kg goat shoulder, bone in, whole
* 3.5 tsp salt
* 4 tbsp olive oil
* 1 tbsp
* 2 tsp cumin
* 2 tsp Coriander
* 1 Large Onion Quartered
* 1 garlic head Cut in half
* 2 celery stalks
*2 carrots
* 5 thyme sprigs
* 300ml red wine
* 300 ml lamb stock
* 1.5 tbsp red wine vinegar
* 8 flatbreads, to serve
Method:
1. Dry brown your goat for 30 minutes with salt and set aside - you should see all the moisture come out
2. preheat your oven to 240°C
3. Pat your goat dry with paper towels and Rub with olive oil and spices
4. then in a Dutch pot, add your carrots, celery, and onion along with thyme and garlic at the bottom. This will help with the circulation of heat
5. place your lamb on top and roast for 30 minutes
6. then remove from the oven and pour in red wine and lamb stock
7. bring the oven temperature down to 150°C and bake for 3 hours
8. then bake again at 220°C to develop a crust that’s like in the story - we are trying to make it taste like venison
9. then set the lamb aside on a chopping board and cover with foil
10. strain the juices from the pot in a another pot
11. then reduce until you have the desired sauce consistency. Finish with red wine vinegar
12. finally served with the flatbreads, lamb on top with a side of sauce , and enjoy.

Ingredients * 2kg goat shoulder, bone in, whole * 3.5 tsp salt * 4 tbsp olive oil * 1 tbsp * 2 tsp cumin * 2 tsp Coriander * 1 Large Onion Quartered * 1 garlic head Cut in half * 2 celery stalks *2 carrots * 5 thyme sprigs * 300ml red wine * 300 ml lamb stock * 1.5 tbsp red wine vinegar * 8 flatbreads, to serve Method: 1. Dry brown your goat for 30 minutes with salt and set aside - you should see all the moisture come out 2. preheat your oven to 240°C 3. Pat your goat dry with paper towels and Rub with olive oil and spices 4. then in a Dutch pot, add your carrots, celery, and onion along with thyme and garlic at the bottom. This will help with the circulation of heat 5. place your lamb on top and roast for 30 minutes 6. then remove from the oven and pour in red wine and lamb stock 7. bring the oven temperature down to 150°C and bake for 3 hours 8. then bake again at 220°C to develop a crust that’s like in the story - we are trying to make it taste like venison 9. then set the lamb aside on a chopping board and cover with foil 10. strain the juices from the pot in a another pot 11. then reduce until you have the desired sauce consistency. Finish with red wine vinegar 12. finally served with the flatbreads, lamb on top with a side of sauce , and enjoy. . #bible #jesus #Genesis #rebekahsgoat

Romans 12:2 - Lemon Meringue rice pudding
.
Lemon meringue rice pudding became my way of showing what Christ has done in me — taking what was once bitter and sour, and turning it into something sweet and comforting. On its own, lemon is sharp and hard to handle, just like my old self, but when blended with care, sugar, rice, and time it becomes something beautiful. That’s the power of God’s transformation: He doesn’t discard our sourness, He transforms it into something others can taste and see is good.

Philippians 4:6-7 - Vietnamese Caramel Flan
.
Caramel flan. Beautiful when it works. Frustrating when it doesn’t. And believe me, I’ve been there. I followed every step, did everything “right,” and it still came out cracked, collapsed, or just completely off. I’d question what went wrong and wonder if it was even worth trying again.

But then there’s that one flan. The one that comes out smooth, golden, and perfect. And in that moment, you realise—it was worth the wait.

That’s exactly what Philippians 4:6–7 reminds me of: “Do not be anxious about anything, but in every situation, by prayer and petition, with thanksgiving, present your requests to God. And the peace of God, which transcends all understanding, will guard your hearts and your minds in Christ Jesus.”

Some seasons feel like cracked flan. You’re doing your best, praying, trying, waiting—but things still don’t look like what you hoped for. You feel anxious. Doubt creeps in. “Why isn’t it working?” “Why hasn’t God come through yet?”

But Paul doesn’t say, “Don’t feel.” He says, “Don’t be anxious—pray.” Bring it to God. Trust Him. Be thankful, even before the outcome. The promise isn’t a perfect life or instant results. It’s peace. Peace that protects your heart, even while you wait. Peace that doesn’t always make sense, but keeps you grounded when everything else feels shaky.

That’s what this flan taught me. The breakthrough—the moment it all comes together—often arrives after failure, after surrender, after trusting God with what you can’t control. And when it happens, you realise He was working in the background the entire time.

So maybe your life doesn’t look perfect right now. Maybe the plans are unclear, the prayers feel unanswered, or the process feels long. But don’t give up. Don’t throw it all away just because it’s not finished yet. Be patient with the process. Be faithful in the waiting. Because when God is done, what comes out of the fire will be steady, sweet, and set.

Just like that one caramel flan.

Jesus loves you. And so do I.

1 Corinthians 13:4–8 – Carrot Cake
.
A carrot cake made slowly, patiently, imperfectly reminds me that love isn’t just a feeling, it’s a choice. I’m terrible at baking, but love taught me to learn, to wait, and to try anyway. Love is patient, love is kind, and sometimes love looks like effort given freely, not perfection achieved.

Jamaican Curry Goat made according to science 👨‍🔬

.
The objectives and how I achieved them:
The meat - Should be fork tender and never dry
* Achieved through cooking it at slow temperatures to slowly turn the collagen into gelatin and not damage the meat
Flavour to be deep and complexed with the curry powder
* Achieved by using the signature Jamaican move: burning the curry powder
A glossy lip coating gravy with a thick body
* Achieved Selecting goat pieces with bone because the collagen from the bone dissolves into the braising liquid as gelatin, which gives it the gravy its silky mouth feel
 potatoes that are tender but still hold their shape
* Achieved Cooking only 30 minutes before the final dish has been completed
