Rocky Road Cottage Cheese Cup Cottage Cheese Cup Ingredients:  • 1 single serve cup of Good Culture Simply 2% Cottage Cheese • 1 tbsp of cocoa powder  • 1 tsp maple syrup  • 1 large marshmallow or 6 mini marshmallows • 1 tbsp of chopped dark chocolate  • 1 tbsp of chopped toasted almonds  Dark Chocolate Almond Magic Shell Ingredients: • 1 tbsp of chopped dark chocolate  • ½ tsp extra virgin cold pressed coconut oil  • 1 tsp finely chopped toasted almonds  • Flaky Salt Method: 1. Add cottage cheese, cocoa powder, maple syrup, vanilla extract and salt into a blender. Blend until completely smooth. 2. Use a pair of kitchen scissor to cut up the marshmallow/s into small pieces. 3. Add the marshmallow, chopped chocolate and almonds into the whipped chocolate cottage cheese mixture and give it a mix until combined. 4. Fill up your single serve cup with the chocolate blended cottage cheese. 5. In a small microwave safe bowl, add the dark chocolate and coconut oil. 6. Microwave the dark chocolate in 15 second increments until the chocolate is just starting to melt. Give it a good stir until smooth and creamy. 7. Add the chopped toasted almonds into the chocolate and give it a mix. 8. Pour the almond chocolate over the blended cottage cheese, top with a sprinkle of flaky salt and pop it into the freezer for about 15 – 20 minutes and you’ll be left with a crackly chocolate topping. Break in with a spoon and enjoy!

Add all chocolate cream base ingredients to an immersion blender cup & blend until smooth. Transfer mixture back to good culture cup.  2. stop pretending you don’t want pasta.  Winter Squash Lasagna Roll Ups Butternut Squash Cottage Cheese Filling • 1 cup mashed butternut squash  • 1 cup Good Culture cottage cheese  • ½ cup grated parmesan  • 1 large egg • 2 tbsp of finely chopped herbs, like thyme or sage • ½ tsp salt • A few grinds of black pepper Creamy Tomato Butternut Squash Sauce • 1 tbsp olive oil  • 4 garlic cloves, minced • ½ red onion, minced • 1 16oz can of crushed tomato • ½ cup of mashed butternut squash • 2 tsp Italian seasoning • 1 tsp salt • 1 tsp chili flakes • A few grinds of black pepper • ½ cup Good Culture cottage cheese Assembly • 14 – 16 lasagna sheets, (cook extra sheets in case some break) • 1 cup shredded mozzarella cheese, divided • ½ cup grated parmesan  Method: Make the Lasagna Filling 1. Into a medium bowl, mix mashed butternut squash, cottage cheese, parmesan, egg, chopped herbs, salt and pepper.  Make the sauce 1. In a large pan, heat up olive oil until shimmering. 2. Add the minced garlic and onion, cook down until slightly golden and translucent. 3. Add crushed tomatoes, mashed butternut squash, Italian seasoning, salt, chili flakes and black pepper. Cook for about 10 minutes on med-low heat until sauce is bubbling and thick. 4. Pour sauce into a blender, add cottage cheese and blend until smooth.  Assemble & Bake 1. Preheat the oven to 350°F. In a large shallow pan, bring water and salt to a boil, cook 16 lasagna sheets for about 6-7 minutes just until flexible and al dente. Do not overcook. 2. Drain lasagna noodles and place them in a line on a parchment lined baking tray. In your desired baking dish, spoon about half of the sauce into it. Set aside. Spread an even amount of the lasagna filling on each noodle. 3. Sprinkle each noodle with shredded mozzarella and then roll each noodle up. 4. Place each rolled lasagna into the baking dish until all of the lasagna rolls are placed in. Pour the remaining sauce on top, sprinkle more parmesan and mozzarella cheese. 5. Bake for about 30 minutes until bubbly and the edges are slightly crisp. 6. Serve hot and top with more parmesan!

In a small pan, heat up the olive oil on medium heat until warm and slightly simmery. 2. Add the garlic cloves and fresh black pepper and cook until the garlic and pepper are aromatic and the garlic just begins to pick up some color around the edges, about 2-3 minutes, then pull off the heat. 3. Pour the olive oil garlic mixture into a medium bowl. Scoop out the cottage cheese and add the parmesan as well. Give everything a good mix. 4. Scoop the cottage cheese mixture back into the cup and serve with crostini. Enjoy!
