Homemade Beef Sticks 👇 Recipe: Servings: 6 people Prep: 1 hour Cook: 5 hours Ingredients: Beef 5 lbs 90/10 ground beef 10 oz cheddar cheese, small cubes 3-4 fresh jalapeños, finely diced ⅓ cup Cowboy Butter Rub Binder & Cure 1 tsp Prague Powder #1 1/2 cup ice water Instructions Combine ground beef, seasoning, cure, and binder. Add ice water slowly while mixing. Mix aggressively until the meat becomes tacky/sticky. Fold in the cheese & jalapeños at the end until well incorporated. Load the meat into a jerky gun. Grease some wire cooking racks and press out long ropes of the beef sticks with spacing between. Make sure to go slow and steady to not create breakage. Add to your smoker at 130F for one hour to dry the outside and create a pellicle. Bump up the heat 10F every hour until the smoker gets to 170F. Let cook until the beef sticks are at least 150F internal. Cooking should take about 5-6 hours total. (Optional) In the last hour, brush with beef tallow to get some extra flavor and shine if you like. Once done, pull off and place in the fridge to cool for at least 2 hours. Serve and enjoy!

Cowboy Butter Steak Pinwheels (Recipe Below) Servings: 4 People Prep: 30 minutes Cook: 20 minutes Steak: 2 Whole Skirt Steaks 3 cups Shredded Mozzarella Cheese 2 cups Chopped Parsley 20-30 Salami Slices 3 tbsp my Cowboy Butter Rub Oil, as needed Cowboy Butter: 2 sticks Unsalted Butter, melted 2 tbsp Minced Garlic 2 tbsp Dijon Mustard 1.5 tbsp Chopped Parsley 2 tsp Red Chili Flakes 1 tsp Cayenne Powder Instructions: Lay your steak out on a cutting board and cover it with parchment paper or plastic wrap. Using a heavy mallet or food mallet, hammer the skirt steak until it is less than ½” thick. Next, add a layer of shredded cheese followed by salami and chopped parsley. Carefully roll the skirt steak up lengthwise to create the pinwheel. Secure the roll with two strings of butcher twine and slice between them to make two separate pinwheels. Slather with beef tallow on the outside and generously season with salt, pepper and garlic powder. Repeat this with the rest of the skirt steak for all of the pinwheels. Preheat your grill for a two zone high heat temperature (around 400F). Add your pinwheels to the hot side of the grill to sear each side for 1 minute per side or until they have developed a nice crust. Once they have a nice crust on the outside, pull the pinwheels over to the cool side of the grill to cook until they reach 125F internal (about 10-15 minutes more). When the steaks are done, pull them off and let rest for 10 minutes. In a bowl, mix together all the ingredients for the Cowboy Butter. Set to the side. Top each of your steaks with some of the Cowboy Butter, slice, serve and enjoy!

Hot Honey Steak and Shrimp Recipe 👇 Recipe: Servings: 4-6 People Prep: 15 minutes Cook: 1 hour Cure: 1 day Steak and Shrimp: 3-4 Filet Mignons 1.5 lbs Shrimp, peeled & de-veined 2 tbsp Kosher Salt 2 tbsp Favorite Steak Rub 2 tbsp Favorite Seafood Rub Cure: 1 Gallon Honey ½ cup Red Chili Flakes Instructions: Cure: Season your steaks generously with kosher salt. Gently heat up your honey until it is very viscous. Add your steak to a food safe container. Cover in the honey, cover the container and place in the fridge for 24 hours to cure. If the honey does not cover the steak completely, flip the steak every 2 days. About 1 hour before cooking, repeat heating up the honey. Add your shrimp to the honey and let sit in it until ready to cook. Steak: Pull the shrimp and steak out and wipe off any excess honey. Generously season with your favorite steak rub and your favorite seafood rub. Set to the side. Preheat your smoker to 250F for indirect cooking. Add your steak to cook for about 30 minutes until 120F internal. Pull off once done to rest for 10 minutes. Heat up a high heat fire (around 400F) and place the steak over the fire for 1 minute per side to get a good crust. Heat up a cast iron skillet with some oil. Add the shrimp to the skillet to cook for 1-2 minutes until done. Pull everything off, serve with some butter, slice up the steak and enjoy!
