🎉 Our Ormskirk shop is officially OPEN 🎉

Thank you so much to everyone who popped in last week during our soft launch, we hope you love our little space on Church Street ☺️

Dissociation from food is slowly killing us.

Not just physically… but mentally.

If you eat meat but you can’t tolerate the sight of a carcass, you’re not alone. 

Most people feel that way. 

But that reaction highlights something deeper:

Animal quality of life becomes an afterthought.
Meat quality and sourcing becomes meaningless.
And food becomes something abstract… 

No connection to the animal.
No connection to the farmer.
No connection to the butcher.

When food becomes abstract… quality stops mattering. And if quality stops mattering, so does our health.

People end up eating low quality food while telling themselves it’s normal. 

When you face the reality and connect with food, something changes…

You respect the animal more.
You respect the butcher more.
And you demand better standards.

Dissociation breeds carelessness.

Crispy slow cooked pork belly. Couldn’t be simpler this one. 🐖 

@butcherfarrell beautiful 2.5kg free range boneless pork belly (this is just under 1kg of it)

No BBQ today, weather wasn’t playing ball. 

- Prick the skin of your belly and liberally cover in salt, leave in the fridge overnight to draw out the moisture 
- Oven pre heated to 90c
- Knock off excess salt and apply the seasoning of choice (Chinese salt and pepper for me)
- In the oven for an ungodly number of hours. I opted for 7 with no logic behind it, but waited until internal temp was above 60c
- Crank the heat to 220c
- Apply white vinegar to the skin and make a foil boat to cover all the flesh leaving the skin exposed
- Back in the oven to blister the life out of the skin. 
- When it smokes, it’s done.

When you’re cooking that slowly for that long, the layers on layers of fat, meat, fat, meat, all sort of render into one. Tender, wet, juicy, burnt edges, crispy, quality.

These are proper game hung birds that have been slow reared to reach their full size and allows the flavour to really develop to the max. It cooked perfectly using the @meatermade duo - what a piece of kit that is! Served with all the trimmings and lashings of turkey gravy from the juices. 

I’ve never been a huge Christmas fan but I’m actually feeling rather festive this year!🎄

@meld_kitchen started out as ‘Phil on the Grill’, stood on the high street flipping burgers whilst his gazebo tried to make a break for freedom every time the wind picked up. One minute he was chasing it down the road, next minute he was doing pop up events and chasing the dream.

Fast forward a few years and now the daft bugger’s got three kitchens inside breweries. Part owned with his close friend Grogan. Actual bricks and mortar stuff. Cooking simple, delicious food with proper ingredients often dry-aged, grass-fed, high-welfare stuff from @butcherfarrell who know their onions.

Newest spot is in Wigan at @the_brewery_project, a renovation that took day and night to get right. Now it boasts a stunning tiled bar, seated tables, a Budvar tap that beer connoisseurs flock to admire and Meld Kitchen that is slowly getting locals off pies and on to some proper scran. 

Steaks that are cooked with love. Seasonal produce wherever possible. Double dipped fries which is as the beige God’s intended. Weekly specials. Dry-aged cheeseburgers, thick or smashed, often the dealer’s choice. Chicken burgers so crispy you can hear folk bite into them from three tables away. 

His staff continue to graft and fair play, they respect em’. That’s how you know it’s real. It’s always a team effort. It’s a simple pairing concept of really good food and beverages to sup’ from at the bar.

So this one’s for the people who sacked off the “safe job” and backed themselves. Continuing to risk it all for what they love in an ever difficult industry and financial climate. Go support em’ if you can.

The steak was cooked on the @kamagearhq V2 and also using their charcoal, which is a mix of oak, birch, and hornbeam and burns really well and gets to temperature quick.

• Iberico Pork Rack with Sweet Potato • 

Iberico pork chops are one of our favourite things to eat, and we have never cooked a full rack, so we got this one from @butcherfarrell 

Now we have the Somerset, it gives us a chance to do some real asado live fire cooking. Seasoned the fat with Al Frugoni salt and then seasoned the meat with Chuds BBBQ Pork Rub. 

Using a mix of oak and Namibian firewood to create the bed of embers. We cooked it fat side down for a good 45 mins to create a nice crust on the fat and then used the fat that went into the drip tray to baste the meat. 

The sweet potato was seasoned with That Rub Guy  Viva La Fajita Rub and let the fat drip through the grates into the potatoes.

I’m sat in the airport having a cheeky beverage waiting to fly out to start my new chapter! I am so very proud to announce that I will be joining @wynnalmarjanisland to head up all things meaty at the first ever casino in the Middle East. This is such a huge step for my career and I am so bloody excited. I started my butchering journey whilst living in Shanghai/Hong Kong.
