50G PROTEIN STICKY MISO CHICKEN PREP BOXES

AD This is the kind of lunch I like to prep as a nutritionist. These sticky miso chicken prep boxes are high-protein, fibre-rich and designed to prep like a dream. Filled with lots of Eat Well ingredients you can find in M&S Foodhalls by simply looking for the flower on pack.

Makes 3 boxes. 520 kcal & 50g protein 

350g mini chicken breast fillets (M&S)
Miso glaze: 2 tsp white miso, 2 tsp honey, 2 tbsp soy sauce, 2 garlic cloves (minced), 1 tsp grated ginger, 1 tbsp toasted sesame oil

Rice salad: 250g cooked brown rice (cooled), 1 cucumber (deseeded + diced), 4 spring onions (chopped), a large handful of coriander (chopped), soy sauce + rice vinegar to season

Edamame hummus: 160g edamame, 1 tbsp tahini, 2 tbsp Greek yoghurt (M&S), juice of 1 lime & zest, 1 tsp honey, 1 tsp toasted sesame oil, 1/2 garlic clove, 2 spring onions, generous salt + pepper

Mix the miso, honey, soy sauce, garlic, ginger and toasted sesame oil. Season salt and peps. Add the chicken & marinate for 15–20 minutes.

Air fry at 200C or pan-fry over a medium heat, turning regularly, until cooked, sticky and golden. Set aside to cool slightly.

Blend the edamame, tahini, Greek yoghurt, lime juice, honey and spring onions. Season, adjust to taste.

Mix the cooled brown rice with the cucumber, spring onions & coriander. Season with soy sauce & rice vinegar to taste. Divide the rice salad between three containers, top with the sticky miso chicken, add a dollop of edamame hummus and finish with pumpkin seeds.
Store sealed in the fridge for up to 3 days.

The Best Healthy Banana Bread Breakfast Loaf 🍌 

Ad Is there anything better than the smell of your kitchen after baking banana bread? This is my current favourite recipe, basically like your oats in cake form. Jam packed with M&S Eat Well ingredients which I find by looking out for the Eat Well flower when shopping as a simple way to spot healthier choices.

Makes 10 slices
180kcal, 8g protein, 4g fibre per slice

3 very ripe bananas, about 300g peeled weight
250g 5% Greek yoghurt
3 eggs
1 heaped tbsp honey
1 tbsp olive oil
100g plain flour
120g rolled oats
4 tbsp mixed seeds, I used a mix of flax, pumpkin, sunflower and sesame
1 tsp baking powder
1/2 tsp bicarbonate of soda
Pinch of salt
1 banana, sliced lengthways, for the top
Optional 50g chocolate chopped into chunks

Method
Preheat the oven to 170°C fan and line a loaf tin with baking paper.

Mash the bananas in a large bowl until mostly smooth, then whisk in the Greek yoghurt, eggs, honey and olive oil until combined.

Add the plain flour, rolled oats, mixed seeds, baking powder, bicarbonate of soda and a pinch of salt. Fold together until just combined. Try not to overmix, as this will keep the loaf softer.

Spoon the mixture into the lined loaf tin and smooth over the top. Add the sliced banana on top if using.

Bake for 45 to 55 minutes, or until golden, risen and a skewer comes out clean. If the top starts to brown too quickly, loosely cover with foil for the final 10 to 15 minutes. 

Leave to cool in the tin for 10 minutes, then transfer to a wire rack before slicing.

Enjoy warm, toasted, and serve with extra Greek yoghurt and a drizzle of your favourite nut butter.

Ad For breakfast, I made breakfast tostadas using the M&S Corn and Wheat Tortillas. I crisped them up, then topped them with jalapeño avocado smash, soft scrambled eggs, a little drizzle of honey and the new M&S hot sauces.

For lunch, I made a crispy harissa rice salad with a honey harissa yoghurt dressing. The hack here is using the M&S pre-cooked rice packs and crisping them up in the air fryer, which gives you the best crunchy texture with minimal effort. I added my favourite M&S roasted shredded chicken for an easy protein boost.

For dinner, I made my summer version of spaghetti and meatballs using M&S chicken mince, which is a household favourite. I added courgette, lots of herbs and lemon to keep it fresh and light, then served it with a giant couscous salad.

AD One of my original recipes I’ve been doing for years, and a dish I love to bring out this time of year. Perfect comfort food, make for sharing and perfect for using all the lovely M&S Eatwell ingredients. 
 
You will need to serve 4 
 
Ingredients 
1 whole butternut squash 
200g pasta 
600ml milk of choice
1 heaped tbsp plain flour 
1 tbsp olive oil 
1 tsp honey (optional) 
40g grana pandano  
40g cheddar cheese 
1  stock cube
 
1 slice seeded bread, approx 60g
2 sprigs of thyme 
1 tsp garlic granules 
1 tsp olive oil
 
 
Cut the butternut squash in half. Score. Place in a baking dish or air fryer basket. Drizzle with olive oil, season with salt, pepper. Roast at 190°C fan for 35-45 minutes until soft and golden.
 
Make the cheese sauce by heating 1 generous tbsp of olive oil and 1 tbsp of plain flour over medium heat. Cook gently for 3-5 minutes. Gradually whisk in cold milk in 200ml portions until you’ve used all the milk. Let the sauce gently simmer for 10 minutes. turn off heat. Add grated cheese, 1 tsp honey, a crumbled stock cube, and black pepper. 

Remove the squash, increase the oven temperature to 200°C fan 

Meanwhile, parboil the pasta in salted water. Rinse with cold water to remove starch and set aside. Pulse bread with garlic, thyme, set aside.
 
Blend the butternut squash into the cheese sauce until smooth. Season to taste; the sauce should be pourable but not too thick. Combine the sauce with the pasta then transfer to a baking dish. Top with breadcrumbs and bake for 15 minutes in the oven until bubbling and golden. You can turn on the grill to speed this up if needed. 
 
Serve immediately with a generous side salad.

Breakfast was fluffy egg white oats with my fav high fibre frozen raspberry chia compote. Trust the process, this really works and is a genius way to boost protein without protein powder. Top tip is to add a scoop of the M&S milled flax to your oats to boost the fibre!

For lunch I made a green goddess chopped chicken salad, served with the M&S Nutrient Dense super seeded crackers. Fresh, crunchy and satisfying. This dressing is SO addictive, I will write the recipe up for you guys this week.

Dinner was my chicken shawarma tacos with a sumac onion salad. Really simple to put together, a great midweek winner. Swap chicken mince for beef or lamb! 

 Well fed and ready for bed 💕

We've recreated it using our Pickled Gherkins, Buffalo Sauce and ready made crispy bacon, simply chuck everything into a mixing bowl and stir together. Pop into a serving bowl and serve immediately with PLENTY of tortilla chips and pretzels! 👀

Recipe: serves 6 

300ml pack Crème Fraîche
100g Reduced Fat Cream Cheese
60g British Mature Cheddar Cheese, grated
6 Cooked Unsmoked Bacon Rashers, finely chopped
6 Pickled Gherkins, finely chopped 
4 Spring Onions, finely chopped 
2-4 tsp Buffalo Sauce (depending on heat) 
1 tbsp pickle juice (from the gherkins)

Breakfast was cacio e pepe scrambled eggs. For the eggs, I lightly toasted the black pepper first, then added the eggs and gently pushed them around to make those soft ribbons. The trick is adding a little splash of water and popping a lid on to steam them at the end.

For lunch, I made an M&S picky bits salad, which is basically my idea of heaven. Pesto chicken, roasted artichokes, smoky red peppers and all the good bits thrown together. It tastes even better the next day too, so it’s perfect for a prepped lunch, or honestly as part of a BBQ spread when you want something low effort but still really delicious - did you know it’s National Picky Bits Day on the 27th of June.

Dinner was orange, jalapeño and fennel rice with crispy salmon. Fresh, summery, a little bit spicy and very much the kind of dinner I want when it’s warm outside. You slowly cook the fennel with shallot, garlic and fresh orange until it goes soft and sweet, then serve it with crispy salmon and a creamy feta yoghurt.

Healthy affordable high protein prepable lunches 👇🏼

Ad Mini Chicken Feta Meatballs with Blistered Cherry Tomato Pasta Salad 36g protein at only £2 per portion using a range of ingredients from the remarksable range from M&S. Ideal for students, lunch boxes & prep. This will hold for 3 days. 

Serves 5, 475 kcal & 36 g protein

Ingredients
500g M&S Oakham Gold 5% chicken mince
100g feta (60g for sauce, 40g in meatballs)
350g dried pasta
350g cherry tomatoes, whole
1 courgette, grated & well squeezed 
3 small garlic cloves
Zest of 1 lemon (plus juice for finishing)
15g fresh basil, chopped
60g rocket
1 tbsp balsamic vinegar
1/2 red onion finely diced 
1 tbsp tomato puree
1 tsp olive oil, salt & black pepper

Blitz the courgette, basil, garlic and lemon zest in a food processor until finely chopped, then mix this into the chicken mince with about half the feta crumbled, salt and pepper to form the mixture. Roll into small meatballs and arrange on a lined tray. Bake with the grill on at 190°C for 15–20 minutes, flipping halfway so they brown evenly. You can also air fry at 190°C for 14–16 minutes, shaking once to colour all sides.

While the meatballs cook, heat a pan with a teaspoon of olive oil, add the cherry tomatoes and a few lightly smashed garlic cloves, and cook over medium–high heat for 8–10 minutes until they blister and burst. Add in 1 heaped tbsp tomato puree, a tablespoon of balsamic vinegar, salt and pepper and let it caramelise for about 3-5 minutes before loosening with a splash of water to make saucy again (it needs to coat the pasta)

Cook the pasta in boiling salted water for 10–12 minutes until tender, drain and reserve some of the cooking water. Toss the pasta through the tomato mixture with the cooked meatballs, adding splashes of the reserved water until everything is glossy and coated. Off the heat, fold in rocket, freshly torn basil leaves and finely diced red onion. Scatter the remaining feta over the top just before serving or boxing up, then finish with a squeeze of lemon and season to taste.

Healthy affordable high protein prepable lunches 👇🏼 Ad Mini Chicken Feta Meatballs with Blistered Cherry Tomato Pasta Salad 36g protein at only £2 per portion using a range of ingredients from the remarksable range from M&S. Ideal for students, lunch boxes & prep. This will hold for 3 days. Serves 5, 475 kcal & 36 g protein Ingredients 500g M&S Oakham Gold 5% chicken mince 100g feta (60g for sauce, 40g in meatballs) 350g dried pasta 350g cherry tomatoes, whole 1 courgette, grated & well squeezed 3 small garlic cloves Zest of 1 lemon (plus juice for finishing) 15g fresh basil, chopped 60g rocket 1 tbsp balsamic vinegar 1/2 red onion finely diced 1 tbsp tomato puree 1 tsp olive oil, salt & black pepper Blitz the courgette, basil, garlic and lemon zest in a food processor until finely chopped, then mix this into the chicken mince with about half the feta crumbled, salt and pepper to form the mixture. Roll into small meatballs and arrange on a lined tray. Bake with the grill on at 190°C for 15–20 minutes, flipping halfway so they brown evenly. You can also air fry at 190°C for 14–16 minutes, shaking once to colour all sides. While the meatballs cook, heat a pan with a teaspoon of olive oil, add the cherry tomatoes and a few lightly smashed garlic cloves, and cook over medium–high heat for 8–10 minutes until they blister and burst. Add in 1 heaped tbsp tomato puree, a tablespoon of balsamic vinegar, salt and pepper and let it caramelise for about 3-5 minutes before loosening with a splash of water to make saucy again (it needs to coat the pasta) Cook the pasta in boiling salted water for 10–12 minutes until tender, drain and reserve some of the cooking water. Toss the pasta through the tomato mixture with the cooked meatballs, adding splashes of the reserved water until everything is glossy and coated. Off the heat, fold in rocket, freshly torn basil leaves and finely diced red onion. Scatter the remaining feta over the top just before serving or boxing up, then finish with a squeeze of lemon and season to taste.

Serves 4

For the ‘Russian-Style dressing’ 
120g mayonnaise 
2 pickled gherkins, finely diced
3 tsp horseradish
2 tsp ketchup
Salt 

For the slaw – sit for ages to mellow 
80g white cabbage 
80g red cabbage 
2 tbsp white wine vinegar 

For the Shoestring fries
350g potatoes, sliced into shoestring fries 
Veg oil for deep frying

For the hot dog
1 x pack M&S Ruben Style Long Dogs 
8 slices of Emmental 
4 brioche buns 
4 wooden skewers 

1.	Start by making the dressing, mix everything together with pinch of salt and set to one side. 
2.	Then mix up the cabbage, adding the vinegar and salt and tossing together. Leave for at least 10 minutes so it has time to sit and mellow. 
3.	Then you can make the chips. Heat the oil for deep frying in a deep saucepan. Using kitchen paper, and working in batches, squeeze as much moisture out of the fries as possible. This helps them go super golden. Once the oil is hot, fry in batches for 2-3 minutes or until golden and crispy. Remove with a slotted spoon and place onto kitchen paper to drain. Season with plenty of salt. 
4.	Finally, make the hot dogs. Curl them up and skewer them with a wooden skewer. Cook over a medium-high heat in the BBQ for 3-4 minutes a side until cooked through. Turn off the BBQ and place the hot dogs onto a heat proof tin. Top each with two cheese slices and pop back onto the BBQ so the residual heat can melt the cheese. 
5.	To serve, slather a bun with the creamy dressing. Top with slaw, the hotdog and finally a pile of shoe strig fries. Whack on the lid and dive on in.

The England squad swapped training snacks for something a little sweeter as they got stuck into our Collection Red Diamond Strawberries 🍓🙌 Grown with care, picked at their peak and now taste-tested by the Three Lions. Safe to say, these berries are bringing their A-game 👀
WHAT I EAT IN A DAY AS A NUTRITIONIST 

Ad For breakfast, I made apple crumble breakfast bars. These M&S Kissabel apples are incredible, just look at that colour, and I mix them with soft dried Pink Lady apples for extra sweetness. I serve the bars with M&S Greek yoghurt for protein and fibre. They are prep ahead friendly, so tomorrow’s breakfast is sorted.
 
For lunch, I had my prawn toast toastie with M&S Smooth Butternut Soup. The coconut and ginger make it so comforting, and it is one of my favourites from the range.
 
Dinner was blackened salmon bowls with mango salsa using M&S Caledonian Gold salmon. Their mangos are so juicy and make a great salad base with avocado, chickpeas and a little chilli.
 
For something sweet, I made dark chocolate salted bites with M&S roasted almonds and Super Fruit Medley, finished with a pinch of salt.

ULTIMATE SUMMER SALADS

Ad Charred sweetcorn, feta & this gorgeous green basil dressing. One of my favourite summer salads, serve as a big BBQ side or perfect for prepping and enjoying throughout the week. It’s bright, filling and goes with everything.
 
I love that M&S have given their beans and pulses range a whole new look. Beans are one of my favourite ingredients to build meals around, high fibre & protein they really are an understated superfood. Plus, this range is extra special as M&S have donated £50,000 to @bowelcanceruk , to celebrate the launch and raise awareness of the health benefits of fibre.
 
Serves 4 at 298kcal 10g fibre 13g protein per portion. 

4 ears of corn
2 tbsp Cajun spice mix
1 jar M&S black beans, drained
1 red onion, finely diced
2 green peppers, finely diced
100g feta, crumbled
1 heaped tbsp Greek yoghurt
Zest of 1 lime
A handful of fresh coriander, chopped

For the dressing
A large handful of basil
2 spring onions, trimmed
2 tsp honey
1 tbsp red wine vinegar
2 tbsp water
1/2 medium avocado
Pinch of salt
1 small garlic clove
20g grated parmesan

Remove the corn from the cobs. Toss with a little olive oil, the Cajun spice mix, salt and char in a pan until coloured and golden. Set to one side.

Make the dressing by blending the basil, spring onions, honey, red wine vinegar, water, avocado, salt, garlic and parmesan until smooth and vibrant green. Loosen with a splash more water if needed. 

Add the drained M&S black beans to a large mixing bowl with the charred corn, red onion, green pepper, feta, Greek yoghurt, lime zest and chopped herbs. 

Serve spooned onto a large platter, drizzle over the green dressing. Serve or store for 3+ days in an airtight container.

Ad This week’s meal prep was made even easier because I ordered everything through Ocado, including all my M&S favourites. I always look out for the M&S Eat Well flower too, such an easy way to spot more nutritious options while I shop.
 
First up, maple chicken breakfast sausage muffins with homemade M&S chicken mince patties, whipped cottage cheese, cheese and fresh tomato. A really handy protein-rich breakfast to have ready in the fridge. My husband ate two for lunch, so just a warning.
 
Then my Parmesan, basil, pea + chicken protein filling. Peas are having their moment and the M&S pre-cooked chicken is forever in my fridge. Protein from the chicken, plus fibre and plant goodness from the peas.
 
And Turkish pasta pots with M&S fibre pasta, rose harissa beef, garlic yoghurt, fresh salad and spiced butter. A nice protein + fibre combo, and cooking and cooling the pasta increases resistant starch, which our gut microbes love.
