deep frying = perfection! 🍗 INGREDIENTS * WINGS * 3 lbs chicken wings, cut into flats and drumettes * Kosher salt and freshly ground black pepper * 3qt canola or vegetable oil * BUFFALO SAUCE * ¾ cup Frank’s Red Hot Original Hot Sauce * 6 Tbsp unsalted butter * Kosher salt * 1 ripe Hass avocado—halved, pitted, and chopped * 1 cup plain full-fat yogurt or unsweetened coconut yogurt, such as Cocojune brand * 2 scallions, chopped * 2 Tbsp fresh lemon juice * 1 Tbsp olive oil * 1 anchovy fillet * STICKY GOCHUJANG SAUCE * ⅓ cup gochujang * ¼ cup soy sauce or tamari * ¼ cup rice vinegar * 3 Tbsp honey * 2 Tbsp cold salted butter, cubed * ¼ cup salted roasted peanuts, coarsely chopped * Thinly sliced jalepeño and small cilantro sprigs, for garnish * ZESTY GARLIC-PARM SAUCE * 2 tsp finely grated lemon zest * 4 cloves garlic, finely grated, plus 5 cloves garlic, thinly sliced * ¼ cup olive oil * 6 Tbsp fresh lemon juice * ¼ cup cold salted butter, cubed * 2 Tbsp finely chopped fresh parsley, plus more for garnish * ¼ cup finely grated Parmesan, plus more for serving PREP 1. Generously season wings with salt and pepper and let sit at room temperature for 15 to 20 minutes.  2. In a HexClad 7QTHybrid Deep Sauté Pan/Chicken Fryer, warm oil over high heat until it reaches 375°F on an instant read thermometer. Carefully lower half of the chicken wings into hot oil and fry, stirring and flipping occasionally and adjusting the heat as needed, until wings are a deep golden brown and crispy, about 10 minutes.  3. Transfer wings to a paper towel-lined baking sheet to drain and repeat with remaining wings. When you’re ready to serve, choose one of the sauces and toss to coat. FOR BUFFALO WINGS 1. In a HexClad 2QT Hybrid Saucepan, warm hot sauce and butter over medium heat, stirring occasionally, until butter is melted, 2 to 3 minutes. Transfer to a large heatproof bowl. Season with salt, if needed. 2. Add fried chicken wings to bowl and toss to coat. Transfer wings to a platter and serve with celery sticks and creamy avocado sauce for dipping.  3. Make the creamy avocado dip. In the bowl of a food processor, combine all of the ingredients and process until smooth. Season with salt and pepper. Transfer to a bowl and refrigerate covered until ready to serve.  FOR STICKY GOCHUJANG WINGS 1. In a HexClad 2QT Hybrid Saucepan, whisk gochujang with soy sauce, rice vinegar, and honey until smooth and bring to a boil over medium heat. Cook, stirring occasionally, until sauce has thickened slightly, 1 to 2 minutes. Remove from heat and whisk in cold butter, then transfer to a large heatproof bowl.  2. Add fried wings to bowl and toss to coat. Transfer to a platter and garnish with chopped peanuts and cilantro. Serve with creamy avocado sauce for dipping.  FOR ZESTY GARLIC-PARM WINGS 1. In a large heatproof bowl, combine grated garlic and lemon zest. In a HexClad 2QT Hybrid Saucepan, warm olive oil and sliced garlic over medium heat, swirling pan occasionally, until garlic just begins to crisp and brown, about 5 minutes. Place a fine mesh strainer over the large heatproof bowl. Pour hot olive oil through strainer—the grated garlic and lemon zest should sizzle. Transfer garlic chips to a paper towel-lined plate to drain.  2. In the saucepan, heat lemon juice over medium until it begins to steam, about 1 minute. Add half of the butter and cook, whisking constantly, until melted and the sauce begins to thicken and look glossy. Remove from heat and whisk in remaining butter until melted.  3. In the large heatproof bowl, add lemon butter and parsley and whisk to combine. Season with salt and pepper, if needed.  4. Add fried wings to bowl and toss to coat. In two batches, sprinkle half of the Parmesan over wings and toss to coat. Repeat with remaining Parmesan. Transfer to a serving platter and garnish with more parmesan, parsley, and crispy garlic chips.

Love when all of the kids are home from college for the holidays and the house is full! Family meals are the priority! Here are two favorites: Dutch Baby w/Raspberries Ingredients •	4 Tbsp unsalted butter •	½ cup all-purpose flour •	½ cup milk (room temperature) •	¼ cup sugar •	2 large eggs (room temperature) •	Pinch of salt •	Top w/Powdered sugar & raspberries Instructions 1.	Heat oven to 425°F with a 10-inch skillet inside. 2.	Whisk eggs, milk, flour, sugar, and salt until smooth. 3.	Add butter to hot skillet; melt and coat pan. 4.	Pour in batter and bake 15–25 min until puffed and golden. Cheddar Bacon Breakfast Bake Ingredients •	1 can refrigerated flaky buttermilk biscuits, pulled apart •	1 lb uncooked bacon, chopped •	8–10 large eggs •	½ cup milk (or cream for extra richness) •	1½ cups sharp cheddar cheese, shredded •	Salt & pepper, to taste •	Minced chives, for topping Instructions 1.	Preheat oven to 350°F. Butter a 9×13 baking dish. 2.	Layer torn biscuits in the bottom of the dish. 3.	Sprinkle with cheddar and raw chopped bacon. 4.	In a bowl, beat eggs and milk together; season with salt & pepper. 5.	Pour the egg mixture evenly over the biscuit and bacon layers. 6.	Bake 40–50 minutes, until eggs are set and top is golden. 7. Start honing those knife and skillet skills!!  Everyone asks us what knives we use : we use @HexClad knives and love the precision we get when mincing, dicing and endless chopping… and they have them on sale for Mother’s Day! One-Pot Spaghetti w/Garlic, Cherry Tomatoes, & Fresh Basil Ingredients: 3 tablespoons olive oil 1/4 cup minced garlic 1/2 red onion, thinly sliced 2 cups cherry tomatoes, halved 1 cup loosely packed fresh basil leaves, torn 2-3 Parmesan rinds (optional) 1 pound dry spaghetti 2 to 4 cups water (adjust as needed) Salt and pepper to taste Freshly grated Parmesan for topping Instructions: 1.	Prepare the base: •	Heat a large pot over medium-high heat. Add 3 tablespoons of olive oil to the pot. •	Once the oil is hot, add the minced garlic and sauté for about 30 seconds until fragrant. •	Add the thinly sliced red onion and cook for 1 more minutes until it begins to soften. 2.	Cook the tomatoes: •	Add the halved cherry tomatoes to the pot. Stir and cook them down until they begin to soften, about 2 minutes. 3.	Add the spaghetti: •	Once the tomatoes have softened, add the dry spaghetti directly on top of the tomatoes. Do not break the spaghetti in half, just place it in a bundle on top of the tomato mixture. 	4.	Add water, basil leaves and Parmesan rinds: 	•	Pour in 2-3 cups of water (enough to mostly cover the spaghetti). Add in the basil leaves and Parmesan rinds, at this point. 	•	Stir everything together, mixing the pasta into the water and tomato mixture. Ensure the pasta is being evenly coated and submerged in the liquid. 	5.	Cook the pasta: 	•	Stir constantly and non-stop, making sure the spaghetti doesn’t stick. As the water absorbs, add more water if needed, about 1/4 cup at a time, to ensure the pasta cooks evenly and doesn’t dry out. 	•	Continue stirring and adjusting the water level until the spaghetti is tender and cooked al dente (use cooking time from your spaghetti’s packaging ). 	6.	Finish the dish: 	•	Once the pasta is cooked, remove the Parmesan rinds (if used) from the pot. 	7. Making Carbonara in the homeland 🇮🇹 One of the first recipes I’m making here in Roma had to be CARBONARA, as this is the city where this infamous dish hails from. The secret to the perfect carbonara?
