THE BURY FAMILY MAKING BLACK PUDDING TO A SECRET RECIPE FOR 160 YEARS | LOOKING BACK AT 2025 If you know one thing about Bury, it’s probably black pudding. Around here, the blood sausage is a non-negotiable breakfast item. Tony and Mary Sinacola are the husband and wife duo who have run Chadwick’s for the last five decades - although the family can trace their roots selling black pudding in Bury back to 1865. Chadwick is Mary’s side of the family, and while it’s a love of fishing that brought them together, it’s a love of black pudding that’s kept them together. And judging by the daily queues that snake around the market every day, the feeling around here towards the black stuff is mutual. Locals queue up to buy it to take home, or enjoy it piping hot from the steamer. Condiments-wise, there’s a load to choose from - piccalilli, ketchup, vinegar - but the real heads know that you’re supposed to go in for a generous drizzle of the homemade mustard. Tony’s personal favourite black pudding accompaniment? ‘Another black pudding’. Obviously. While most supermarkets offer a pale imitation, you can only get Chadwick’s at Bury Market. “I’VE BEEN HERE FIVE YEARS AND I’VE NEVER SEEN ANYTHING LIKE IT… IT’S VERY WORRYING” New Islington Marina is one of our favourite spots to enjoy a coffee and watch the world go by. For many people, it is home too, with a community of canal boats making a real neighbourhood on the water. If you’ve been for a walk around the marina recently though, you might have noticed the water levels dropping. With some boats now just inches off the canal bed, residents are worried their homes will be destroyed. We went down yesterday to speak to residents Kiera and Andy about what's happened in the past few days, and more importantly, what happens next... A spokesperson for waterways charity Canal & River Trust said: “The driest spring on record and the continued hot dry weather into summer is impacting water availability, including on the Rochdale Canal. “Our charity is out managing water levels and doing all we can to keep the network topped up. To help save water, the canal locks into Manchester have temporarily been closed to navigation. We want to get the canal back open and available for boats as soon as possible, but this will require significant rainfall to replenish water availability to sufficient levels. “We have a constant programme of inspection and maintenance of the handmade canal locks, including replacing them when they come to the end of their working life. Like a lot of lock gates there is some leakage at Lock 82, however, they are in good condition and are not scheduled for replacement.”

Most things are served with Alicia’s signature ‘ComeBack’ sauce, correctly named because it will make you want to come back. What we’d really recommend doing though is getting down early and trying the fresh, sugar-topped beignets with another New Orleans staple - chicory coffee. You’ll thank us later. JUST 8 THINGS ON THE MENU⁠ AT THIS VIETNAMESE DELI Brothers Bao and Mike (plus Andy, not pictured) have been running Viet Deli on Blackfriars Street for about three months now, and if you’re a banh mi and/or iced coffee fan, you have a new must-visit destination. Their menu is a short but sweet affair - there are four flavours of banh mi, and four super interesting coffees too. The banh mi, made on fresh baguettes, come with your choice of tofu, lemongrass chicken, char sui pork or a classic pate and pork combo, plus a healthy drizzle of sriracha mayo. Over on the iced coffee portion of the menu, they start with ‘phin’ - a Vietnamese method of drip coffee which is extra strong, then they dilute it with all sorts of delicious things. There’s the classic, with condensed milk, a salted buttermilk variety topped with a silky foam, and an ‘egg’ coffee (confusingly, egg-free), which tastes just like a creme brûlée. When we visited before lunchtime, there was already a steady queue of people switching their morning latte for something significantly more interesting. And come lunchtime, the sandwich production line was in full swing. THE BAKERY BRINGING BACK LANCASHIRE CLASSICS WITH SELL-OUT CUSTARD TARTS, OVEN BOTTOMS AND ECCLES CAKES⁠ ⁠ Lots of styles of baking have had their moment in the spotlight recently - from French to Japanese - just look at your city centre faves. Now a new bakehouse in picturesque Ramsbottom is showing the traditional Lancashire bakery some love. And we say: about time too.⁠ ⁠ Rich Sharples, who came up working across Gary Usher’s Elite Bistros, has returned to his old stomping ground to create Loafi Bakehouse, and he’s sticking to what he knows and loves. That means flaky Eccles cakes, perfectly golden sausage rolls, homemade oven bottoms with classic fillings and an indulgent custard tart that could steal back the throne from the pastel de nata.⁠ ⁠ It's unfussy, delicious stuff that you’ll have found in bakeries in this part of the world for decades, but done really well. And we say: about time too.⁠ ⁠ Rich Sharples, who came up working across Gary Usher’s Elite Bistros, has returned to his old stomping ground to create Loafi Bakehouse, and he’s sticking to what he knows and loves. WATCH THE INSANE NOODLE SKILLS AT CHINATOWN’S KUNG FU NOODLE Quiet skill is a thing to behold. And at Kung Fu Noodle in Chinatown, you’ll see some of the most effortless noodle making in the city. It’s almost hypnotic. The chefs here pull the noodles by hand - and they make it look staggeringly easy (we can confirm it is not). They can pull them long, hurling them from the work surface through the air into the cauldron of boiling water, or thin and flat, slapping them against the bench to get rid of excess flour, giving them their name ‘bang bang noodles’. While we’re on cauldrons, their homemade chilli oil is made weekly - a huge vat of the stuff - using four different kinds of dried chilli, gallons of oil and nerves of steel. This is potentially dangerous work. But it’s worth every complex stage, every temperature change to create their signature flavour. They don’t make things easy for themselves. You can buy in noodles after all.
