100 days to go! 🇮🇹 We’re counting down to the @Milano Cortina 2026 Winter @Olympics with a very special dish by @Silvia Barban from #CasaGiallo in NY— the Olympic Pasta! 🍝✨ Inspired by the five Olympic rings this special pasta, created by the International Olympic Committee exclusively for this milestone, celebrates Italian flavors with a creamy Grana Padano sauce, tomato powder, and basil oil — the colors of Italy coming together in one delicious bite. 🇮🇹❤️ A taste of passion, tradition, and the Olympic spirit — straight from Italy to the world. 🌍✨ Ingredients (serves 4): Olympic pasta – 320 g Grana Padano PDO, grated – 150 g Whole milk – 150 ml Tomato powder – 1 tablespoon (or finely blended dehydrated tomato) Fresh basil leaves 150 g Ice 1 bag Extra virgin olive oil – 300 ml Salt – to taste Warm the milk in a small saucepan, but don’t let it boil. Remove it from the heat, let it cool slightly, then add the grated Grana Padano. Blend with an immersion blender until the cheese has completely melted and the sauce is smooth and creamy. If it turns out too thick, add a splash of milk to reach the desired consistency. Meanwhile, prepare the basil oil: quickly blanch the basil leaves in hot water, then transfer them to a bowl of ice water. Pat them dry and let them sit in extra virgin olive oil to infuse. Bring a large pot of salted water to a boil and cook the Olympic Pasta according to the package instructions. Drain while still al dente, reserving a ladleful of the cooking water, and place the pasta in a warm bowl. Toss it immediately with the Grana Padano fondue, mixing well. Add a little of the reserved cooking water if needed to make it creamier. Serve the pasta on plates and finish with a sprinkle of tomato powder and a drizzle of basil oil.
