WEEK 5 | MEAL 3: BABE ON A BUDGET TAKES THE WEEKLY SHOP ๐Ÿ›’๐Ÿ›’๐Ÿฉท๐Ÿฉท

MEAL 3: MARRY ME BUTTERBEAN LASAGNE

๐Ÿด 3 portions*
โฐ 35 minutes 
Store cupboard essentials: oil, minced garlic, smoked paprika, mixed herbs, cayenne pepper, salt & pepper, veggie stock cube, lasagne sheets

Ingredients

- 1 red onion
- 1tsp minced garlic 
- 70g sun-dried tomatoes
- 1tbsp tomato purรฉe
- 400g butterbeans 
- 1tsp smoked paprika
- 1tsp mixed herbs 
- 1tsp cayenne pepper
- Salt & pepper
- Veggie stock cube
- 6-8 lasagne sheets
- Handful spinach
- 1-2tbsp creme fraiche
- Handful fresh basil 
- Cheddar cheese
- 1 garlic baguette

To make...

๐Ÿซ˜ Dice up your red onion & fry off in the oil from your sun-dried tomatoes and once softened, add minced garlic and continue to cook for 2 minutes. 

๐Ÿซ˜ Dice up your sun-dried tomato into teeny tiny chunks and add them into the mix along with your tomato puree. 

๐Ÿซ˜ Mix well before adding your drained butterbeans and seasoning with smoked paprika, mixed herbs, cayenne pepper & salt and pepper. Mix well.

๐Ÿซ˜ Add 500-600ml of veggie stock and bring to a simmer before breaking in your lasagne sheets. 

๐Ÿซ˜ Make sure theyโ€™re covered - adding more stock if needs be. Bring  to the boil, cover and simmer for 10-12 minutes, regularly separating the sheets with a fork. 

๐Ÿซ˜ Stir through spinach, creme fraiche and fresh basil before topping with a generous handful of cheddar cheese and popping under the grill for 5 minutes. 

๐Ÿซ˜ Serve up with garlic bread straight from the oven and enjoy!

*BULKING OUT OR DOWN? 

This serves 3 but you can easily bulk up with more lasagne sheets! 

๐Ÿซ™  Store in the fridge in an airtight container & reheat until piping hot. Also suitable for freezing.

Meatball & Chickpea Curry using @Quorn_uk Swedish Style Balls.

25g Protein, 13g Fibre & ยฃ1.50 per portionโ€ฆ winner winner, veggie dinner !! ๐Ÿคญ๐Ÿคญ

This is exactly what Iโ€™ll take the time to meal prep if I have a busy week but want to save some pennies & keep on top of my protein & fibre intake. 

I havenโ€™t eaten meat for a LONG TIME & Iโ€™m telling you that these veggie balls are the best there is. Iโ€™m a massive Quorn fan and always keep a stash in the freezer - no artificial ingredients & you can cook them straight from frozen.

๐Ÿ‘ฉ๐Ÿผโ€๐Ÿณ Ingredients - serves 4 ๐Ÿ‘ฉ๐Ÿผโ€๐Ÿณ 

300g Quorn Swedish Style Balls
1 Red Chilli (leave out if youโ€™re not a huge spice fan)
1 Red Onion
1 Green Pepper
400g Chickpeas
200g Chopped Tomatoes
400ml Coconut Milk
Basmati Rice 
Fresh Coriander
Store Cupboard Ingredients: 1tbsp vegetable oil, 1tsp minced ginger/garlic, 1tsp Ground Coriander, 1tsp Ground Turmeric, 1tsp Ground Cumin, 1tsp Garam Masala 

Optional: 1tbsp Mango Chutney, 1tbsp Tomato Paste

TIP: If you donโ€™t have these spices, start with a ยฃ1 Curry Powder. It will be just as tasty! 

To makeโ€ฆ 

๐Ÿฅ˜ Slice up your veggies & sweat them in some vegetable oil for 5 minutes before adding the minced ginger & garlic and tomato paste. 

๐Ÿฅ˜ Then add your spices with a splash of water and cook for a further minute. 

๐Ÿฅ˜ Add your Quorn Swedish Style Balls and chickpeas & mix well before adding your chopped tomatoes & around 350ml of coconut milk. 

๐Ÿฅ˜ Mix well and bring to a simmer - cover and cook for around 20 minutes, stirring every now and then to make sure nothing is sticking to the bottom! 

๐Ÿฅ˜ Serve with a drizzle of the leftover coconut milk, some fresh coriander & some mango chutney if you fancy it along with a side of rice! 

Pop into airtight containers and store in the fridge - reheat unit piping hot when ready to eat.๐Ÿซ™xxx

Feta & Sausage Pasta, optimised with the Smart Nutrition Plus app !!

Girlies, put the meal deal DOWN. For ยฃ6.66 & 30 minutes of your time, this sausage & feta pasta has 29.4g protein & 17.9g fibre per portion plus, it absolutely slaps. 

I am very clear that I have no interest in calories BUT I do try and hit a fibre and protein goal every day and the Smart Nutrition Plus app is a FAB way to see these metrics without having to see calories. Or, if you are wanting to track those, of course you can do that too, along with a whole range of vitamins, irons & fats. The app has so many features to optimise health goals as well as articles & guidance. It really is a brilliant little tool if you need a hand with giving your body what it needs to thrive.

Onto the pastaโ€ฆ this popped OFF. Store in the fridge in an airtight container & reheat in the microwave. ๐Ÿซ™๐Ÿซ™๐Ÿซ™

- 1 red onion
- 1 red pepper
- 8 veggie sausages 
- 400g chickpeas 
- Fresh basil
- 350g pasta shells

Store cupboard: 1tbsp olive oil, 2tsp chilli flakes, 1tbsp mixed herbs, 2tsp garlic granules, 2tsp dried parsley, salt & pepper

To makeโ€ฆ

๐Ÿ›’ Preheat your oven to 180 degrees.

๐Ÿ›’ Pop your feta into the middle of a large baking dish and surround with tomatoes, red pepper, onion & chickpeas.

๐Ÿ›’ De-skin your sausages and roll into small balls (smaller than in the video!).

๐Ÿ›’ Drizzle over olive oil and season with chilli flakes, mixed herbs, garlic granules, dried parsley and salt & pepper.

๐Ÿ›’ Pop into the oven for 25 minutes.

๐Ÿ›’ Whilst that cooks, cook your pasta as per packet instructions and save 1-2 cups of pasta water. 

๐Ÿ›’ Once the feta mix is cooked, give everything a good mix and add half the pasta water, creating a sauce.

๐Ÿ›’ Add the cooked pasta and keep adding pasta water until you get to your desired consistency. 

๐Ÿ›’ Stir through your fresh basil, top with black pepper & enjoy! XXX

MEAL 5: Smashed Potato & Halloumi Bowls

๐Ÿด 2 portions
โฐ 35/40 minutes
Store cupboard essentials: olive oil, salt & pepper, garlic granules, dried parsley, smoked paprika, dried mint

Ingredients

- 2 Large Potatoes 
- 2tbsp Olive Oil
- Salt & Pepper
- 2tsp Garlic Granules
- 1tsp Dried Parsley 
- 2tsp Smoked Paprika
- 225g Halloumi 
- Baby Gem Lettuce
- 2tbsp Yoghurt 
- 1/2 Cucumber 
- 0.5tsp Dried Mint
- 1tbsp Peri Peri Sauce
- Pickled Red Onions

To makeโ€ฆ

๐ŸŒฏ Cut up your potatoes into cubes & boil for 15-20 minutes or until soft. 

๐ŸŒฏ Drain and pop onto a tray. Crush with the back of a glass and drizzle with olive oil.

๐ŸŒฏ Season with garlic, salt & pepper, dried parsley & smoked paprika and air-fry for around 20 minutes or until crispy. 

๐ŸŒฏ In the meantime, slice up your halloumi and pan fry until golden brown on each side. 

๐ŸŒฏ Prep your tzatziki style dressing by mixing together yoghurt, dried mint, grated cucumber and salt & pepper. 

๐ŸŒฏ Slice up the lettuce and remaining cucumber and once the potatoes are cooked, layer everything into a bowl.

๐ŸŒฏ I also added some peri peri sauce and my pickled red onions - recipe on previous post!

*BULKING OUT OR DOWN? 

This pretty perfectly serves 2 but an easy bulk is some more potatoes and some more salad-y bits! 

๐Ÿซ™ Store any leftovers separately in an airtight container in the fridge - heating up the potatoes & halloumi before assembling with any leftover salad.

๐Ÿณ Preheat the oven to 200 degrees.

๐Ÿณ Dice up baby potatoes & season with garlic, onion powder, paprika, mixed herbs, parsley & salt and pepper. Pop into the oven for 20 minutes.

๐Ÿณ Give them a shake and add your sausages, mushrooms & tomatoes adding more seasoning if desired.

๐Ÿณ Pop into the oven for 15-20 minutes.

๐Ÿณ Make space for your eggs and crack them into the gaps. Pop back into the oven for 7 minutes.

๐Ÿณ Layer on some baked beans & avocado to serve. Grab some thick crusty bread for dipping & enjoy !!

Store cupboard essentials: oil, minced garlic, salt & pepper, minced garlic, mixed herbs, smoked paprika, veggie stock cube, ketchup (or sugar), marmite (optional)

Ingredients

- 1 white onion
- 1 carrot
- 1 red pepper
- 150g mushrooms
- 30g sun dried tomatoes
- 1tsp minced garlic
- 150g veggie mince
- 2tsp mixed herbs
- 2tsp smoked paprika
- Parsley
- Salt & pepper
- 400g chopped tomatoes
- 1 veggie stock cube
- 1tbsp tomato puree
- 2tsp ketchup
- 1tsp marmite
- Basil
- 500g gnocchi
- Handful cheddar cheese

To make...

๐Ÿฅซ Fry off diced onion, carrot and red pepper in olio until softening. Add iced mushrooms and sun fried tomatoes and continue to cook.

๐Ÿฅซ Once soft, add veggie mince and season with mixed herbs, parsley, smoked paprika and salt & pepper.

๐Ÿฅซ Add chopped tomatoes, 200-300ml of water with a veggie stock cube, tomatoes puree, ketchup and marmite.

๐Ÿฅซ Allow to simmer for as long as possible before adding basil and parsley-boiled gnocchi. Cook in the sauce for a further 5 minutes before covering in cheddar and popping under the grill until golden and bubbling. 

*BULKING DOWN? This freezes super well so get the freezer stash stocked up! Or, a little less of everything and make shakshuka with the left

MEAL 1: PANEER, CHICKPEA & CAULIFLOWER TIKKA TRAY BAKE

๐Ÿด 3 portions*
โฐ 35 minutes 
Store cupboard essentials: oil, minced ginger & garlic, chilli flakes, dried parsley

Ingredients

- Half head of cauliflower
- 1 red onion
- 1 block paneer
- 1tsp minced ginger & garlic
- 1tsp chilli flakes,
- 2-3tbsp tikka paste (I used patakโ€™s paste pots)
- 300ml-400ml coconut milk 
- 200g chickpeas
- 200g chopped tomatoes
- 1 packet of microwavable rice
- 2tbsp yoghurt 
- 1tbsp mango chutney 
- 1tsp dried parsley 

To make...

๐Ÿฅ˜ Preheat your oven to 200 degrees. 

๐Ÿฅ˜ Chop up your cauliflower into florets - smaller than mine are here! 

๐Ÿฅ˜ Add to a baking dish along with diced up red onion & cubed paneer & chickpeas. 

๐Ÿฅ˜ Add a drizzle of vegetable oil, minced ginger & garlic, chilli flakes, tikka paste, coconut milk, chopped tomatoes. 

๐Ÿฅ˜ Cover with foil & pop it into the oven for 15-20 minutes.

๐Ÿฅ˜ Remove from then oven, give everything a mix and add a little more coconut milk or a splash of water if need. 

๐Ÿฅ˜ Remove the foil and pop back into the oven for 10-15 minutes or until the cauliflower is cooked & soft. Mine took a little longer than this so make sure you make your cauliflower pieces smaller! 

๐Ÿฅ˜ Remove from the oven and stir through your cooked microwavable rice - or actual rice if you have some in the cupboard! 

๐Ÿฅ˜ Serve with yoghurt, mango chutney (optional but I always have some kicking about) and some dried parsley. Enjoy !! xx

*BULKING OUT OR DOWN? 

Honestly, this already serves 3 healthy portions. You can bulk it up with extra veggies / rice! Otherwise, save your half head of cauliflower & make my cauli wings!

Save any coconut milk for when reheating - add a splash before you microwave to keep it saucy!

๐Ÿซ™  If freezing, keep the rice & yoghurt separate and re-add these elements one defrosted and reheated. Otherwise, store in the fridge in an airtight container and reheat until piping hot.

MEAL 2: Fully Loaded Crispy Baked Rice & Chicken Salad

๐Ÿด 2-3 portions
โฐ 60 minutes (less if you use microwave rice divas)
Store cupboard essentials: chilli oil or vegetable oil, salt & pepper

Ingredients

- 120/130g Basmati Rice (dried weight)
- 2tbsp Soy Sauce
- 2tbsp Chilli Oil or Vegetable Oil
- 1-2tbsp Gochujang Paste
- 2x Crispy Veggie Chicken Fillets 
- 120g Tenderstem Broccoli 
- 1 Cup of Frozen Peas
- 1 Avocado
- Half a Cucumber
- Salt & Pepper
- 2-3tbsp Spicy Mayo
- Handful Crispy Onions

IF PICKLING YOUR RED ONIONS:

- 1 Red Onion
- 1 Cup Hot/Boiling Water
- 1/2 White Wine Vinegar
- 1tbsp Sugar 
- 1.5tsp Salt 

To make...

๐Ÿš Pop your rice onto cook if not using microwavable rice and preheat your oven to 200 degrees. 

๐Ÿš Once cooked, spread onto a baking tray and drizzle with soy sauce, chilli oil & gochujang paste. Mix well and pop into the oven for 30-40 minutes, depending on how crispy youโ€™d like your rice to be! Give it a mix every 10 minutes to stop anything burning. 

๐Ÿš Whilst that cooks, pop your veggie chicken fillets into the oven & prep your veggies. 

๐Ÿš Add the veggies into a large salad bowl and add a splash of soy, chilli oil and a little salt & pepper. Give everything a good mix. 

๐Ÿš Add the diced up chicken fillets & your crispy rice - mix well and dress with spicy mayo, crispy red onions and pickled red onions. 

PICKLED RED ONIONS:

๐Ÿง… Finely slice one red onion. 

๐Ÿง… Combine hot water, vinegar, salt & sugar - transfer into a jar and add your onions in.

๐Ÿง… Leave for around an hour until theyโ€™re ready & then pop the lid on and chuck them in the fridge.

๐Ÿง… As I did this the lazy way, I wouldnโ€™t leave these longer than a week! I ate them in 2 days though so all good HAHA

This makes between 2/3 portions - can be easily bulked up with more rice!

Today weโ€™re using the Fusions Strawberry Flavoured Dried Mango & the Spicy and Crunchy Wok Tops. Both banging & both adding a range of vitamins and nutrients to my day that just wouldnโ€™t have been there before - a nutrition win if you ask me !! ๐Ÿคญ

BREAKFAST ๐Ÿฅญ๐Ÿ“๐Ÿงš๐Ÿผโ€โ™€๏ธ

- 150g Skyr Yogurt
- 1 Serving of Granola
- 1 Serving of Strawberries
- 1 Serving of Whitworths Fusions Strawberry Flavoured Dried Mango 
- 1tbsp Dried Cranberries
- 1tsp White Choc Chips
- 1tbsp Honey 

Just layer everything on top of your yogurt & youโ€™re good to go!

APPROX: 20g Protein & 7g Fibre per serving

LUNCH ๐Ÿณ๐Ÿฅ‘๐Ÿฅช

- 4 Eggs (hard boiled)
- 2tbsp Kewpie Mayo
- 2 Spring Onions
- Salt & Pepper
- 0.5tsp Sugar
- 0.5tsp Sesame Seeds

Mash this all together for 2 servings of the egg mayo!

- 2 Slices of Wheat & Rye Sourdough 
- Cucumber Slices
- 1/2 Avocado

Assemble your sarnie!

APPROX: 22g Protein | 12g Fibre per serving

DINNER ๐Ÿœ๐Ÿด๐Ÿฅฌ - serves 2

- 280g Tofu 
- 1-2 Bell Peppers
- Handful of Tenderstem Broccoli 
- 4 Spring Onions
- 1tbsp Cornflour / Salt & Pepper / 1tsp Chilli Flakes
- 2 Portions of Egg Noodles 
- 1tbsp Sesame Oil
- 2 Servings of Whitworths Spicy & Crunchy Wok Tops

For the Sauce: 3tbsp Soy Sauce, 3tbsp Honey, 1tsp Minced Ginger & Garlic, Splash of Rice Vinegar. 

- Grate the tofu and coat with the cornflour mix. 
- Fry in sesame oil until crispy and add half of the sauce. 
- Once sticky and crispy, remove from the pan and add sliced veggies with a splash of water. 
- Once the veggies are soft, add in the remaining sauce, the tofu & the noodles. 
- Top with Whitworths Spicy & Crunchy Wok Tops.

๐Ÿ‘ฉ๐Ÿผโ€๐Ÿณ Ingredients - to make 8 ๐Ÿ‘ฉ๐Ÿผโ€๐Ÿณ 

(I only had half a block of halloumi left in the fridge but if I had more, I would have squeezed a few more out of the pastry!)

- 1 roll of puff pastry
- Halloumi cut into sticks 
- 2tbsp chilli jam
- 1 egg
- 1tbsp hot honey
- 1tsp dried parsley, 1tsp sesame seeds, 1tsp chilli flakes

To makeโ€ฆ

โœจ Preheat your oven to 180 degrees.

โœจ Cut your puff pastry into 8 rectangles & spoon a little chilli jam onto each section.

โœจ Place sliced halloumi diagonally onto each rectangle & wrap up the pastry from each side & then up from the bottom.

โœจ Egg wash & then sprinkle over sesame seeds, dried parsley & chilli flakes.

โœจ Pop into the oven for 15-20 minutes.

โœจ Warm some hot honey in the microwave for 10 seconds and then drizzle over the top!

โœจ Serve up warm & fresh from the oven. BANGIN xxx

Special mention to my boyfriend who came up with halloumi in hoodies - you slayed that diva ๐Ÿ’˜ ๐Ÿ‘ฉ๐Ÿผโ€๐Ÿณ Ingredients - to make 8 ๐Ÿ‘ฉ๐Ÿผโ€๐Ÿณ (I only had half a block of halloumi left in the fridge but if I had more, I would have squeezed a few more out of the pastry!) - 1 roll of puff pastry - Halloumi cut into sticks - 2tbsp chilli jam - 1 egg - 1tbsp hot honey - 1tsp dried parsley, 1tsp sesame seeds, 1tsp chilli flakes To makeโ€ฆ โœจ Preheat your oven to 180 degrees. โœจ Cut your puff pastry into 8 rectangles & spoon a little chilli jam onto each section. โœจ Place sliced halloumi diagonally onto each rectangle & wrap up the pastry from each side & then up from the bottom. โœจ Egg wash & then sprinkle over sesame seeds, dried parsley & chilli flakes. โœจ Pop into the oven for 15-20 minutes. โœจ Warm some hot honey in the microwave for 10 seconds and then drizzle over the top! โœจ Serve up warm & fresh from the oven. Piri Piri Potato Bake with Chilli Jam Glazed Halloumi !! ๐Ÿค ๐ŸŒถ๏ธ๐Ÿฅ”๐Ÿด๐ŸŒฟ 

{Girlies, my weekly food shop averages at ยฃ35 and I post what I make & eat so follow for more !! @emsbalance} 

You lot loved my previous versions of this bad boy but this could be my fave yetโ€ฆ๐Ÿคญ

๐Ÿ‘ฉ๐Ÿผโ€๐Ÿณ Ingredients - serves 2/3 ๐Ÿ‘ฉ๐Ÿผโ€๐Ÿณ 

- 500g baby potatoes
- 1tsp piri piri seasoning, 1tsp garlic powder, 0.5tsp chilli powder, 0.5tsp mixed herbs, salt & pepper
- Handful tenderstem broccoli
- 1 red bell pepper
- 1 red onion 
- 200g chopped tomatoes 
plus 0.5tsp minced garlic, 0.5tsp chilli flakes
- 1tbsp BBQ sauce
- 100g halloumi, sliced thinly
- 2tbsp chilli jam 
- 1tbsp garlic dip / alioli
- Fresh parsley 

To makeโ€ฆ

๐Ÿค  Preheat oven to 200 degrees.

๐Ÿค  Chop baby potatoes into small chunks & lightly oil. Season with piri piri, garlic, chilli powder, mixed herbs, salt & pepper. Pop into the oven for 20 minutes.

๐Ÿค   After 20 minutes, remove from the oven and add sliced red onion, red pepper & tenderstem broccoli. Give it a good mix and pop back into the oven for 20 minutes. 

๐Ÿค  Whilst that cooks, heat chilli flakes & minced garlic in a small saucepan and add chopped tomatoes. Season with mixed herbs, salt & pepper along with some BBQ sauce. Bring to a simmer and allow to thicken slightly. 

๐Ÿค  Remove potatoes from oven (checking that theyโ€™re soft) and switch the oven to grill. 

๐Ÿค  Top potatoes with spoonfuls of your tomato mix & sliced halloumi. Brush halloumi with your chilli jam before popping under the grill for 10 minutes, or until the halloumi is golden and bubbling. 

(You may have to shuffled around the broccoli to keep it from catching)

๐Ÿค   Top with garlic dip, some parsley & black pepper and bloody enjoy girlies !!! xxx

LEFTOVERS: I ate this for lunch every day for 3 days. Hold off on topping with the garlic dip if this is the plan. Store in the fridge and reheat in the microwave. Then add your toppings!

Meal 1: Creamy Red Pesto & Sausage Pasta 

๐Ÿด2-4 portions (can scale down with less pasta / pesto etc)**
โฐ 30 minutes
- Store cupboard essentials: oil, minced garlic, salt & pepper

๐Ÿ‘ฉ๐Ÿผโ€๐Ÿณ Ingredients ๐Ÿ‘ฉ๐Ÿผโ€๐Ÿณ 

- 1tbsp oil
- 1 red onion 
- 8 veggie sausages (skins off)
- 1tsp minced garlic
- 3/4 jar of red pesto
- 2tbsp cream cheese
- Salt & pepper
- 250g-300g pasta 
- Handful spinach 
- Mozzarella ball
- Fresh parsley

To makeโ€ฆ

๐Ÿ… Pop the pasta onto boil as per packet instructions. Once cooked, set aside a large mug of pasta water.

๐Ÿ… Fry off the onion until soft and then add your sausages, breaking them down as they cook until theyโ€™re browned.

๐Ÿ… Add the pesto, cream cheese, salt & pepper. Loosen up with some pasta water.

๐Ÿ… Add the cooked pasta and continue to add your pasta water until at the desired, silky consistency.

๐Ÿ… Wilt through your spinach with some fresh parsley before adding your mozzarella to the top of the dish.

๐Ÿ… Either bake for 20-30 minutes, cover on the hob or set under the grill until the cheese is melted & bubbling.

๐Ÿ… Serve with some fresh parsley & black pepper and enjoy!

**BULKING OUT? Serve with some of the broccoli & peas we bought, add some garlic baguette to the food shop and/or use a little more pasta! 

**BULKING DOWN? Reduce pasta to around 150g, use 6 sausages & save 2 for a sausage sarnie! Go less on the pesto / cream cheese.

Store in the fridge for up to 3 days in an air tight container. ๐Ÿซ™
