Mix up the marinade in a large bowl. 2. Cut your chicken thighs into quarters and massage them into the marinade. Let sit for 30 minutes. 3. On a large platter, mix the breadcrumbs with pecorino and season. Toss in the chicken and skewer. Place on a medium-heat grill and turn every 5 minutes until the internal temperature hits 165. 4. Salad girl summer is here! 🥗🌽 Charred Corn Salad Serves: 4-8 Prep time: 20 minutes Grill time: 15 minutes Special tools: blender Ingredients: 6 ears fresh corn, soaked in water 5 jalapeño, roasted 1 bunch green onion tops 1 handful cilantro 1 1/2 cup crumbled Cotija Dressing: 1/2 cup sour cream (@gayleafoodscoop) 1/2 cup yogurt 1/2 tablespoons Dijon (@maillecanada) 1/2 lemon, juiced 1/2 bunch green onion tops 1 large pinch fresh parsley 1 large pinch fresh basil 1 large pinch fresh tarragon 1 garlic clove 1 teaspoon kosher salt 6 twists black pepper 1 lime, juiced 1 tablespoon red wine vinegar 2 tablespoons EVOO @terradelyssa Method: 1. Grill corn over high heat, turning every 6 minutes until the skin has dried and charred. 2. Remove and let cool. 3. Shuck and remove the kernels from the cob. Add to a large bowl. 4.
