easy dinner with minimal work 🤤 hoisin chili beef bao buns:  sauce:
1/2 cup hoisin
1/2 cup sweet chili sauce
1 tbsp rice vinegar
1 tbsp brown sugar
1 tbsp fish sauce roast:
3 lb chuck roast (find one with good marbling)
salt and pepper for serving:
steamed bao buns
kimchi
green onions, sliced
sesame seeds instructions:
preheat oven to 325°f.
season both sides of the chuck roast generously with salt and pepper.
place the roast in a dutch oven, covered and cook for about 3 hours, until tender and easily shredded. your cooking time depends on how big your roast is! one hour = one lb. 
while roast is cooking, whisk together the hoisin, sweet chili sauce, rice vinegar, brown sugar, and fish sauce to make the sauce.
remove roast from the oven and shred the meat with two forks.
pour half of the sauce over the shredded meat, tossing to coat. taste and add more if needed! 
increase oven temperature to 375°f. place the roast back in the oven, uncovered, for 10 minutes to caramelize slightly.
serve the saucy pulled roast inside steamed bao buns. top with kimchi, green onions, and sesame seeds.
