🤍 Homemade Gut-Healthy Salted Date Caramel Marshmallows🤍 (Makes ~16 marshmallows) ✨ Ingredients: - 1 cup water (divided: ½ cup for gelatin, ½ cup for honey mixture) - 3 tbsp unflavored, beef gelatin - ½ cup honey - 1 tbsp vanilla bean paste - ~8 dates - Water or oat/coconut milk (to thin the caramel) - Sprinkle of sea salt - Sprinkle of cornstarch (for parchment lining) - 3 tbsp Clevr Salted Caramel Chai SuperLatte mix - 6-8 oz hot water ✨ Instructions: 1. Bloom the Gelatin: Sprinkle 3 tbsp of unflavored beef gelatin over ½ cup of water in your mixing bowl. Let it sit and bloom while you prepare the honey mixture. 2. Heat the water and honey in a small saucepan over low heat for 3-5 minutes, stirring until fully melted and hot. 3. With your mixer on low, slowly pour the hot honey mixture into the bloomed gelatin using a whisk attachment. 4. Add 1 tbsp of vanilla bean paste, then increase the speed to high. 5. Whisk for 6-8 minutes until the mixture is white, fluffy, and tripled in size. 6. While the marshmallow mixture is whipping, pit ~8 dates and blend them with a splash of water or coconut milk until smooth. Sprinkle in a pinch of sea salt and mix. 7. Dust a parchment-lined 8x8 dish with cornstarch to prevent sticking (optional). 8. Quickly spread the marshmallow evenly into the tray. Add dollops of the date caramel on top and swirl it in with a knife toothpick. 9. Let the marshmallows rest for 4-6 hours in the fridge or a cool area until fully set. 10.
