Gordon’s out here crafting Gin & Spruce. Dre’s keeping it simple with Gin & Juice.
It’s back to school and my go to for quick dinner’s is my Chicken Chowmein cooked in my @hexclad Wok, a hybrid of Stainless Steel and Non-Stick Cookware.
Recipe:
3-4 chicken thighs cubed
Half a white onion sliced
3 cloves of garlic minced
1 ounce cut green onions
2 cups bean sprouts
1 tbsp cornstarch
1 tbsp oyster sauce
1 tbsp dark soy sauce
2 tbsp lite soy sauce
1 ½  tbsp of brown sugar
2 tbsp of avocado oil
Instructions:
Do a quick marinade of the cubed chicken thighs with 1 tbsp lite soy sauce, ½ tbsp dark soy sauce and 1 tbsp of cornstarch. 
Heat pan on high and add oil and chicken. Cook for 2 mins and add sliced onions. Cook on high for another 2 minutes, turn heat down to low and add minced garlic and green onions. Cook for another 2 minutes and add bean sprouts. Cook bean sprouts for 1 minute before tossing in the noodles and sauce (remaining dark soy sauce, lite soy sauce, oyster sauce and brown sugar). Bring heat to high and cook for another 2 minutes. #Ad #hexclad #chickenchowmein🍝

In honor of Hispanic Heritage Month, I’ve teamed up HexClad USA 🇺🇸 and HexClad México 🇲🇽 to bring  you this delicious CHILES CAPONES from Michoacán, a dish that celebrates the flavors and traditions that make our culture so special 🙌🏻 

Los tradicionales van solo con chile pasilla/negro pero yo combine pasillla con ancho y quedan BUENERRIMOS! Llevan queso fresco también pero como los hice en quesadillas ya no les puse pero tú puedes agregárselos 

INGREDIENTES 
200g chile pasilla (negro) o puedes usar 100g negro y 100g ancho como yo 
1/2L agua 
1 cebolla blanca grande 
3-5 dientes de ajo 
400g tomate verde 
Sal y pimienta 
1 cono de piloncillo 
200g queso fresco 

PROCEDIMIENTO 
1. Corta con tijeras tus chiles, si no quieres tan picosos quítales las venas y semillas, hiérvelos en agua en tu olla @hexclad hasta que se hidraten y reserva 

2. En otra olla @hexclad_mexico sofríe la cebolla en plumas y el ajo picado hasta que doren, después agrega el tomate verde picado 

3. Cuando el tomate cambie de color agrega los chiles reservados, un poquito del@agua de los chiles, condimenté con sal y pimienta y por último, ralla un conito de piloncillo, para coronar añade queso fresco desmoronado y listo! 

Simplemente deliciosos!

1/2L water
1 large white onion
3-5 garlic cloves
400g green tomato
Salt and pepper
1 cone of piloncillo
200g fresh cheese

PROCEDURE
1. Cut your chiles with scissors. If you don’t want them too spicy, remove the veins and seeds. Boil them in water until hydrated and set aside.

2. In another pot, sauté the chopped onion and garlic until golden brown, then add the chopped green tomato.

3. When the tomato changes color, add the reserved chiles, a little of the chile water, season with salt and pepper, and finally, grate a cone of piloncillo. Piloncillo, top with crumbled fresh cheese and that’s it!

Germany’s Kartoffelpuffer 🇩🇪 

With Oktoberfest in full swing, what better time to whip up these iconic German potato pancakes. Usually, you’ll need a ridiculous amount of oil for these, but with the @hexclad_europe pan, a light drizzle does the job!

Nowadays, Kartoffelpuffer are usually made with egg, but they likely originated during food shortages, when even eggs were too expensive. The natural starches of the potato do all the heavy lifting of binding the mixture together!

Spaghetti alle vongole for Mother’s Day 🍝🦪

This seafood pasta dishes is one of my mom’s all-time faves, so I had to make it for her. Whenever we’re out, she’s always ordering it—so why not show her how easy it is to recreate at home? Especially with the right tools, like my @hexclad Japanese Damascus Chef’s Knife and Hybrid Wok. 

She couldn’t believe how quickly it came together—perfectly cooked clams, tossed with just-under-al-dente pasta, fresh parsley, a touch of lemon zest, finished with some freshly grated bottarga if you can get your hands on it! And with @hexclad’s sale going on, I think I’ve found the perfect Mother’s Day gift to follow up! 😉

These are the Braised Short Ribs I made the night I propose marriage to Nancy! We used the new @hexclad 10qt Deep Saute pan that held 10 large short ribs and they were cooked to perfection!

Braised Short Ribs

Ingredients:
8 bone-in short ribs @rainshadowmeats 
Salt + cracked pepper
½ cup flour
Oil for searing
1 onion, chopped
3-4 celery stalks + 3-4carrots, chopped
2 garlic bulbs, halved crosswise
4–6 sprigs rosemary
1 bottle red wine
1 box beef broth
¼ cup brown sugar
4 tbsp butter
2-4 tbsp peppercorns
Directions:
Preheat oven to 350°F. Pat short ribs dry, season generously with salt and pepper, then dredge lightly in flour. Heat oil in a large Dutch oven over medium-high heat and sear ribs on all sides until deeply browned (about 2–3 min per side). Remove and set aside.

Lower heat to medium. Add onion, celery, and carrots to the pot and sauté until softened and lightly golden. Add halved garlic bulbs and rosemary sprigs, stirring briefly until fragrant. Pour in red wine and beef broth, scraping up all the browned bits. Stir in brown sugar and peppercorns and bring to a gentle simmer.

Return short ribs to the pot, nestling them into the liquid. Cover and braise in the oven for about 3 hours, or until meat is fall-off-the-bone tender.

Remove ribs and keep warm. Strain the cooking liquid into a saucepan and simmer 15–20 minutes until reduced. Whisk in butter to finish the gravy.

Garlic Mashed Potatoes

Ingredients
 8 russet potatoes, peeled / cut 
 1 stick butter
 20 cloves garlic, minced
 2 cups whole milk
 Salt, to taste
 1–2 cups shredded mozzarella

Directions
1.  Boil potatoes until fork tender.
2.  Drain and mash in a large bowl.
3.  Blend in milk until smooth.
4.  Melt butter with garlic; mix in.
5.  Salt to taste.
6.  Fold in mozzarella while hot.

My guide to the perfect SMASHBURGER Sunday with the family 🍔🤌

Smashburgers aren’t hard, but there are a few things I do to make the process smoother and get perfect burgers every time: 

- Pre-smash the burgers using parchment squares and a heavy weight burger press. This ensures a nice thin patty, while working on a hot griddle. (I love my heavy duty burger press, that comes in the @hexclad Griddle Tool Set)
