While also satisfying your pizza cravings 🤤 INGREDIENTS - CHICKEN CRUST 450g ground chicken 2 large eggs 1/2 cup grated parmesan cheese 1 tsp garlic powder 1 tsp italian seasoning 1/2 tsp salt 1/2 tsp black pepper TOPPINGS 1/2 cup pizza sauce 1 cup grated mozarella cheese 20 turkey pepperoni slices DIRECTIONS - 1) Set your oven to 400°F and line a baking sheet with parchment paper. 2) In a large bowl, mix together ground chicken, eggs, parmesan, garlic powder, Italian seasoning, salt, and black pepper until fully combined. 3) Transfer the chicken mixture onto the prepared baking sheet and press it into a thin, even circle or rectangle. You want it thin or else it will have a hard time getting crispy.  4) Pop it in the oven for 25 minutes, or until golden and firm. Let it rest for 5 minutes to set. 5) Crank the oven up to 425°F. This will allow them to be easily folded into rose shapes. 2) Take 3-4 half-slices and fold them into the mold, layering them so they resemble the petals of a rose. Adjust the pieces as needed to achieve the rose look. 3) Carefully pour orange juice into each mold, filling to just below the top. The orange juice will freeze around the orange slices, holding them in place and enhancing the flavor. 4) Place the tray in the freezer for at least 4-5 hours or until completely solid. Snickers Smashed Dates 🥜🍫 So you’ve heard me talk up and down about smashed tacos, but what about smashed dates?!??? This is one of those “why does this taste illegal?” snacks. Soft, caramel-y dates pressed flat, filled with creamy peanut butter, dunked or drizzled in melted chocolate, and finished with flaky sea salt. Sweet. Salty. Chewy. Crunchy. HEAVEN.  INGREDIENTS -  9 medjool dates ¼ cup creamy or crunchy peanut butter ⅓ cup dark chocolate chips flakey coarse salt for topping DIRECTIONS - 1) Slice each date lengthwise and remove the pit if needed. Place on a parchment-lined tray. 2) Use the bottom of a glass to gently press each date flat into a disc shape. 3) Spoon a small amount of peanut butter onto each flattened date and spread evenly. 4) Melt chocolate in the microwave in 20–30 second intervals, stirring between each, until smooth. 5) Spoon melted chocolate over each date, covering the peanut butter layer. INGREDIENTS - FOR OATS 1/2 cup certified gluten free rolled oats 1/2 cup almond milk 1 tsp chia seeds 1/2 scoop vanilla protein powder (as always @1UpNutrition Vanilla Ice Cream protein powder - code BAILS for up to 40% off everything) 1/4 tsp cinnamon 1/8 tsp nutmeg 2 tbsp shredded carrots 1 tbsp pecans, chopped 1 tbsp raisins FOR CREAM CHEESE WHITE CHOCOLATE GANACHE 1/3 cup greek yogurt 2 tbsp white chocolate chips 1.5 tbsp cream cheese DIRECTIONS - 1) Add all oat ingredients to a bowl or jar. Stir well and refrigerate for a minimum of 1 hour. 2) Microwave white chocolate in 30-second increments in a small bowl. Mix in with Greek yogurt and room temperature cream cheese. I used a whisk to get rid of lumps. 3) Remove oats from the refrigerator, and pour cream cheese ganache overtop. Put back in the fridge overnight to set. 4) In the morning, top with more carrot shreds and pecan pieces! New Years Aperol Spritz Frozen Roses 🍊🌹 Because New Years Eve is only 3 days away!! These are a spin off my Orange Rose Mimosa Cubes and are soooo perfect for celebrating! INGREDIENTS - 8oz Aperol 4oz club soda 2 oranges  Bottle of Prosecco DIRECTIONS -  1) Slice your oranges thinly, then cut each slice in half to make semicircles. This will allow them to be easily folded into rose shapes. 2) Take 3-4 half-slices and fold them into the mold, layering them so they resemble the petals of a rose. Adjust the pieces as needed to achieve the rose look. 3) Combine the Aperol and soda into a glass. Then pour into each mold, filling to just below the top. The Aperol mixture will freeze around the orange slices, holding them in place and enhancing the flavor. 4) Place the tray in the freezer for at least 4-5 hours or until completely solid. They’re made with ground chicken instead of dough, so you get all the melty, comfort food vibes without the crash. INGREDIENTS (Makes 2) -  450 g ground chicken 1 tsp paprika 1 tsp garlic powder 1 tsp onion powder 1 tsp italian seasoning ½ tsp salt ½ tsp black pepper 2 tbsp pesto spinach red onion ¼ cup sundried tomatoes ½ cup mozzarella cheese shredded ¼ cup parmesan cheese grated DIRECTIONS - 1) In a mixing bowl, combine the ground chicken with paprika, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix until fully incorporated. 2) Place a sheet of parchment paper on a flat surface and add half the chicken mixture on top. Give it a good stir to make sure the chia seeds are evenly distributed. Let it sit for about 5 minutes, then stir again. 2) Once that’s done, cover the bowl and pop it in the fridge. Let it chill for at least an hour, but overnight is even better. The chia seeds will absorb the liquid and turn into a thick, pudding-like consistency. 3) While your chia pudding is setting, make the coffee layer. Mix the other shot of espresso with the remaining Greek yogurt in a small bowl. Then add sweetener of choice and mix again. 4) Spoon the chia pudding into the bottom of 3 glasses. Next, add the greek yogurt layer on top. 5) To finish off your tiramisu chia pudding, dust the top with cocoa powder or sprinkle some dark chocolate shavings. 6) You can dig in right away if you’re impatient like me, or let it chill a bit longer to let the flavors meld together even more. Then add all remaining dry ingredients and wet ingredients and blend till combined.  2) Pour into a greased oven safe baking dish and bake at 350F for 20-23 minutes.  3) While that’s baking, make the frosting by combining together the greek yogurt, cream cheese and powdered sugar in a small bowl.  4) Remove oats from oven and top with “frosting” and sprinkles.
