sweet potato harvest salad: 🍠🫜🥬🫶🏽 serves 4  280g quinoa  4 small - medium sweet potatoes  4 balls of pickled beetroot (cubed)  150g curly kale  60g pumpkin seeds  olive oil  salt and black pepper  for the dressing:  5tbsp tahini  2tsp apple cider vinegar  1tsp maple syrup  1tbsp coconut yoghurt  salt & black pepper  (a few splashes of water to thin for texture)  method:  to start chop your sweet potato’s into small cubes. place these into a baking dish with a generous amount of olive oil, salt and black pepper. bake in the oven at 180°C for 50 minutes to an hour.  meanwhile get your quinoa cooking in some salted water and place your kale in a large bowl with some olive oil and salt. massage this well and set aside.  to make the dressing simply mix all the ingredients together in a jar or bowl and add a splash or two of water to achieve the desired texture.  once the sweet potato has cooked place it in a large bowl along with the kale, cubed beetroot, pumpkin seeds and quinoa pour your creamy dressing on top and mix together well. store in the fridge until needed or eat right away. enjoy!  🫜🍠🥬🫶🏽 #healthy #salad #autumn #vegan #foryoupage
