These are the Braised Short Ribs I made the night I propose marriage to Nancy! Worth noting,our son Philip ate this for breakfast, lunch and dinner the next day.. they are truly that good. We used the new @HexClad 10qt Deep Saute pan that held 10 large short ribs and they were cooked to perfection! Braised Short Ribs Ingredients: 8 bone-in short ribs Salt + cracked pepper ½ cup flour Oil for searing 1 onion, chopped 3-4 celery stalks + 3-4carrots, chopped 2 garlic bulbs, halved crosswise 4–6 sprigs rosemary 1 bottle red wine 1 box beef broth ¼ cup brown sugar 4 tbsp butter 2-4 tbsp peppercorns Directions: Preheat oven to 350°F. Pat short ribs dry, season generously with salt and pepper, then dredge lightly in flour. Heat oil in a large Dutch oven over medium-high heat and sear ribs on all sides until deeply browned (about 2–3 min per side). Remove and set aside. Lower heat to medium. Add onion, celery, and carrots to the pot and sauté until softened and lightly golden. Add halved garlic bulbs and rosemary sprigs, stirring briefly until fragrant. Pour in red wine and beef broth, scraping up all the browned bits. Stir in brown sugar and peppercorns and bring to a gentle simmer. Return short ribs to the pot, nestling them into the liquid. Cover and braise in the oven for about 3 hours, or until meat is fall-off-the-bone tender. Remove ribs and keep warm. Strain the cooking liquid into a saucepan and simmer 15–20 minutes until reduced. Whisk in butter to finish the gravy. Garlic Mashed Potatoes Ingredients  8 russet potatoes, peeled / cut  1 stick butter  20 cloves garlic, minced  2 cups whole milk  Salt, to taste  1–2 cups shredded mozzarella Directions 1.    Boil potatoes until fork tender. 2.    Drain and mash in a large bowl. 3.    Blend in milk until smooth. 4.    Melt butter with garlic; mix in. 5.    Salt to taste. 6.    Fold in mozzarella while hot. #shortribs #marryme #proposal #braised #hexcladpartner

Love when all of the kids are home from college for the holidays and the house is full! Family meals are the priority! Here are two favorites: Dutch Baby w/Raspberries Ingredients • 4 Tbsp unsalted butter • ½ cup all-purpose flour • ½ cup milk (room temperature) • ¼ cup sugar • 2 large eggs (room temperature) • Pinch of salt • Top w/Powdered sugar & raspberries Instructions 1. Heat oven to 425°F with a 10-inch skillet inside. 2. Whisk eggs, milk, flour, sugar, and salt until smooth. 3. Add butter to hot skillet; melt and coat pan. 4. Pour in batter and bake 15–25 min until puffed and golden. Cheddar Bacon Breakfast Bake Ingredients • 1 can refrigerated flaky buttermilk biscuits, pulled apart • 1 lb uncooked bacon, chopped • 8–10 large eggs • ½ cup milk (or cream for extra richness) • 1½ cups sharp cheddar cheese, shredded • Salt & pepper, to taste • Minced chives, for topping Instructions 1. Preheat oven to 350°F. Butter a 9×13 baking dish. 2. Layer torn biscuits in the bottom of the dish. 3. Sprinkle with cheddar and raw chopped bacon. 4. In a bowl, beat eggs and milk together; season with salt & pepper. 5. Pour the egg mixture evenly over the biscuit and bacon layers. 6. Bake 40–50 minutes, until eggs are set and top is golden. 7. Start honing those knife and skillet skills!! Everyone asks us what knives we use : we use @HexClad knives and love the precision we get when mincing, dicing and endless chopping… and they have them on sale for Mother’s Day! One-Pot Spaghetti w/Garlic, Cherry Tomatoes, & Fresh Basil Ingredients: 3 tablespoons olive oil 1/4 cup minced garlic 1/2 red onion, thinly sliced 2 cups cherry tomatoes, halved 1 cup loosely packed fresh basil leaves, torn 2-3 Parmesan rinds (optional) 1 pound dry spaghetti 2 to 4 cups water (adjust as needed) Salt and pepper to taste Freshly grated Parmesan for topping Instructions: 1. Prepare the base: • Heat a large pot over medium-high heat. Add 3 tablespoons of olive oil to the pot. • Once the oil is hot, add the minced garlic and sauté for about 30 seconds until fragrant. • Add the thinly sliced red onion and cook for 1 more minutes until it begins to soften. 2. Cook the tomatoes: • Add the halved cherry tomatoes to the pot. Stir and cook them down until they begin to soften, about 2 minutes. 3. Add the spaghetti: • Once the tomatoes have softened, add the dry spaghetti directly on top of the tomatoes. Do not break the spaghetti in half, just place it in a bundle on top of the tomato mixture. 4. Add water, basil leaves and Parmesan rinds: • Pour in 2-3 cups of water (enough to mostly cover the spaghetti). Add in the basil leaves and Parmesan rinds, at this point. • Stir everything together, mixing the pasta into the water and tomato mixture. Ensure the pasta is being evenly coated and submerged in the liquid. 5. Cook the pasta: • Stir constantly and non-stop, making sure the spaghetti doesn’t stick. As the water absorbs, add more water if needed, about 1/4 cup at a time, to ensure the pasta cooks evenly and doesn’t dry out. • Continue stirring and adjusting the water level until the spaghetti is tender and cooked al dente (use cooking time from your spaghetti’s packaging ). 6. Finish the dish: • Once the pasta is cooked, remove the Parmesan rinds (if used) from the pot. 7. My guide to the perfect SMASHBURGER Sunday with the family 🍔🤌 Smashburgers aren’t hard, but there are a few things I do to make the process smoother and get perfect burgers every time: - Pre-smash the burgers using parchment squares and a heavy weight burger press. This ensures a nice thin patty, while working on a hot griddle. (I love my heavy duty burger press, that comes in the @HexClad Griddle Tool Set) - Prep all the toppings ahead of time. Sauce ✅Toppings ✅, means fresh hot burgers off the grill are ready to eat! - Using the Hexclad Double Burner Griddle Pan and using it directly on the grill. The stainless & nonstick surface ensures consistent, even heat distribution allowing you to a beautiful sear and crust. And the best part is getting to do it outside = easy clean up.
