NANDOS CHICKEN & HALLOUMI BURGER  Follow @kimberlys_journeyy for more recipes like this⤵️ For the chicken:  - 300g chicken breasts  - 2tbsp peri peri marinade  - 1tbsp chicken seasoning  - 2tbsp Peri peri sauce  For the burgers: - 2 ciabatta rolls  - 15g garlic butter  - 50g reduced fat halloumi  - 2tbsp chilli jam - 2tbsp perinaise  - Lettuce gem  - Red onion  Butterfly the chicken breast, add your marinade and then I cooked mine in m air fryer under the grill setting!  When the chicken is almost cooked, fry or grill your Halloumi until golden.  For the rolls, spread over the garlic butter and then toast. Assemble the burgers with some chilli jam, lettuce, red onion and Nandos perinaise. TERIYAKI CHICKEN NOODLES  The perfect weekend Fakeaway, quick, easy & delicious. Has the flavours of a Chinese take out, but made at home in under 20 minutes 🥡🥢. Ingredients for 2 For the chicken: - 350g diced chicken thighs  - 2tbsp cornflour - Tsp garlic granules & paprika For the sauce: - 2tbsp teriyaki - 2 crushed garlic cloves - 3tbsp soy sauce - Pinch chilli flakes - Tsp cornflour mixed with water For the noodles - 2 nests of dry noodles - 1 sliced onion  - 2 spring onions - 2tbsp dark soy sauce - 1tbsp sesame oil Mix all the sauce ingredients together in a bowl. For the chicken use some kitchen roll to get rid of an excess moisture from the chicken. Then toss this in the cornflour and spices. Add a couple spoons of the sauce ingredients and stir. Then get a frying pan nice and hot with lots of low cal cooking spray, once the pan is hot add the chicken and make sure it’s not over crowded and try not to move the chicken too much. Leave it a good 2-3 minutes to cook on each side, so that it goes nice and crispy. When the chicken is almost cooked, reduce the heat of the pan and the sauce and leave this to simmer until it’s thickened and sticky. For the noodles, boil some water and add your noodle nests this takes around 5 minutes. In a wok fry the onion and whites of the spring onion. once soft add the greens of spring onion and cooked noodles, along with sesame oil and soy sauce and stir until the noodles are coated. Then dice the chicken and coat in the seasoning  & sauce. Fry off the chicken, once it has some colour add the onion and pepper, cook for a few minutes until softened. Then add a splash more peri sauce and the Philadelphia and leave this to simmer and until the chicken is cooked. Whilst that cooks, add the diced Halloumi to a pan once it’s almost finished and nice and brown on the edges, add the chilli jam and fry for another minute making sure the halloumi is evenly coated.  Once the potatoes are cooked add these to a bowl, top with the chicken, scatter over the grated cheese. HONEY GARLIC PARMESAN CHICKEN SKEWERS For 2 portions: For the chicken: - 300g chicken breast  - 1 tsp chicken seasoning, onion granules/powder, paprika & parsley  - 1tbsp honey - 10g parmesan  For the potatoes: - 400g potatoes  - Tsp smoked paprika, aromat, garlic granules & oregano  - Tbsp hot honey  - Tbsp Parmesan  Hot honey mayo: - 4tbsp light mayo  - 2tbsp hot honey  - 2tbsp sweet chilli  Cut your potatoes into chips, then add these to water. Boil for 4 minutes, then drain, pat dry and add to your aifryer basket with the seasonings. Cook for 20 minutes and finish with the honey, Parmesan and fresh parsley. For the chicken cut into thin even size strips (this helps it cook more evenly) then combine everything in a bowl leave the chicken to marinade for 10/15 minutes.  Once you’re ready thread the chicken onto skewers, I cooked mine in my airfryer, I did them at 190 for 12 minutes. Follow the link in my bio or on my story to sign up, use code FIRSTMONTH to get your first month for less than £1.50 Ingredients for three:  - 400g diced chicken breast   - 1 diced onion  - 50g diced sun-dried tomatoes  - 2tbsp tomato puree    - 360ml beef stock  - 50ml cream - 160g dry basmati rice  - 3 crushed garlic cloves  - Tsp chicken seasoning, smoked paprika, garlic granules and oregano.  Toppings: - 70g chorizo  - 20g parmesan Mix your chicken with the seasonings, then fry this until it’s browned off and has some colour. Then add the onion, fry until softened, next up add garlic, oregano and chilli flakes before adding in the tomato puree & cook this down until the colour deepens.  Next add the sundried tomatoes and the uncooked rice, stir for another minute or so and then add your stock, bring this to a boil. Once boiling, reduce the heat to low, cover the pan with a lid and leave to cook for 15 mins. Then stir in the cream and half of the Parmesan.  Crisp up the chorizo in a pan or airfryer. Chicken & Stuffing Baguettes  Proper comfort food 🙌🏼 For two:  - 200g chicken breast  - Tsp sage, garlic granules & chicken seasoning  - 4 stuffing balls  - 2 part baked baguettes  - 20g cranberry sauce  To serve: - 300g Maris piper potatoes  - gravy (made per packet instructions)  - Tenderstem broccoli   For the potatoes, peel them and then cut into even sized roasties, pop them in some salted water and boil for 6-7 minutes. Whilst they boil, preheat your airfryer with a little oil (remove tray and just add the oil to the airfryer basket).  Drain potatoes, add some roast potato seasoning and give them a good shake. Then add to the airfryer basket & cook for around 20-25 minutes at 200, until golden and crispy.  Then add the seasoning and some spray oil to your chicken. I cooked in my airfryer for 15 mins. I also cooked my pigs in blankets and stuffing balls at the same time.  Pop the baguettes in the oven.  Mix up your gravy. Once eveything is done, i added a layer of the cranberry to the bottom of the baguettes, then topped with some chicken and then the stuffing.  Cut baguettes in half, add the pigs in blankets and use the gravy to dip into!  NOTES:  I only had half a baguette for mine to save a few calories, but still used the full amount of chicken and stuffing so one sandwich was full size and the other (mine) was a “half baguette”    #chickenandstuffing #roastbaguette #roastdinner #fyp #ComfortFood

Since my heaviest, I’ve now lost over 5.5 stone, which is around 35kg. As you’ll see by my page, I still very much enjoy all of my favourite meals. Dinner is my favourite meal of the day, and I look forward to a yummy meal. Breakfast and lunch is usually something a little more basic and I try to make exciting dinners, it really helps keep me on track knowing I have a delicious dinner to look forward too. BATCHCOOK WHITE CHOCOLATE RASPBERRY OAT BARS These are so good! Easy to prep for breakfasts during the week.  For 6 portions:  - 200g oats - 200g greek yoghurt - 50g vanilla protein powder  - 250ml milk - 1tsp baking powder  - 50g white chocolate hazelnut spread - 100g frozen raspberries   - 1 scoop @MORE chunky flavouring  Toppings:  - 40g white chocolate chips   Add the yogurt and chocolate spread to a large bowl and mix until smooth. Stir in the oats, protein powder, baking powder and chunky raspberry more flavour, making sure everything is well combined. Gradually add the milk, stirring until you have a thick but pourable oat mixture. Lightly grease an ovenproof baking dish or line it with greaseproof paper. Pour the mixture into the dish and spread it out evenly. Sprinkle the white chocolate chips over the top. Bake in a preheated oven at 180°C for 20–25 minutes, until set and lightly golden. Remove from the oven and allow to cool slightly before cutting into 6 even squares. These can be eaten hot or cold. To serve warm, reheat and enjoy with a dollop of fat-free yogurt. BATCHCOOK WHITE CHOCOLATE RASPBERRY OAT BARS These are so good! Easy to prep for breakfasts during the week. For 6 portions: - 200g oats - 200g greek yoghurt - 50g vanilla protein powder - 250ml milk - 1tsp baking powder - 50g white chocolate hazelnut spread - 100g frozen raspberries - 1 scoop @MORE chunky flavouring Toppings: - 40g white chocolate chips Add the yogurt and chocolate spread to a large bowl and mix until smooth. Stir in the oats, protein powder, baking powder and chunky raspberry more flavour, making sure everything is well combined. Gradually add the milk, stirring until you have a thick but pourable oat mixture. Lightly grease an ovenproof baking dish or line it with greaseproof paper. Pour the mixture into the dish and spread it out evenly. Sprinkle the white chocolate chips over the top. Bake in a preheated oven at 180°C for 20–25 minutes, until set and lightly golden. Remove from the oven and allow to cool slightly before cutting into 6 even squares. These can be eaten hot or cold. To serve warm, reheat and enjoy with a dollop of fat-free yogurt. Ad Chicken tikka biryani with curried cashews & sticky mango slaw   #Ad a nice and simple Friday Fakeaway, with @Asda UK 💚you get all the great flavours of a takeaway but without splurging or breaking the bank!    Serves 4 Less than £10.00   - 60g cashews - 1 tbsp + ¼ tsp olive or vegetable oil - 4 ½ tsp Cook by Asda Tikka Curry Powder - 2 peppers, any colour - 1 small-medium loose red onion - 1 ½ tbsp Asda Mango Chutney - ½ loose lemon, juiced - 300g Asda Chicken Breast Portions - 4-5 spring onions, finely sliced - 2 x 250g Chip Shop Curry Micro Rice - 4 mini garlic & coriander naans 1) Mix the cashews with the ¼ tsp oil, then sprinkle over ½ tsp curry powder, a little salt and pepper. Air fry for 5-7 mins at 170C (or roast for 5-7 mins at 220C/200C fan in the oven, until golden brown.   2) Meanwhile, prep the slaw. Deseed and thinly slice the peppers, thinly slice the red onion. In a bowl whisk the mango chutney with enough lemon juice to a sweet-sour dressing.   3) Cut the chicken breast chunks into small, bite-size pieces. Heat 1 tbsp oil in a non-stick frying pan then fry the chicken for 4-5 mins, stirring until golden brown and almost cooked through. Stir in the 1 tbsp tikka curry powder for 1 min.   4) Add most of the chopped spring onions and the rice sachets, crumbled up, with a splash of water. Keep frying, breaking up the rice, until everything is hot – add a splash more water if it looks dry.   5) Heat the naans following pack instructions. At the last minute mix the mango dressing through the peppers and onions   6) Check the chicken is cooked through, then divide the chicken biryani between bowls and scatter over the rest of the spring onions, plus the crunchy tikka cashews, chopped or bashed to smaller pieces. Cook on high for 3-4 hours or on low for 6-7 hours, remove chicken, shred with two forks then add back to the sauce.  For the potatoes, cut them into small cubes, boil for 4 mins. Drain and then add all the seasonings and some spray oil and cook in the airfryer for 20 minutes until they are  nice and crispy. Greek Style Chicken Gyros Bowl For two people: For the chicken: - 300g chicken thigh fillets  - 3tbsp fat free yoghurt - juice of half a lemon - Tbsp honey  - Tbsp oil  - 1tsp garlic garlic granules, oregano, cumin, ground coriander  - ½ tsp cayenne pepper - Handful fresh chopped dill  - 2 crushed garlic cloves  For the potatoes  - 400g maris piper potatoes  - Salt, pepper  - Tsp aromat, oregano smoked paprika & garlic granules - Serve with fresh parsley and lemon juice / zest  Garlic Herb Dip:  - 100g fat free greek yoghurt  - 2-3 crushed garlic cloves  - Lemon juice  - Pinch salt  - Tsp Oregano & parsley  To serve: - 2 flatbreads (brush with oil)  - Red onions  - Tomatoes  - Lettuce  Add the chicken to a bowl, and add all the other ingredients, mix well making sure all the chicken is coated and then I left this for half an hour to marinade.  Cook in the airfryer for 15-20 minutes. Once done, slice into pieces. For the potatoes, cut them into small cubes, boil for 4 mins & then add to your airfryer add all the seasonings and some spray oil and cook in the airfryer for 20 minutes until they are nice and crispy.  Mix together the onion and tomatoes with parsley, lemon juice & salt.  In a bowl mix together all the yoghurt ingredients. CHICKEN CAESAR BURGERS  a delicious dinner or lunch option for the warmer weather ☀️ Follow @kimberlys_journeyy for more recipes like this⤵️ To make the chicken: - 400g chicken breast  - 25g panko breadcrumbs  - 10g parmesan  - 1 whisked egg - 1tsp smoked paprika, garlic granules & chicken seasoning  The burgers: - two ciabatta buns  - Chopped romaine lettuce - 2tbsp light caesar dressing  - 10g parmesan  - 2tbsp hot honey - 2 sliced cooked bacon medallions  Mix together the panko breadcrumbs with parmesan and half of the smoked paprika, garlic granules and chicken seasoning. Butterfly your chicken breasts and slice them so they are nice and thin. Sprinkle over the rest of the seasonings. Then dip each piece into the whisked egg, then coat well in the breadcrumb mix, pressing it on so it sticks. I cooked mine in the air fryer at 200°C for 12–15 mins, flipping halfway, until golden and crispy (or pan fry for 4–5 mins each side until cooked through). Slice and lightly toast your ciabatta buns until golden but still soft. Mix the chopped romaine lettuce with the caesar dressing and parmesan. NANDOS CHICKEN SLIDERS This was SO good & literally the quickest dinner ever to make, genuinely less than 20 minutes 🙌🏼 Follow @kimberlys for more recipes like this⤵️ For the chicken   - 300g chicken breast  - 1 small diced onion  - Half a diced pepper   - 1 packet Nandos peri rub    - 80g Philadelphia light  - Tbsp Nandos peri peri medium  To serve/toppings: - 6 brioche rolls  - 6 Mozzarella slices  - 40g grated mozzarella The garlic butter:  - 20g butter  - Tsp parsley  Dice the chicken & mix with the rub, then fry this in a pan, once it has some colour add in the onion and pepper, cook for 5-6 minutes until the veg has softened and the chicken is cooked through.  Add the Nandos sauce and Philadelphia to the chicken and stir well. Layer the bottom of the brioche rolls in a baking dish, top with mozzarella slices, then the chicken mix and sprinkle over the grated mozzarella. Add the tops of the bread rolls, then lather over the garlic butter and pop in the oven for the cheese to melt and go all gooey.
