Creamy Zucchini Pasta I joked with my wife and told her this was Stanley Tucci's grandmother's zucchini pasta recipe. She said most people wouldn't get the joke... but you might. 😂 If you need an easy pasta recipe, this creamy zucchini pasta is hard to beat. It's one of those Italian recipes that proves simple is usually best. Save this one for zucchini season. Ingredients: 1 lb ditalini pasta 1 lb zucchini, cubed 1 yellow onion, diced 4½ cups water, plus more if needed Extra virgin olive oil Parmigiano Reggiano Fresh basil Salt & black pepper Instructions: 1. Heat a generous drizzle of olive oil in a large pan. Add the onion and basil, and cook until softened. 2. Stir in the zucchini, season with salt and pepper, and cook for a few minutes. 3. Pour in the water and simmer for 5 minutes. 4. Blend about half of the zucchini until smooth, then return it to the pan. 5. Add the ditalini and cook, stirring often, until al dente. Heat olive oil in a large skillet over medium heat. Add the zucchini and sauté for 8–10 minutes until soft. Let cool slightly. 2. Transfer the zucchini to a large bowl.
