Pernil (Picnic Shoulder) Recipe 🇵🇷

Sofrito:
* 1/2c Garlic Cloves
* 5 Aji Dulce or 1 Cubanelle 
* 1/2 Small Yellow Onion 
* 3 Culantro or Handful Cilantro
* 1/2c White Vinegar
Marinate:

Mollejas En Escabeche Recipe 🇵🇷

* 1 1/2lbs chicken gizzards
* 6-8 green unripe bananas
* Bay leaves 
* 1 tbsp milk
* 1 large or 2 small yellow onion sliced
* 4 garlic cloves minced
* Whole pimento pepper diced
* 1 tsp whole peppercorn
* 1 tsp oregano leaves
* 1/2c oil
* 1/2c white vinegar
* Adobo to taste 

1. Rinse the gizzard with vinegar, salt, and cold water 
2. Bring the gizzard to boil, about 12c of water, add few bay leaves and adobo to taste. 
3. Once brought to a boil, cover to soft boil, to medium low heat. Until tender for about an hour and a half. 
4. Once you have half an hour to go, you can start boiling the green bananas, add milk to prevent from coloring and adobo to taste. Boil for 20-25 minutes until tender, then remove peel, and thinly sliced bananas.
5. Prep your ingredients above, onions, garlic, pimento, and spices. 
6. Once gizzard and green bananas done, go proceed finish the dish. On medium heat add oil, onions, and garlic cook until fragrant, add spices and vinegar, cook for few minutes, add bananas and gizzard, add 2 bay leaves and adobo to your taste. 
7. Mix well and cook additional 5-10 minutes and it's ready to serve.

* 1 capsule apple vinegar

Spanish Infused Oxtail Recipe 

* 3lbs Oxtail
* 2Tbs Soy Sauce
* 2Tbs Achiote Oil Recipe Pinned (Substitute 2Tbs Oil with packet Sazon)
* 4-6 Garlic Cloves Minced
* Half Red Onion Diced
* Handful Minced Cilantro 
* 3 Aji Dulce (Substitute Cubanelle)
* 1Tbs Dominican Oregano (Substitute regular powder)
* 2 Cubes Chicken Bouillon 
* 1Tbs Garlic Powder
* 2Tsp Onion Powder
* 1Tsp Black Pepper
* 1Tsp Himalayan Salt or Sea Salt
* 3Tbs Achiote Oil or Regular to burn sugar 
* 2Tbs Sugar
* 2Tbs Tomato Paste
* 1/4c Merlot Wine (Optional deepen Flavors) 
* 6c Water 

Direction Step by Step

1. Add the spices and herbs to marinate your oxtails, give a nice mix, and let it sit 30minutes to 1hr.
2. Add any oil of your choice on high heat, along with the sugar, till sugar is burn. 
3. Add oxtail, and caramelize both sides.
4. Add wine, let it cook for a minute, to kill the alcohol, add tomato paste to the water, then add water to your oxtail on high heat.
5. Once you bring your water to boil, bring your temperature to soft boil, on low heat,  for the first 1hr uncover, and mix. You want to do this every 30 minutes, then cover until meat is tender, between 2 1/2-3hrs cook time. If you need water, keep adjusting every 1/2c of water, if needed! 
6. Then serve with any of your favorite side dish 💟

* Salt to taste towards the end
* Queso de papa or mild cheddar cheese (optional) to your liking 

1. Follow the recipe as you see in the video.

We’re celebrating 2 Birthdays, my baby girl turns 17 on 7/24 and my husband is turning 38 on 7/26. I’m so blessed to celebrate another year with my two loved ones! I love how my husband shares almost the same birthday as my daughter. As a stepfather who stepped up since she was 4, this is our 13th birthday we celebrated together! It’s already hard knowing you’ll be on your own one day, and I don’t think I’ll ever be ready, but I’m just so proud of you! It hasn’t been easy, being a teen is hard, but I think we got through the toughest obstacles, so proud of ourselves! 17 years ago you made me a mom! Wouldn’t trade it for the world!!
