Greek Walnut Cake - Karidopita

Recipe:
• 10 room temperature eggs ( separate yolk & egg) 
• 10 spoonfuls of white sugar 
• Fluff egg white & then fluff yolk with sugar 

Mixture : 
• Walnuts (as many as you want)
• 2 spoonfuls baking powder 
• 1 spoon cinnamon 
• 1/2 spoon of ground clove 
• 10 spoon bread crumbs

Mix all together and put in oven 350 for 30-40 min

Sugar Mixture:
• 2 cups melted sugar
• 1 lemon slice 
• 1 cinnamon stick

Once out of oven, pour mixture and let cool. Store in fridge 🍴

Tonight we’re making κοτόπουλο με πατάτες στο φούρνο -Chicken & potato’s in the oven. 

Step by step:

1. Take your washed chicken legs and place them in deep pan (5 in recipe) 
2. On one side squeeze half of a lemon
3. Drizzle 2 tbsp of olive oil
4. Add 1-2 tbsp salt
5. Add 1-2 tbsp black ground pepper
6. Pinch of oregano 
7. Turn over and repeat the steps 3-6 (you can add half a portion of those steps) 
8. Use your hands (in gloves or not) and mix ingredients and chicken together
9. Wash and skin your potato’s ( 8 small potato’s in this recipe) 
10. Cut them into desired shapes and put into a mixing bowl
11. Peel & skin 2 garlic cloves 
12. Cut them into small pieces and put on top of potato’s 
13. Squeeze half a lemon
14. Add 1 tbsp salt
15. Pinch of oregano 
16. Add 1/2 tbsp black ground pepper
17. Drizzle 2tbsp olive oil
18. Mix all together
19. Place potato’s in between chicken legs 
20. Add 1 tsp of Fitini or butter (doesn’t matter what kind) on each leg. Fitini is a shortener.
21. Add 1-2 cups water (just to graze the bottom)
22. Preheat oven to 350f
23. Cover pan with aluminum foil
24. Half way remove foil ( about 45 min in) check if there’s still water - If not add another cup. Keep foil off
25. After 1.5 hrs water should be all gone or 98% and take the pan out 
26. You can add more lemon for taste - optional
27. Serve with tzatziki & you’re a true Greek!

NOTE: you can modify this recipe how you’d like! Add more chicken, lemon, oil etc!
This is just how we make it!

Recipe:

1. 400grams feta from @krinoscanada 
2. Approx 1/3 cup spicy peppers (homemade or store bought) 
3. 1tbsp hot oil 
4. 4 pressed cloves of garlic 

Step by step:
1. Start by blending feta in a mixer using the wired attachment
2. Use a chopper or a blender to mix hot peppers
3. Add 4 cloves in with peppers 
4. Fold in oil and peppers with feta 
5. Mix until smooth

Tonight we’re making παστίτσιο- pastitsio! This was a highly requested one!!

Step by step:

1. Create your meat sauce & set aside 
2. Boil pasta
3. Shred 1 cup of Parmesan cheese
4. Create béchamel
5. Mix 3 tbsp of béchamel, pasta, 1/2 cup Parmesan cheese & desired amount of meat sauce in a bowl
6. Line pan with bread crumbs
7. Mix the pasta meat mixture and place into pan
8. Pour béchamel on top and spread over noodles
9. Add 2-3 tbsp of water to bottom of the pan and just shake so it spreads 
10. Preheat oven to 350 degrees
11. Place in oven for 45 min until golden brown
12. Plate & serve!

Meat sauce:
* 1 whole onion
* 3 clove garlic 
* 2 tbsp tomato paste 
* 1 cup crushed tomatoes 
* *optional* 1tsp nutmeg ( this recipe does not include it) 
* 1 kilo ground beef 
Note: we had some extra portion of ground beef left over so you can either save and freeze like we do or use it for a larger portion of pasta. You can also make it more meat heavy if you’d like.

Pasta:
* 500g/1 kilo lean ground beef 
* Boil and cook al dente 

Béchamel: 
* 3 cup milk
* 1/2 cup vegetable oil (option is to use butter)
* 5 spoonfuls flour 
* 1 egg
* 1/2 cup graded Parmesan 

Step by step: 
1. Warm up milk - don’t boil 
2. In a separate pot - pour vegetable oil on a low heat and mix in flour
3. Once flour is mixed add in warm milk 
4. Once it’s all mixed add in one whole egg and continue to mix 
5. Then add in 1/2 cup Parmesan cheese 
6. Continue to mix until thick and fluffy
7. Remove from heat once done.

You’ll love this one if you’ve never tried it!! Enjoy 🫶

This recipe makes approx…24 pieces.

• 3 tbsp white vinegar 
• 1/2 spoonful salt 

Step by step:

1. Roll out filo until as rectangular as possible and super thin
2. Cut straight lines into filo
3. Dab oil mixture (1/2cup olive oil & 1/2 cup sunflower oil) 
4. Put a tbsp worth of filling at bottom
5. Cross diagonally one way, then the other and repeat. Fold the filo tightly so nothing falls out 
6. Dab oil mixture onto
7. Bake in preheated oven at 350 for 30-35min
8. Cool & eat

Tiropita filling:

• 1 cup ricotta cheese
• 1 cup crushed feta 
• 1 whole egg
• 1 tsp ground pepper 

Step by step:

1. Crush feta
2. Mix egg, pepper and ricotta
3. Mix all together 

Spanakopita:

• 1 white onion
• 1 green onion branch
• 1/2 kilo spinach
• 1 cup crushed feta
• 2-3 tbsp olive oil
• 1/4 cup dill
• 1/4 cup mint
• 1/2 tbsp salt
• 1-2 tbsp pepper
• 1 egg

Step by Step:

1. Cut onion & green onion 
2. Chop spinach, dill & mint
3. Sauté them until soft 
4. Add in spinach, dill & mint into pan and sauté all together 
5. Add pepper and oil and mix 
6. Let cool for about 20 minutes 
7. Add in egg and feta and mix

Pt2. Of Christmas cookies with Yiayia Maria 🎄🇬🇷

Kourabiedes😍 ps.  We made 2 kinds - this is the version with almonds… you can do them without. 

Recipe:
1. 1/2 pound room temperature unsalted butter
2. 1/2 cup icing sugar
3. 1 tbsp vanilla
4. 1/4 cup Ouzo
5. 1/4-1/2 cup roasted almonds (optional)
6. 3 cups flour 

Step by step: 
1. Take butter out and let it get to room temp
2. Add icing sugar to the bowl with the butter and begin to mix with fork or spoon
3. Take out mixer and begin to whip
4. While whipping add ouzo & vanilla
5. Fold in flour to mixer and keep going until it starts to harden
6. Optional step: halfway through folding in flour, add in roasted almonds
7. Remove mixer and begin to mix with hands
8. Preheat oven to 350
9. Begin to shape kourabiedes into desired cookie style
10. Bake for 25-30 on 350
11. Let cool all the way and then roll them in more icing sugar - There is no measurement for this just cover them fully 
12. You can place them in cupcake sheets
13. Enjoy & serve!

Back in the kitchen making Greek Christmas cookies with Yiayia Maria 🤍🇬🇷

Part 1: Melomakarona 

Recipe:

1. 2 cups vegetable oil
2. 1/4 cup olive oil (optional)
3. 1 shaved orange peel (whole orange)
4. 1/2 cup sugar
5. 1 tablespoon vanilla extract
6. 1/2 cup cognac
7. 1/2 tbsp ground cloves
8. 1 tbsp ground cinnamon
9. 1/2 cup orange juice 
10. 1 tbsp baking soda
11. 4 cups flour
12. 1-2 cups roasted walnuts (this is also optional)

Syrup Recipe:
1. 3 cups sugar 
2. 2 cups water 
3. 1 cup Honey
4. 1 lemon peel piece 
5. 1 orange peel piece 
6. 1 cinnamon branch/stick 

Step by Step: 
1. Mix all ingredients into a large bowl.
2. Mix orange juice with baking soda together over the large bowl so it doesn’t spill everywhere
3. Fold in flour with spoon until dough creates 
4. Use hands to mix dough until it’s no longer sticking to the side of the bowl 
5. Take a walnut size piece of dough and roll into a flat rounded rectangle shape (Idk if I described that right 😂)
6. Press end of four 4 times into cookie 
7. Bake for 25-30 min on 350f
8. Put syrup ingredients into pot, let it boil. Once it gets brought to a boil let it go for 5 minutes 
9. Remove lemon,orange,cinnamon from boiling syrup 
10. Lower to medium 
11. Put 4/5 cookies into syrup for about 45s-1minute ( turn them over half way and make sure to not over soak) 
12. Remove and place onto tray or plate 
13. Sprinkle walnuts onto cookie 
14. Cool & serve!

Remove lemon,orange,cinnamon from boiling syrup 10. Lower to medium 11. Put 4/5 cookies into syrup for about 45s-1minute ( turn them over half way and make sure to not over soak) 12. Tonight we’re making avgolemono soupa - lemon chicken soup! 🍋🍗

Step by step:

1. Grab a pot and fill about half way and bring to a boil
2. Grab your vegetables, cut, peel and wash and set aside
3. Once water is boiling, add desired amount of salt and add in chicken legs or whole chicken
4. Bring chicken to a boil, clean off the top residue with a hand strainer and then boil for 15-30min depending on how many legs or whole chicken
5. After 15-30 min add the vegetables and boil for about 45
6. Remove vegetables and place aside
7. Check the chicken and boil for another 15 if needed
8. Remove chicken and place on plate
9. Take hand strainer and clean remnants
10. Add in rice and mix with a spoon and let boil on medium to high heat for 45
11. Add in phytini or butter of any kind with olive oil and mix and let boil for a minute 
12. Crack egg, keep egg yolk & squeezed lemon  to a bowl and whisk
13. Add half cup of broth to bowl and whisk
14. Remove pot from heat, add in bowl to soup and mix
15. Put back on heat for 30 seconds and check for clumps of egg
16. Turn heat off and it’s ready to eat!
17. You can cut up extra lemon on the side for when you’re eating and squeeze on top if you want it more lemony.

Ingredients: (this feeds about 4-5 people)
* 5 chicken legs
* 2 carrots
* 4 potato’s
* 1 onion
* 4 celery sticks
* 2 cups rice
* 1tbsp salt (for pot water) 
* 1 egg yolk
* 2 squeezed lemons
* 1 tbsp phitini (or butter)
* 2 tbsp olive oil
* 1 lemon for the table after cooking

Note: you can cut everything up and mix into the soup or leave everything on the side. We leave it on the side because everyone in my family likes to eat things differently!

Tonight we’re making Gemista-stuffed vegetables!

Step by step:

1. Grab your desired vegetables, cut the tops and scoop out the insides into a bowl
2. Keep some vegetable juice on the side 
3. Grab a pot, add about 1 tbsp oil and start cooking meat
4. Add in onion, and pressed garlic and continue to cook
5. Add in about 1 tbsp pepper & 1tbsp salt to taste
6. Mix and then immediately add in filling from vegetables and mix
7. Add in parsley and mint(dried fresh)
8. Mix and then add in 2-3tbsp tomato paste and mix
9. Add in rice, mix, and then place off to the side
10. Then bring back your pan and start to fill vegetables with meat mixture 
11. Cut and rinse your potato’s 
12. Season potato’s and then add them into empty spaces in pan
13. Add in remaining meat mix to the side of the pan and cook on its own 
14. Pour about 1/2 cup vegetable oil over pan with vegetable juice from before and tilt pan side to side to hydrate the vegetables (don’t mix)
15. Place in oven at 350 for an hour to 1.5hrs (depends on how many vegetables u have)
16. Take out of oven and it’s ready to eat!

Ingredients: (12 pieces) 
* 7 tomato
* 2 green pepper
* 3 mini zucchini
* 3 mini eggplant 

Meat mixture: 
* 1/2 pound lean ground beef
* 1 whole white onion
* 4-5 garlic cloves 
* 3-4 tbsp of mint and parsley together 
* 1 cup rice 
* 2-3 tbsp tomato paste 

Potato’s:
* 3-5 potato’s - depends on size 
* 2 tbsp vegetable oil or olive oil 
* 1/2tbsp oregano
* Salt to taste
* 1/2 tbsp of tomato paste 

Note: you can use any vegetables you’d prefer! We do a mix so this is what works in our household!
