Smashing Olives with a Rock?🫒 Olive Schiacciate! This is how my grandmother used to prepare them. Crack fresh green olives and soak them in water and salt in the refrigerator to remove their natural bitterness. Change the water and salt daily for at least 7 days, or until the bitterness is gone. If you're in the area, stop by Corrado's Market and pick up some fresh olives! 🫒 See you in 7 days for Part 2 and I’ll show you how to season them! #olive #italianfood #fyp

Creamy Zucchini Pasta I joked with my wife and told her this was Stanley Tucci's grandmother's zucchini pasta recipe. She said most people wouldn't get the joke... but you might. 😂 If you need an easy pasta recipe, this creamy zucchini pasta is hard to beat. It's one of those Italian recipes that proves simple is usually best. Save this one for zucchini season. Ingredients: 1 lb ditalini pasta 1 lb zucchini, cubed 1 yellow onion, diced 4½ cups water, plus more if needed Extra virgin olive oil Parmigiano Reggiano Fresh basil Salt & black pepper Instructions: 1. Heat a generous drizzle of olive oil in a large pan. Add the onion and basil, and cook until softened. 2. Stir in the zucchini, season with salt and pepper, and cook for a few minutes. 3. Pour in the water and simmer for 5 minutes. 4. Blend about half of the zucchini until smooth, then return it to the pan. 5. Add the ditalini and cook, stirring often, until al dente. Add more water if needed. 6. Turn off the heat and stir in a generous amount of Parmigiano Reggiano until creamy. #pasta #zucchini #fyp

It’s rustic, humble, and proof that you don't need much to make something that is good for you. Nonna would approve of this Lentil Soup! Ingredients: 8oz Ditalini pasta 1.5 cups dried lentils (rinsed) 12oz cherry tomatoes (quartered) 3 cloves garlic Fresh parsley Olive oil Sea salt Black Pepper Directions: 1. In a large pot, sauté olive oil, garlic, and tomatoes until fragrant and the tomatoes start to sweat. 2. Remove the garlic cloves. 3. Add the rinsed lentils and enough water to cover them by about an inch. Season with salt and pepper. 4. Cover and simmer for 30 minutes. 5. Check the water level (add more if it’s looking thick) and stir in the pasta.  6. Cook for an additional 10 minutes until the pasta is al dente. 7. Do you eat the flowers? 🌼 When I was a kid, my grandparents would pick zucchini flowers straight from the garden every summer. I remember thinking, flowers, we’re eating flowers? Now they’re one of my favorite things to make. I bought a whole case at a market here in Italy for 25 bucks and this is one of my favorite ways to make them. Gently open each zucchini flower and remove the center and the outer petals. 2. Stuff each flower with a small piece of mozzarella, then twist the petals closed. 3. Whisk together the 00 flour, rice flour, sparkling water, a pinch of salt, and an ice cube. 4. Dip each flower into the batter, twisting it as you coat it, then place it directly into the hot oil. 5. Chicken cutlets on the grill? Next time you’re making chicken cutlets, throw them on the grill. In Sicily, this is a very popular way to cook them. I cooked them over carbonella di legna (Italian wood charcoal), which gives an incredible smoky flavor while keeping the chicken juicy and the breadcrumb coating crispy. And I like to finish them with a squeeze of a lemon 🍋 Ingredients: Chicken cutlets Breadcrumbs (2/3) Pecorino Romano (1/3, freshly grated) Chopped parsley Olive oil Salt & pepper Lemon juice Instructions: 1. Toss the chicken cutlets with plenty of olive oil, the juice of one lemon, salt, and pepper. 2. In a separate tray, combine the breadcrumbs, Pecorino Romano, parsley, and enough olive oil to keep the mixture moist. 3. Coat each cutlet in the breadcrumb mixture and grill for a few minutes per side until golden and cooked through. 4. Finish with another squeeze of fresh lemon. Oven option: Bake at 400°F (200°C) for about 20 minutes, or until cooked through. #chicken #EasyRecipe #fyp

Most addictive snack in Italy 🇮🇹 Taralli are everywhere in Puglia, from restaurants and markets to gas stations. Made with just 4 ingredients, they’re crunchy and dangerously easy to eat. No table is complete without a basket of taralli and a bottle of wine🍷 INGREDIENTS 1000g 00 flour 360g dry white wine 220g extra virgin olive oil 20g sea salt Makes about 100 taralli. For different flavors, add fennel seeds, black pepper, rosemary, or chili flakes to the dough. DIRECTIONS 1. Add flour to a bowl and make a well. Mix wine, olive oil, and salt, pour into the center, and gradually incorporate the flour. 2. Knead for about 10 minutes until smooth, then rest for 10 minutes. 3. Roll small pieces into thin ropes and join the ends to form rings. 4. Boil in batches for about 1 minute, then drain on a clean cloth. 5. Transfer to a parchment-lined baking sheet and bake at 375°F (190°C) for 25–30 minutes, until golden and crispy. #italianfood #EasyRecipe #fy
