Ingredients 1 lb (500g) zucchini, cut into small cubes 2 eggs 1 cup (80g) grated Parmigiano Reggiano 1 1/2 cups (200g) plain breadcrumbs 1 garlic clove, crushed Fresh parsley chopped Fresh basil Salt Black pepper Extra virgin olive oil Instructions: 1. Heat olive oil in a large skillet over medium heat. Add the zucchini and sauté for 8–10 minutes until soft. Let cool slightly. 2. Transfer the zucchini to a large bowl. Add the eggs, Parmigiano Reggiano, breadcrumbs, garlic, parsley, salt, and pepper. 3. Mix until well combined. If the mixture is too wet, add a little more breadcrumbs. 4. Fried Zucchini Flowers Ingredients 24 zucchini flowers 8 oz (225 g) fresh mozzarella, cut into small pieces ¾ cup (100 g) 00 flour ¾ cup (100 g) rice flour 1 cup (250 g) cold sparkling water 1 ice cube Sea salt Sunflower or peanut oil Instructions 1. Gently open each zucchini flower and remove the center and the outer petals. 2. Stuff each flower with a small piece of mozzarella, then twist the petals closed. 3. Whisk together the 00 flour, rice flour, sparkling water, a pinch of salt, and an ice cube. 4. Dip each flower into the batter, twisting it as you coat it, then place it directly into the hot oil. 5.
