Easy comforting lunch idea for my family of four ✨
✨Boiled potatoes
✨Baked asparagus with salt, pepper and oil
✨Chicken Schnitzel
Ingredients
• Chicken fillets (breasts), sliced thin lengthwise into cutlets
• Salt
• Black pepper
• Paprika
• Dried garlic powder
• 2 eggs
• 2–3 tbsp flour
• Breadcrumbs
• Oil for frying (I used olive oil)
Instructions
1. Prepare the chicken
Slice the chicken breasts lengthwise into thin cutlets. Place them between plastic wrap or parchment paper and gently pound with a meat mallet until evenly thin.
2. Season
In a small bowl, mix salt, black pepper, paprika, and dried garlic. Sprinkle this seasoning evenly over both sides of the chicken.
3. Set up the coating station
• In one plate, place the breadcrumbs.
• In another bowl or plate, whisk together the eggs and flour until smooth.
4. Coat the chicken
Dip each seasoned chicken cutlet first into the egg mixture, making sure it’s fully coated, then transfer it into the breadcrumbs and press gently so the crumbs stick well on both sides.
5. Fry
Heat oil in a frying pan over medium heat. Once hot, add the schnitzels and fry for about 3–4 minutes per side, or until golden brown and cooked through.
