Ingredients: 12 soft corn tortillas Filling: -2 cups cooked shredded chicken -½ cup mild green chiles, chopped -½ cup lactose-free plain yogurt -1 teaspoon garlic-infused olive oil -½ teaspoon mild cumin (optional) -Kosher salt and freshly ground black pepper, to taste Sauce: -1 cup low-sodium chicken broth -½ cup mild green chiles, chopped -1 teaspoon garlic-infused olive oil -Salt and pepper, to taste -2 teaspoons cornstarch To serve: -½ cup lactose-free shredded cheese (cheddar or mozzarella) -Fresh chopped cilantro Directions: 1️⃣ Preheat the oven to 375°F and lightly grease a 12-cup muffin tin. 2️⃣ If needed, warm the tortillas for 10 to 15 seconds in the microwave to make them more pliable. Ingredients: -1 package Hawaiian rolls -garlic butter (5 tbsp. butter, 2 cloves minced garlic, 1/2 tsp. salt, 1 tsp. dried parsley) -chopped romaine lettuce -Caesar dressing (recipe below) -shredded Parmesan -croutons -crispy chicken breasts (recipe below) Chicken: -1 package thinly sliced chicken breasts -1 cup flour -2 eggs, beaten -1 cup Italian breadcrumbs -1/4 cup grated parmesan -vegetable oil, for frying 1. Combine breadcrumbs with parmesan. Dredge chicken breasts in flour, beaten egg and breadcrumb mixture, then set aside. 2. Heat oil in a large frying pan and cook chicken breasts until golden, crispy and cooked through. 3.
